6 2. CONSTRUCTION [a] GENERAL This equipment is designed to electrolyze salt water to produce strong acid (sanitizing) and alkaline (cleaning) water. The connections may loosen and cause water leaks or damage. The Dispense Sensor may react with reflective materials such as glass and metal, even outside the normal detection range. ERROR LAMP for details. [6] Reset Button Press this button after the Add Salt Water Lamp goes on. See IV. 2. RESETTING ADD SALT WATER LAMP for details. [7] Display Window Displays the cell running time during normal operation, amperage or voltage by the Switch Panel operation, and error codes in case of trouble. [8] Dispense Button Press this button to start or stop dispensing electrolyzed water. [9] Water Outlet Lamp Indicates the type of water to be dispensed from each outlet. Note: To maintain the desired settings, the unit automatically alternates the water outlets at regular intervals (every 12 hours at factory setting). Check the type of water to be dispensed from each outlet by the Water Outlet Lamp. The following dispensing modes are available: Continuous Dispensing Mode Activated or disactivated by pressing the Dispense Button or putting a hand or object in front of the Dispense Sensor. Portion Control Dispensing Mode Activated by pressing the Dispense Button for 3 seconds or putting a hand or object in front of the Dispense Sensor for 3 seconds. Water automatically stops after the set dispense time indicated in the Display Window on the Control Panel (adjustable from 1 to 60 minutes). 4

[2] * Button (Down Button) When adjusting the settings, press this button to reduce the value. [3] Set Button Press this button to adjust the settings. The Display Lamp will illuminate the selected item. When adjusting the settings, press this button to raise the value. [5] Flow Rate Select Button Press this button to select the acid (sanitizing) and alkaline (cleaning) water flow rate between high, medium and low. [6] Flow Rate Lamp (red) Indicates the flow rate currently selected. Note: When the low flow rate is selected, acid (sanitizing) water may have an excessive available chlorine concentration. Select this flow rate only when the electrolyzed water property is inadequate. 5

11 4. CAUTION LABELS The following caution labels are attached where special care should be taken. On bottom front On right side 5. BEFORE USING ELECTROLYZED WATER WARNING 1. Do not mix electrolyzed water with other chemicals. Mixture with acidic chemicals such as hydrochloric acid or chlorine chemicals such as sodium hypochlorite may generate chlorine gas, resulting in health problems. 2. For purposes such as floor washing, do not use a large volume of acid (sanitizing) water only. It may cause excessive generation of chlorine gas, which is harmful to human health. 3. To prevent health problems or corrosion by chlorine gas, do not use acid (sanitizing) water spray in a large amount or for an extended period of time. 4. Do not store acid (sanitizing) water for a long time. It will lead to reduction in available chlorine concentration and chlorine gas generation causing health problems or corrosion of metallic products. 5. Do not look directly into the container or tank of electrolyzed water. Hydrogen or chlorine gas generated from electrolyzed water may cause health problems. 6. Do not distribute or sell electrolyzed water in containers. 7. If gas equipment leaks, turn off the main gas valve and ventilate the room. To avoid the risk of ignition and explosion, do not unplug the unit. 7

12 8. Do not use heat producing equipment in contact with or near the unit. The plastic parts may melt. 9. Do not hit, push or weigh down the unit. The plastic panel may fall off or the unit can tip over causing injury. 10. To prevent injury, do not hang on or step over the unit. CAUTION 1. Do not use electrolyzed water with alcohols or detergents. Their effects may reduce. 2. While washing the floor, protect appliances from water splash to prevent corrosion of metallic parts. 3. Electrolyzed water may irritate sensitive skins. Use gloves if necessary. 4. Do not place any precision instruments where electrolyzed water is used. Generation of chlorine gas or contact with electrolyzed water may cause corrosion or failure. 5. To prevent corrosion or deterioration, rinse or wipe metallic and plastic products with tap water immediately after using electrolyzed water. 6. The containers and instruments used for electrolyzed water should be made of plastic (PVC, PE, PET or teflon), stainless steel or glass. If corrosion or deterioration is observed, consider other materials. 7. To avoid corrosion of the drain pipe and water leaks, always neutralize electrolyzed water before draining it out. 8. Do not place any precision instruments between the unit and ventilator. Chlorine gas may cause corrosion or failure. 9. Never bring a flame close to electrolyzed water in a container or tank. Hydrogen gas generated may cause ignition. 8

