3 AIR CURTAIN REFRIGERATOR 3 CABINETS OPERATIONAL INSTRUCTIONS All metal construction with joints and seams completely closed and sealed. The case front, door. The case is internally supported, braced and assembled into a single rigid unit construction. All inside corner bends are rounded to a 1/4 radius for ease of cleaning and to conform to National Sanitation Foundation codes. The Air Screen Refrigerator is designed for use with the door open when unloading during meal or tray assembly operations. Only product that has been pre-chilled should be placed in to the cabinet. Placing warm product into the cabinet will elevate the cabinet air temperature above 40 F. This will have a direct affect on optimum product serving temperatures. Due to various conditions such as extremely high kitchen temperature, high humidity ration, high frequency of tray activity breaking the air curtain and excessively long operations, the door may need to be closed so the unit can recover to proper operation temperature. 1. Plug unit into a 120 Volt 20 Amp power source. 2. Turn unit on by activating the ON/OFF switch located in the lower rear of the unit. 3. Pre-chill empty cabinet, with door closed for approximately 45 minutes. Always keep the door closed except when actually unloading the refrigerator. Do not load the cabinet until the proper operating temperature has been reached. (34 F - 40 F) 4. Load the cabinet from the bottom up. Make sure the trays are pushed to the rear wall. Optimum Air Screen operation requires that all trays be pushed all the way in during unloading. Do not leave protruding into the air screen at the front of the cabinet. After loading, close the door and allow inside air temperature to restabilize to (34 F - 40 F). The Air Curtain can maintain 34 F - 40 F in excess of two hours with the doors open. This performance is dependent upon the temperature of the food product going into the unit, ambient room temperatures humidity levels and conditions relating to outside air flows. 7. In cases where the air curtain will not be filled to capacity, evenly space the trays from top to bottom. Proper trays sizes (14 x 18 or 18 x 26) must be used. If 14 x 18 trays are used, insert 2 trays per slide. This will allow for proper air flow thru out the cabinet. Remember: The air curtain refrigerator must be at the proper temperature (36 F. to 40 F.) before the door is opened. The air curtain will not lower food temperatures. For the air curtain to perform properly, the food temperatures going into the unit must be at a maximum of 36 F. Always close the door during slow serving periods and after the last serving period of the day. Never leave the door open longer than 2 hours. Never allow for trays to protrude out the front of the air curtain. The cabinet is equipped with an automatic condensate evaporator. To prevent water spills, leave the unit plugged in, with the door closed for at least 90 minutes after use. PAN SLIDES Pan/Tray Slides are attached to the side panels. To remove for cleaning, simply lift the side panel up and our of the refrigerator. MOVING THE CABINET Even though the cabinet weighs 320 pounds, it is easy to maneuver when in use. Since the condensing unit is located in the base of the cabinet, there is a low center of gravity making it more stable when transporting and the operator has easy access to all pans at a comfortable working height. 5. Unload the cabinet from the top down. 6. Close the door during slow periods to extend the effective temperature maintenance time. Page 3

4 AIR CURTAIN REFRIGERATOR 4 OPERATIONAL INSTRUCTIONS CONTROLLER OPERATION The air curtain refrigerator is equipped with an energy management system with dual compressors to operate efficiently. The 1/3HP compressor will operate when the door is closed and the 1/2HP compressor will operate when the door is open for more than 16 seconds. Keys and symbols marked with "1" indicate the 1/2HP system and ones with "2" indicate the 1/3HP system. The temperature is factory preset to 34F. How to View and Modify the Temperature Set Point. You can change the set point temperature for each compressor. 1. Push and release the SET1 or SET2 key. The bottom display will show either st1 or st2 and the upper display with show the current set point (flashing) 2. To change the set point push the up arrow or down arrow within 15 seconds. 3. Push the SET1 or SET2 key again or wait 15 seconds to save the new setting. To activate manual defrost The refrigerator has an automatic defrost system. However, you may activate the defrost for each system if you wish. To start a defrost for the 1/2HP system (1), press and hold the down arrow for 3 seconds To start a defrost for the 1/3HP system (2), press and hold the up arrow for 3 seconds CLEANING NOTE: This equipment has been designed and manufactured to meet all applicable health and safety codes and will give years of dependable service if used properly. All equipment should be thoroughly before using. WARNING: Electrical components should not be exposed to direct contact with water or cleaning sprays. Permanent damage to the electrical components will result. 1. Removed the pan/tray slides by lifting the inner Side panels up and out. Wash tray slides with Nonchlorinated cleaners. Allow to dry before installing. 2. Vinyl trim should be washed with a chlorine-free detergent and water. Rinse thoroughly with clear water and allow to dry. Never use abrasive cleaners, waxes, car polish, or substances containing strong aromatic solvents or alcohol. Use of direct steam/hot water cleaning at temperatures above 190 F may result in bubbling or loosening or vinyl adhesive. 3. To clean stainless steel surfaces use only cleansers, detergents, degreasers, or sanitizers that are certified to be chloride-free and phosphate-free, and cleansers, degreasers, or sanitizers only in the recommended concentrations. DO NOT exceed recommended concentrations or mixing ratios. After cleaning and sanitizing, rinse all exposed surfaces thoroughly with large amounts of clear water. Wipe off any standing liquid or residue from all horizontal surfaces in corners, or near edges. PURPOSE Routine Cleaning Daily Soap, ammonia detergent & water Smears/ fingerprints Stubborn spots & stains Hard water spots RECOMMENDED TIPS FOR CLEANING STAINLESS STEEL FREQUENCY As needed Daily As needed Daily As needed CLEANING AGENT Stainless steel cleaner or similar products Any chloride-free or phosphate-free cleaner Vinegar METHOD OF APPLICATION Sponge with cloth, rinse with clear water & wipe dry. Rub with cloth as directed on package. Rub in direction of grain of stainless steel. Do not use on vinyl trim. Apply with damp sponge or cloth. Rub in direction of polish lines. Rinse thoroughly after use, especially if cleaner contains chlorine bleach. Do not use on vinyl trim. Swab with cloth. Rinse with water & wipe dry. CAUTION: Do not use steel wool pads as they will result in rusting from the ferrous metal in the pads. CAUTION: Cleansers, detergents, sanitizers, or bleaching agents that contain chlorides or phosphates will cause permanent damage to stainless steel products. The damage appears as pits, eruptions, voids, small holes, cracks, severe discoloration, or dulling of the finish of the metal. THIS DAMAGE IS PERMANENT, COSTLY TO REPAIR, AND IS NOT COVERED BY THE WARRANTY. Page 4

