1 GREASE REMOVAL DEVCE GUDELNES FOR PLOT/PLUMBNG PLAN DRAWNGS AND NSTALLATON REQUREMENTS The removal of fats, oils, and grease (FOG) from kitchen wastewater is an essential operational requirement for Food Service Establishments (FSEs) like restaurants, cafes, catering facilities, commissaries, churches, hotels, cafeterias, convenience stores, full service grocery stores, schools, hospitals, nursing homes and food manufacturing plants to ensure the proper operation of the sanitary sewer system for all. As such, El Dorado rrigation District (ED or District) requires an appropriately sized and installed Grease Removal Device (GRD) to be installed on gray water drains discharging to the District s sewer system. GRDs are designed to remove FOG from wastewater. The retained FOG and solids are to be regularly removed or pumped out of the GRD before the capacity has been reduced by 25%. ED has adopted regulations (ED Administrative Regulation 6022) and implemented the following requirements and procedures to ensure proper GRD installation and operation. All new FSEs connecting to the District s sewer system are required to provide a Plot Plumbing Plan along with the manufacturer specification sheet for the proposed GRD for District approval prior to installation. The District may require the same information for any existing FSE that plans significant changes to plumbing, plumbing fixtures or food preparation than what is on file with District s ndustrial Pretreatment and Pollution Prevention Program.. PLOT/PLUMBNG PLAN The plot/plumbing plan shall provide information identifying the location of the FSE relative to the streets and surrounding area, show general dining, kitchen, and washing/cleaning areas, and provide information on the general piping connections related to wastewater discharged to the sewer. At a minimum, the drawing shall be drawn to scale and shall clearly identify each of the following: a. Map orientation or North arrow. b. Name of FSE, address, drawing name and number, date drawn/revised and the name of person designing the drawings. c. Legend for symbols used. d. All general work areas including the dining and kitchen areas. e. The overall building dimensions and work area dimensions. f. All plumbing fixtures demonstrating which are (and are not) connected to the sewer. This may include, but is not limited to: sinks, floor sinks, floor drains, mop sinks, dishwashers, restrooms, drain lines, etc. g. Location of GRD(s). h. A list indicating fixtures that are connected to GRD(s). i. Sizing calculations used to determine the minimum size of the GRD to be installed. (May be shown on a separate page) a. Use page A-4 for grease trap sizing calculations and page A-6 & A-7 for grease interceptor sizing calculations. This document should not be used as a substitute for codes and regulations. The applicant is responsible for compliance with all code and policy requirements, regardless of whether they are referred to or contained in this document. A-1

All drawings shall clearly convey all the information required and shall have good contrast, clear background, and legible labeling. Drawings shall have a minimum dimension of 8.5 x 11 and shall not exceed a maximum dimension of 30 x 42. Only one set of plans is required. Submittals may be ed to ipp@eid.org or mailed to the following: El Dorado rrigation District Attn: PP Program 2890 Mosquito Road Placerville, Ca Failure to clearly show/demonstrate compliance with the minimum requirements will result in your application being returned for correction of deficiencies, which may delay project approval. Do not install the device without approval from ED. Once approved by ED, the GRD device may be installed as configured in the approved plans. The following types of GRDs are approved for installation: Small grease traps generally smaller than 100 gallons Mechanical grease traps (required to be plugged into a power outlet and maintained by permittee); or n-ground grease interceptors with minimum size of 1000 gallons (see standard drawing S13 below). GREASE REMOVAL DEVCE NSTALLATON REQUREMENTS All potential grease generating drainage fixtures, as outlined below, shall connect to a GRD. All fixtures connected to a GRD shall be indicated on the above mentioned plot/plumbing plan to achieve project approval. Each GRD shall be sized and installed per the Uniform Plumbing Code (UPC) and ED s Design and Construction Standards (if applicable) and readily accessible for inspection, cleaning and removal of all contents. The size of all GRDs installed shall be equal to or larger than specified on plans or attachments. The following minimum requirements shall apply to all GRDs approved for installation: a. GRD sizing calculations are correct using UPC and ED s Design and Construction Standards (if applicable) and noted on the plans. b. A list of all drainage fixtures connecting to the GRD(s) is noted on the plans. c. All pre-rinse (scullery) sinks shall connect to a GRD. d. All three compartment sinks (pot sinks) shall connect to a GRD. e. Screens are installed on each sink and floor drains. f. All drainage fixtures in dishwashing room shall connect to a GRD. Some examples: small drains prior to entering a dishwasher, small drains on busing counters adjacent to prerinse sinks or silverware soaking sinks. A-2