13 II. CHECKS BEFORE OPERATION (DAILY) Use a copy of VII. 1. DAILY INSPECTION SHEET to record the check results. 1. CHECKING AMOUNT OF REMAINING SALT WATER 1) Check the amount of salt water remaining in the Salt Water Tank. 2) If it is not sufficient, supply salt water. 2. SUPPLYING SALT WATER CAUTION 1. Securely cap the Salt Water Tank to avoid dust and dirt causing failure. 2. To prevent corrosion, do not spill salt when adding it to the Salt Water Tank. 1) Prepare a plastic bucket. Pull out the Cap, Salt Water Hose and Filter from the Salt Water Tank, and put them into the bucket. Cap Salt Water Hose Salt Water Tank 2) Use the Measuring Cup (accessory) to add one level cup of sodium chloride (NaCl) or potassium chloride (KCl) into the Salt Water Tank. Salt Measuring Cup * Use sodium chloride (NaCl) or potassium chloride (KCl) of not less than 99% of purity. Use of any other salt may cause failure, clogged pipes or health problems. 9

14 * After adding salt, be sure to shake the Salt Water Tank until the salt dissolves completely in the water. Any grains of salt left in the Salt Water Tank can cause failure. 3) Add water into the Salt Water Tank up to the 5L mark. Cap 4) Check that the Mini Cap is closed, and put the Cap on the Salt Water Tank. Shake it until sodium chloride or potassium chloride completely dissolves in the water. Shake well 5) Open the Mini Cap and put it in the recess, and push in the Salt Water Hose until the Stopper hits the Cap. Stopper * When the Add Salt Water Lamp goes on even with the Salt Water Tank full, press the Reset Button. See III. 2. RESETTING ADD SALT WATER LAMP. The Add Salt Water Lamp may illuminate when the unit is restarted after a long shutdown. This is not a sign of failure, but reduction in suction power of the Pump Motor. 3. CHECKING FOR WATER LEAKS Check inside and around the unit for water leaks. If a water leak is found, contact an authorized Hoshizaki service company. 4. CHECKING REPLACE CELL LAMP The lifecycle of the electrode in the Electrolytic Cell is 3,000 hours. Check to see if the Replace Cell Lamp is flashing. * If the running time exceeds 3,000 hours, the Electrolytic Cell should be replaced. Contact an authorized Hoshizaki service company. 10

15 III. OPERATION WARNING 1. To prevent an electric shock, do not touch the Attachment Plug, Power Switch, or other electrical parts with damp hands. 2. The Power Cord should not be modified, jerked, bound, brought close to heat producing equipment, pressed down or pinched. It may be damaged and cause a risk of electric shocks or fires. CAUTION 1. Do not use combustible spray or place volatile and flammable substances near the unit. They could catch fire from a spark of a switch or the like. 2. Do not put heavy things or water containing vessels on the unit. They could fall off and cause injury, or spilt water may degrade the electrical insulation and increase the risk of electric leaks. 1. START UP 1) Plug in the unit. 2) Open the Water Supply Line Shut-off Valve. 3) Check for proper operation of the Water Softener. Refer to the instruction manual provided for operating instructions. See IV. 3. CHECKING WATER QUALITY (SOFTNESS) for how to check for water softening. 4) Check that the Salt Water Tank is properly set up. 5) Move the lever of the Power Switch to the ON position. A mechanical sound is heard three times immediately after the Power Switch is turned on. This is not a sign of failure. 6) Press the Dispense Button on the Operation Panel. 7) The Operation Lamp will go on. 8) The Ready Lamp will start flashing, and non-electrolyzed water will be dispensed at first. 9) When the unit starts to dispense electrolyzed water of the intended quality, the Ready Lamp will stay on continuously. 10) Check that the Add Salt Water Lamp is off. If it is on, follow 2. RESETTING ADD SALT WATER LAMP to supply salt water to the Electrolytic Cell until the lamp goes off. 11

