6 Equipment Description PlateScrape is a plate pre scrapper which can be utilized in lieu of a pre rinse spray valve. The plate prescrapper is not a sanitizing device and is intended to be used as a pre scrapper prior to the sanitization process in a dishwasher or a sanitizing solution. PlateScrape consists of a 5 gallon tank equipped with specifically designed nylon brushes for plate cleaning. The tank is filled with 4.4 gal of water to the fill level. The oppositely placed brushes are submerged in water. An operator submerges plates in the water past the nylon brushes. A combination of vertical and rotational movements remove debris from the plates as they are scrubbed by the brushes. PlateScrape Filled to Level Nylon Brushes Submerged in Water The tank performs the same task as a pre rinse spray valve while minimizing water consumption. PlateScrape can be filled with hot or cold water and be used with and without dish detergent. Hot water and the addition of detergent reduce cleaning times. Water consumption depends on how often the user empties and refills the tank which should be dependent on the amount of soil level on the plates. Page 6 of 13
7 20 Plates Covered with Dry Tomato Paste Prior to Cleaning 20 Plates After Cleaning with PlateScrape Methodology Testing was performed with 9 inch diameter plates weighing 1.3 lb each. PlateScrape was filled with 4.4 gallons of water. Each plate was evenly covered with one tablespoon (15 ml) of tomato paste and dried for a period ranging between 24 and 48 hours. Twenty plates were used for each test replicate. Tests were performed with 120⁰F, 100⁰F, and 70⁰F water. Cleaning time was recorded using a calibrated stopwatch and water temperature was measured throughout the test at 5 second intervals with type K thermocouples. Water volume was calculated by weighing the water before and after each test using a calibrated scale. Results Testing was performed with 120⁰F target water temperature in order to mimic the ASTM F2324 pre rinse spray valve test method. The PlateScrape was filled with 4.38 gal of hot water to the fill line. The average time to clean 20 plates was 10.9 seconds with 120⁰F initial temperature water. Three test replicates were conducted in order to confirm time consistency. By the time the last of the 20 plates was washed, the water temperature has dropped to 111⁰F from 120⁰F. In comparison, it takes a pre rinse spray valve 13 to 23 seconds on average to perform the same cleaning task at 60psi supplied with 120⁰F water. Pre rinse spray valve cleaning time depends on the flow pattern design and water flow rate. Page 7 of 13
8 Cleaning Water Temperature (F) Test Time (min) PlateScrape Water Temperature Drop while washing 20 plates The washing technique involved scraping the plate for 5 seconds, then rotating it 90 degrees and scraping it for 5 more seconds. The plates were angled at an approximately 15 degree angle from vertical during the scraping. Scraping times were consistent ranging from 9 to 12 seconds per plate. The water level dropped by 0.09 gal for every 20 plates cleaned by the PlateScrape. Different users experienced similar cleanability times and cleanability times decreased as users became more familiar with the cleaning technique Plate Cleaning Time (sec) Test Run PlateScrape Cleanability Times at 120 F for each run Page 8 of 13
9 The test with 120⁰F water resulted in a 10.9 sec cleanability time and a 111⁰F final water temperature. The test with 100⁰F water resulted in a 13.6 sec cleanability time and a 95⁰F final water temperature. The test with 70⁰F room temperature water resulted in a 16.9 sec cleanability time and the water temperature did not change. Plate Cleaning Time (sec) Washing Water Temperature (F) PlateScrape Cleanability Times at Different Initial Water Temperatures Water consumption will depend on how often the user dumps the water based on the soil level of the plates. If water was replaced every 200 plates cleaned with 0.09 gal added for every 20 plates cleaned, the water consumption would be 5.30 gal per 200 plates including the fill. This equates to gal per plate. This assumes 120⁰F water was used and a 4 second plate handling time with 4 plates washed per minute. The equivalent flowrate of the PlateScrape was gpm. If the water was replaced every 100 plates cleaned, the water consumption would be 4.85 gal and the equivalent flowrate would be gpm. In the worst water consumption scenario, if the water was replaced every 20 plates cleaned, the water consumption would be 4.47 gal with an equivalent flowrate of gpm. Page 9 of 13

11 Additions, Deviations, & Exclusions Additions: Cleanability test was performed at 70 F and 100 F in addition to 120 F tests. Deviations: Water temperature decreased throughout testing after the initial fill; initial and final water temperatures are documented in the report. Exclusions: The Flow Rate test is not applicable to this device. Water consumption is determined by the holding volume of the device. Total water consumption will vary depening on how often the user changes out the water. Page 11 of 13 PCP