5 AIR CURTAIN REFRIGERATOR 5 The Air Screen Refrigerator was designed to operate at a range of 34 F (1.11 C) to 40 F (4.44 C). The pull down time (time required to go from room temperature to 36 F) is approximately 40 minutes. The Air Screen Refrigerator operates basically the same as other refrigerated carts, except it maximizes air flow through special ducts. The thermostat monitors the cart temperature and turns the condensing unit on when above setpoint temperature. The condensing unit then condenses the refrigerant to create the cold air, which is cycled through the evaporator located in the top housing for the 1/2HP unit and on the back of the cabinet for the 1/3HP unit. The two center fans, which are always on, then circulate air through the evaporator cold coils and into the cart. When the cabinet reaches the set temperature the thermostat turns the condensing unit off. Moisture is removed from the air when the condensate unit is energized. When this occurs, the moisture will drip into the pan located beneath the evaporator. The moisture then drains down to the condensate evaporator, which boils the water away. When the cart door is opened, the two outer fans turn on and increase the air flow. This increased airflow through the ducts cause a screen of air across the cabinet holding the cold air inside. IMPORTANT: MAINTENANCE To maintain proper temperatures in the air curtain and to prolong the life of the compressor, the condenser coils must be cleaned on a regular basis. It is recommended that the coils be checked and cleaned every month. This procedure is not covered under warranty, however is to be performed only by qualified engineering/maintenance personal. PROCEDURE FOR REVERSING THE AIR CURTAIN DOOR SWING 1. Remove door. (See Fig. 1) NOTE: Remove only the 6 bolts (3 per hinge) that hold the door to the cabinet. Do not remove the bolts that attach the hinges to the door. Figure 1 2. Place door on a table or flat work surface. 3. Remove the switch strike plate (Button activator block) located at the top of the door. (See Fig. 2) Reorient it to the opposite end of the door and install. Cleaning procedure: Turn unit off and unplug from electrical power source. Figure 2 To access the coils, remove the louvered panels located at the bottom of the unit. Use a vacuum cleaner with a brush attachment to clean the coils. In extreme cases of dust and grease buildup, compressed air may be required for cleaning the coil fins. Use caution when doing this. The air curtain must be moved to an isolated location to perform this procedure. Once the coils have been cleaned, inspect for bent coil fins. Straighten bent fins using a straightening tool called a comb. The compressor motor and other components can be cleaned using stiff brush or whisk broom. Page 5

6 AIR CURTAIN REFRIGERATOR 6 4. Remove the door latch. (See Fig. 3) Turn it over to accommodate the new orientation and mount to the opposite side of the door. Upon reorientation, make sure that the handle will be in the down position when the door is reinstalled. 5. Remove the latch strike plate from the cabinet (See Fig. 4) and relocate it to the opposite side of the cabinet door opening. 6. Mount door on the opposite side of the cabinet by removing two (2) plates and utilizing the threaded fasteners. (See Fig. 5) Figure 5 7. Remove door catch mechanism located on the side of the cabinet and relocate it to the opposite side. 8. Use fasteners and filler plates to fill left over openings and open threaded holes.