16 11) To stop dispensing water, press the Dispense Button on the Operation Panel again. The Ready Lamp will go off. The unit will go through the flush cycle before water stops. * While the Ready Lamp is flashing, the quality of electrolyzed water has not reached the intended level. If the available chlorine concentration and ph value are less than the specified values, acid (sanitizing) water may not provide a sufficient bactericidal effect. * Before using electrolyzed water, check that the Ready Lamp stays on. 2. RESETTING ADD SALT WATER LAMP This unit uses a pump to supply salt water. If the Pump vapor-locks, it cannot provide salt water. When the unit stops with the Add Salt Water Lamp on, supply salt water to the Pump as follows: 1) Check that salt water is left in the Salt Water Tank. 2) Check that the Power Switch is ON. If it is OFF, turn it ON. 3) Press the Dispense Button on the Operation Panel. 4) Check that the Add Salt Water Lamp is on. 5) Press the Reset Button. 6) The Pump will start running and pumping up the salt water to evacuate the Salt Water Hose. About 90 seconds later, the Pump will stop. 7) The unit will drain water to flush out the electrode before shutting down. The Add Salt Water Lamp will go off. 8) Now the unit is ready for normal operation. * Do not press the Dispense Button on the Operation Panel, the Power Switch or any other switches before the Add Salt Water Lamp goes off. Otherwise, the lamp cannot be reset, and the above procedure must be repeated from step 5). Wait until the unit flushes out the system and completes the resetting procedure. * Always locate the Salt Water Tank below the end of the Water Outlets, or the Salt Water Tank will leak salt water by siphonage and the unit may fail to operate properly. 17 3. SHUT DOWN WARNING 1. Do not splash water directly onto the unit. It may cause short circuits, electric shocks, corrosion or failure. 2. To prevent an electric shock, do not touch the Attachment Plug, Power Switch, or other electrical parts with damp hands. CAUTION 1. To unplug the unit, be sure to pull the Attachment Plug and do not jerk the Power Cord. It could be damaged and cause fires or electric shocks. 2. When shutting down the unit for more than a week, drain the unit to prevent rotten water from causing failure. Then, turn OFF the Power Switch and unplug the unit. Dust may collect on the Attachment Plug or receptacle and cause heat generation or ignition. 3. Where subfreezing temperatures are expected, drain the unit to prevent water leaks caused by damage to the piping. [a] DAILY SHUTDOWN When electrolyzed water is being dispensed, press the Dispense Button on the Operation Panel. The Ready Lamp will flash and then go off, and the unit will stop dispensing after discharging a specific amount of tap water. To restart the unit, push the Dispense Button on the Operation Panel. * When the water supply is cut off, turn OFF the Power Switch and close the Water Supply Line Shut-off Valve. If the valve is left open, impure red water may come in when the water supply is resumed, resulting in a risk of failure. [b] LONG STORAGE (MORE THAN ONE WEEK) 1) Shut down the unit according to [a] DAILY SHUTDOWN. 2) Clean the salt water circuit according to [c] CLEANING SALT WATER CIRCUIT. 3) To restart the unit, start it up according to 1. START UP, and run the unit for at least 1 minute before using the dispensed electrolyzed water. 13