3 g. No dishwasher shall connect to a grease trap. When a grease interceptor is to be used, the dishwasher shall be connected to the grease interceptor. h. All floor drains in dishwashing area and kitchen are not required to be connected to a grease trap, but shall be connected to a grease interceptor if device is installed. i. f not used for dishwashing activities, prep sinks are not required to be connected to a grease trap. Prep sinks shall be connected to a grease interceptor if device is installed. j. Mop (janitor) sinks are not required to be connected to a grease trap but shall be connected to a grease interceptor if device is installed. k. All outside areas designated for equipment washing shall be covered and be constructed to prevent rain infiltration if connected to the sanitary sewer. All outside drains shall connect to a grease interceptor. l. All wok stoves, rotisseries, or other fats, oils, or grease generating cooking equipment with drip wastewater lines shall be connected to a GRD. m. No kettles and tilt/braising pans and associated floor drains/sink shall be connected to a grease trap. These fixtures shall be connected to a grease interceptor if device is installed. n. No pasta cookers (boiler) drip lines shall be connected to a grease trap. These fixtures shall be connected to a grease interceptor if device is installed. o. No hand sinks, ice machine drip lines, hot lines from buffet counters and kitchens, soda machine drip lines or any drainage lines in bar areas shall be connected to a grease trap. These fixtures shall be connected to a grease interceptor if device is installed. p. The inlet pipe to the grease trap shall be equipped with a flow control fitting. The flow control fitting shall be specific to the grease trap manufacturer design (often included with grease trap installations). A flow control fitting that has adjustable or removable parts is prohibited. q. Grease traps designed for the use of enzymes and/or microbes are prohibited. r. An in-ground interceptor shall have a minimum of three manholes to allow visibility of each inlet piping, baffle (divider) piping and outlet piping to ensure accessibility for inspection, cleaning, and removal of all contents. (see standard drawing S13 below) The number of manholes shall be indicated on plans. Existing interceptors with two manholes may be allowed under certain conditions and only as authorized in writing by the Environmental Division of ED. Upon installation of the approved GRD please call the Environmental Division at for inspection. A-3

Step 4 Add the capacity in gallons for all fixtures Prep sink + 3 compartment sink = Total capacity: 59.8 gal gal. = gal. Step 5 Determine actual drainage load. The fixture is usually filled to about 75% of capacity. Actual drainage load= 75% of fixture capacity Actual drainage load: 0.75 x gallons= gal. Step 6 Determine the flow rate and the drainage period: Flow Rate= Actual drainage load/ Drainage period. Good practice uses a drainage period of one minute. Two minute drainage time should only be used if installation space will not accommodate the GRD recommended for the one minute drainage period. Any 2 minute drainage period calculations must be approved by ED Calculation drainage flow rate 1 minute period: gal./ 1 min= Gallons per Minute (GPM) Calculation drainage flow rate 2 minutes period: 78.45gal/ 2 min= 39.2 Gallons per Minute (GPM) Step 7 Select a GRD that with a GPM rating greater than or equal to the drainage flow rate The drainage flow rate for a 1 minute period is GPM. Use the following table to calculate the facilities total Drainage Fixture Unit (DFU) load that will be connected to the interceptor.