18 [c] CLEANING SALT WATER CIRCUIT 1) Drain out salt water from the Salt Water Tank. Wash the Salt Water Tank with tap water to remove any salt. 2) Fill the Salt Water Tank with tap water, and connect the Salt Water Hose. 3) Follow the instructions under 1. START UP to send tap water into the Salt Water Hose. Keep the unit running until the Add Salt Water Lamp goes on to flush out the salt water circuit. 4) Disconnect the Salt Water Hose from the Salt Water Tank, and drain the hose. Wipe out the Salt Water Hose and Filter with a clean cloth. 5) Drain out tap water from the Salt Water Tank. 6) Leave the Salt Water Tank to dry. 7) Put the Cap on the Salt Water Tank to keep away dirt or dust. 14

19 IV. MAINTENANCE WARNING 1. Do not splash water directly onto the unit. It may cause short circuits, electric shocks, corrosion or failure. 2. To prevent an electric shock, do not touch the Attachment Plug, Power Switch, or other electrical parts with damp hands. CAUTION 1. To prevent electric shock or burn, always turn OFF the Power Switch and unplug the unit before cleaning or inspecting the unit. 2. Do not use combustible spray or place volatile and flammable substances near the unit. They could catch fire from a spark of a switch or the like. * To prevent damage to the painted or plastic surfaces, do not use the following: thinner, benzine, alcohol, petroleum, soap powder, polishing powder, alkaline cleaner, acid, and scouring pad. When using a chemical cloth, follow the instructions of the manufacturer. 1. PERIODIC REPLACEMENT The Electrolytic Cell should be replaced every 3,000 hours of operation. The lifecycle depends on the water quality. But periodic replacement is required to maintain the electrolyzed capacity. * If the Replace Cell Lamp starts flashing, contact an authorized Hoshizaki service company. 2. CHECKING ph VALUE AND AVAILABLE CHLORINE CONCENTRATION (DAILY) 1) Dispense alkaline (cleaning) water and acid (sanitizing) water from the outlets into glasses or other containers. 2) Use the test paper (accessory) to check the following values: Check Item Alkaline (Cleaning) Water ph Value Acid (Sanitizing) Water ph Value Acid (Sanitizing) Water Available Chlorine Concentration Applicable Test Paper ph Tester AZY ph Tester TB Chlorine Tester It is not necessary to check the available chlorine concentration of alkaline (cleaning) water. 15

20 3) Check that each value is within the following range: ph Value Available Chlorine Concentration Alkaline (Cleaning) Water Approx or more N/A Acid (Sanitizing) Water Approx. 3.0 or less 20 ppm or more (0.17 lbs x 10-3 /galon or more) * See the instruction manual of each test paper for details of its proper handling. * If any of the checked values exceeds the specified range, contact an authorized Hoshizaki service company. * To order a new supply of test paper, contact an authorized Hoshizaki service company. * If each electrolyzed water is dispensed from the wrong outlet and the Flush Lamp is off, contact an authorized Hoshizaki service company. * Keep a record of the checked values on a copy of VII. 1. DAILY INSPECTION SHEET. 3. CHECKING WATER QUALITY (SOFTNESS) 1) Open the gauge cock of the Water Softener, and collect water in the cup provided with the Water Softener. 2) Add one or two drops of the hardness indicator provided with the Water Softener, stir the cup lightly, and check the color of the water: Red = hard water Blue = soft water See the instructions provided with the indicator for further details. * Check the water quality (softness) each time putting salt into the Water Softener. * Continuous use of hard water may cause clogged pipes, reduction in electrolyzed capacity and failure of the Electrolytic Cell. * If the water is still hard even with salt in the Water Softener, contact an authorized Hoshizaki service company. 4. MONTHLY MAINTENANCE Keep a record of the checked values on a copy of VII. 2. MONTHLY INSPECTION SHEET. 16

21 [a] CLEANING FILTER AND SALT WATER TANK 1) Prepare a plastic bucket. Pull out the Cap, Salt Water Hose and Filter from the Salt Water Tank, and put them into the bucket. 2) Wash the Filter attached to the Salt Water Hose with warm water, and remove any dirt or dust to prevent the Filter from clogging. 3) Wash the Salt Water Tank with a neutral cleaner to remove any salt grains or dirt. Rinse thoroughly. 4) Wipe dry. 5) To refit the Salt Water Hose, fit the Cap on the Salt Water Tank, and insert the Filter, then the Hose into the hole in the center of the Cap. Push in the Salt Water Hose until the Stopper hits the Cap. Salt Water Tank Stopper Cap Salt Water Hose [b] CLEANING SHOWER NOZZLE When clogged, remove the Shower Nozzle as shown and use a toothbrush to clean the shower holes. Note: To prevent damage to the Shower Nozzle, do not use a metal brush or knife. 5. ANNUAL OR BIANNUAL MAINTENANCE [a] CHECKING ATTACHMENT PLUG WARNING 1. Check periodically that the Attachment Plug blades and their vicinity are free of dust and that the Attachment Plug is securely plugged into the receptacle. Dusty blades or loose connection may cause electric shock or fire. 2. The Power Cord should not be modified, jerked, bound, brought close to heat producing equipment, pressed down or pinched. It may be damaged and cause a risk of electric shocks or fires. 17

22 3. The unit must have a separate power supply or receptacle of proper capacity. Branching off the Power Cord, using an extension cord, or sharing a single power supply with other appliances may result in electric shock, heat generation or fire. If the Attachment Plug or Power Cord is in an improper condition, immediately contact an authorized Hoshizaki service company and ask for repairs. 6. MAINTENANCE AS REQUIRED [a] EXTERIOR * The exterior is powder painted. Wipe it with warm water or a neutral cleaner, if required. Use a damp cloth to wipe off any cleaner. * The Operation Panel, Salt Water Tank and Water Outlets are made of plastic. Keep them away from impact or sharp edges. [b] SAFETY CHECK Even if there is no problem with its use, a more than five-year-old unit should be inspected by an authorized Hoshizaki service company (charged). [c] STAINLESS STEEL Can stainless steels rust easily!? (based on literature issued by NAFEM) Stainless steel is an alloy of iron, chromium-molybdenum and nickel. A protective film formed on the surface of stainless steel acts as a shield against corrosion. This film is very thin and easily damaged by scratches or chlorides. Damage to the protective film will cause corrosion. So stainless steels do rust. Daily maintenance is very important. (NAFEM = North American Association of Food Equipment Manufacturers) Maintenance of Stainless Steel * Do not scratch a stainless steel surface. Use of a steel brush or pad will break down the oxide layer and cause corrosion inside. * Use a soft liquid cleanser containing calcium carbonate to remove rust, dirt or chlorides on a stainless steel surface. * If a stainless steel has a patterned surface, clean it along with this pattern. * Clean a stainless steel surface with a soft cloth and a liquid cleanser containing calcium carbonate, tap water or alkaline (cleaning) water. 18

23 V. TROUBLE SHOOTING WARNING 1. To prevent an electric shock, do not touch the Attachment Plug, Power Switch, or other electrical parts with damp hands. 2. If the unit does not work properly, turn OFF the Power Switch and unplug the unit or disconnect the main power source, and contact an authorized Hoshizaki service company. To prevent possible electric shocks or fires, do not keep the unit in operation. 3. This unit should be disassembled or repaired only by qualified service personnel to prevent the risk of injuries, electric shocks or fires. * In case of alarm, check for possible causes according to the instructions below before calling for service. If the alarm still exists, contact an authorized Hoshizaki service company and let them know the model number, serial number, installation date and state of the problem. 1. ADD SALT WATER LAMP When the Add Salt Water Lamp on the Operation Panel is on, follow the instructions below. [a] WHEN SALT WATER TANK IS FULL Reset the Add Salt Water Lamp according to III. 2. RESETTING ADD SALT WATER LAMP. [b] WHEN SALT WATER TANK IS NOT FULL Add salt water according to II. 2. SUPPLYING SALT WATER, and then reset the Add Salt Water Lamp according to III. 2. RESETTING ADD SALT WATER LAMP. If the Add Salt Water Lamp still cannot be reset, try again after checking for the following possible causes. Lamp Error Code Possible Cause and Remedy Add Salt None The electrolyzed current stays at least 4.0A lower than the setting Water for 15 seconds. (1) Insufficient salt water. Add salt water according to II. 2. SUPPLYING SALT WATER. Then supply salt water to the Pump according to III. 2. RESETTING ADD SALT WATER LAMP. 19

24 Lamp Error Code Possible Cause and Remedy Add Salt Water None (2) Salt Water Hose not properly attached. The Hose draws in air and cannot send salt water. Push in the Hose until the Stopper hits the Cap. Then supply salt water to the Pump according to IV. 2. RESETTING ADD SALT WATER LAMP. (3) Salt Water Hose clogged with dirt or dust. Unclog the Hose. Then supply salt water to the Pump according to IV. 2. RESETTING ADD SALT WATER LAMP. (4) Filter clogged with dirt or dust. Unclog the Filter. Then supply salt water to the Pump according to IV. 2. RESETTING ADD SALT WATER LAMP. (5) Salt water concentration too low. Add salt into the Salt Water Tank to raise the concentration. Then supply salt water to the Pump according to IV. 2. RESETTING ADD SALT WATER LAMP. If the problem still exists, contact an authorized Hoshizaki service company. 2. ERROR LAMP When the Error Lamp on the Operation Panel is on, look at the Display Panel at the top left of the unit. Check the error code on the Display Window, and follow the instructions below. [a] CHECKS BY SERVICE PERSONNEL When one of the following error codes is displayed, turn OFF the Power Switch, and immediately contact an authorized Hoshizaki service company. Lamp Error Code Possible Cause and Remedy Error E14 Defective Water Valve. Repair or replace. E53 Defective Magnetic Contactor. Repair or replace. E61 Defective Flow Switching Valve. Repair or replace. E84 Defective Float Switch. Repair or replace. None E74 Defective Thermistor. Repair or replace. E82 Defective Float Switch. Repair or replace. 20

25 [b] CHECKS BY END USER When one of the following error codes is displayed, check for the possible causes listed below, and turn ON the Power Switch to restart the unit. If the error code appears again on the Display Window, turn OFF the Power Switch and immediately contact an authorized Hoshizaki service company. Lamp Error Code Possible Cause and Remedy Error E11 The water flow is insufficient. (1) Improper water supply connection. Resume water supply. (2) Water Outlets blocked. Unblock. (3) Water Valve clogged with dirt or dust. Unclog the Valve to resume water supply. 3. PROBLEMS WITHOUT ALARM INDICATION Unit fails to operate: (1) Power failure. Wait until power supply is resumed. (2) Unplugged. Plug in the unit. 4. WATER LEAKS When water is leaking from the unit, check for the following possible causes, and contact an authorized Hoshizaki service company. Do not attempt to repair. (1) Water is leaking inside the unit. (2) The O-Rings are not properly installed in the Remote Pipes connected to the Water Outlets. 5. ABNORMAL NOISE When an abnormal noise is heard, check for the following possible causes. (1) In addition to the operational noise, water supply and pump noises are heard while the unit is running. These are not symptoms of failure. (2) The wall is not strong enough. Contact an authorized Hoshizaki service company. 21

26 (3) The unit is not properly fixed. Contact an authorized Hoshizaki service company. (4) The unit is in contact with something. Remove the object. VI. REINSTALLATION, DISPOSAL, TRANSFER WARNING 1. In case of reinstallation, contact an authorized Hoshizaki service company. Improper installation may cause a water leak, electric shock or fire. 2. When disposing of the unit, contact an authorized Hoshizaki service company. To prevent unexpected accidents, do not leave the unit. CAUTION When selling or transferring this product, tape this instruction manual to a readily visible place to provide the new owner with information on safe and proper use of the product. 22
