Basic safety precautions should always be followed when using this appliance. 1. Read these instructions thoroughly before use. 2. This appliance should not be used by children. Do NOT allow appliance to rest on the power cord. 13. Maintain a ventilation clearance of four inches on all sides of the mill. 14. If mill stops, or if there is excessive noise, turn power off, unplug from electrical outlet, disassemble, clean all components then reassemble machine. Discontinue use and call our toll-free customer service number if cleaning does not resolve these issues. 15. Keep fingers and other objects away from chute. 16. Do NOT push grains into chute. 17. 5 3-PRONG PLUG g This appliance has a 3-prong (grounding) plug for use in a 3-prong (grounding) outlet to minimize the possibility of electric shock. This appliance should only be used with a 120V, 60Hz grounded outlet. Failure to follow these instructions could result in fire, electrical shock, serious injury, or death. BEFORE USING THE FIRST TIME CAUTION: RISK OF SUFFOCATION - KEEP ALL PACKAGING AND PLASTIC BAGS OUT OF THE REACH OF CHILDREN. 1. Remove all parts from the box. 2. Purge the mill by grinding 2 cups of grain or rice and discarding. 3. Disassemble and brush out the mill following the instructions in the Disassembly and Cleaning section of this manual. HOW TO USE Your Lee Flour Mill is a gravity fed mill with a nine position control lever to change the consistency of the grind from coarse to fine. The dust cover reduces air-borne particles of your newly ground flour. The mill is equipped with a safety feature to automatically cut the motor in the event that overheating occurs. If this happens, switch the power to OFF, unplug the mill and give the motor 15 minutes to cool down before resuming use. 10 GRAIN GRINDING Your Lee Household Flour Mill will provide your family with fresh flour from most dry grains such as wheat and buckwheat. For more information on compatible grains, visit organicsbylee.com IMPORTANT: NEVER MILL GRAINS THAT HAVE A HIGH OIL OR MOISTURE CONTENT. DO NOT ATTEMPT TO MILL WET OR DAMP PRODUCTS. DO NOT REGRIND FLOUR. HARD VARIETIES OF GRAIN MAY CAUSE THE MILL HOUSING TO BECOME VERY WARM DURING NORMAL USE. DISASSEMBLY AND CLEANING It is important to clean the mill after every usage in order to keep the mill in good working order and to avoid rancidity. Refer to the diagram on the following page to become familiar with the parts of the mill and then follow the step-by-step instructions for disassembly. WARNING: ANY OTHER SERVICING SHOULD BE PERFORMED BY AN AUTHORIZED SERVICE REPRESENTATIVE. DISASSEMBLY WARNING: TO AVOID PERSONAL INJURY, ALWAYS SWITCH THE UNIT TO OFF AND REMOVE THE PLUG FROM THE ELECTRICAL OUTLET BEFORE DISASSEMBLING THE MILL. 1. Using the disassembly tool or flathead screwdriver, remove the two screws that hold the front cover on the mill housing. 2. Remove the front cover and plate. 3. Grasp the quick coupler and pull straight out. 4. Pull out the governor and disk assembly. OPTIONAL DISASSEMBLY FOR EXTENDED CLEANING: 1. Carefully remove the grinding stone. 2. Unscrew the control lever. The disassembly tool can be used to loosen the control lever. 3. Remove the adjustable ring by turning it clockwise until it stops and pull out. 10

12 CLEANING WARNING: KEEP FINGERS AND OTHER OBJECTS AWAY FROM CHUTE TO AVOID PERSONAL INJURY OR DAMAGE TO MILL. H 1. Use the cleaning brush to clean the chute, both from the top and bottom. 2. Use the cleaning brush to whisk flour dust from all parts, including the grinding stone. 3. For an extended cleaning, wash mill stone, coupler, hopper and disk assembly in warm soap water or in dishwasher. 4. Rinse or hand-wash the bowl cover and hopper in cold water and air dry. 5. Thoroughly dry all parts before reassembling the mill. Reassemble the mill following the disassembly instructions in reverse order. IMPORTANT: THE HOPPER IS NOT DISHWASHER SAFE. IMPORTANT: DO NOT ATTEMPT TO CLEAN THE BOWL COVER IN A WASHING MACHINE. TIP: IF YOUR STONE BECOMES WET, BE SURE TO AIR DRY FOR 48 HOURS PRIOR TO USE. TIP: CLEAN ALL RESIDUE FROM WITHIN THE GOVENOR AND DISK ASSEMBLY. P w w P l IMPORTANT: YOU MAY NEED TO ROTATE GOVERNOR AND DISK ASSEMBLY WHILE HOLDING THE MOTOR SHAFT TO MAKE SURE IT IS PROPERLY SEATED ON THE SHAFT. IMPORTANT: GENTLY ROTATE THE STONE WHILE INSERTING IT INTO THE MILL HOUSING TO AVOID LODGING IT. CAUTION: WHEN INSTALLING THE QUICK COUPLER, LISTEN FOR A CLICK, INDICATING THAT THE COUPLER IS FULLY SEATED ON THE MOTOR SHAFT. WHEN SEATED, THE COUPLER SHOULD ENGAGE AS FOLLOWS. 14 TROUBLESHOOTING ISSUE Mill chamber clogs, mill becomes warm and flour does not come out of outlet. Quick coupler not engaging on shaft. Residual grain in chute after milling. Mill housing difficult to clean (flour paste inside of mill housing). Rotating disk does not insert fully on motor shaft. Mill is warm to the touch. CAUSE High gluten grains milled on fine setting. Governor not opening because it is clogged with flour. Bowl is full. Bowl cover clogged (air must be able to pass through the mesh). Mill reassembled when wet. Governor is clogged with flour. This is normal. Humidity, moisture or high gluten. Humidity, moisture or high gluten. High humidity. Moist grains. High gluten grains milled on fine setting. Hex flats are not aligned. 15 RESOLUTION Adjust mill to a coarser texture. Clean the governor thoroughly. You can test the governor by manually depressing valve. Valve should move freely with finger pressure and return with spring pressure. Empty collection bowl. Clean bowl cover by brushing off any caked flour on the inside, or any blockage on top of the cover. Thoroughly air dry all parts prior to use. Test governor by manually depressing valve and clean thoroughly. Remove bowl before removing front cover; this will help avoid mixing un-milled grains with flour. Freeze grains prior to milling. Utilize accessory flour bag, part # M instead of the Pyrex bowl and cover. Reduce ambient humidity to 50% or lower with a dehumidifier or air-conditioning. Air or oven dry grains. Adjust mill to a coarser texture. Rotate disk slightly until it slides on shaft completely. To keep temperatures low, increase coarseness, mill smaller batches or freeze grain prior to milling. To reduce dust, wait for the rotating disk to stop before removing bowl cover you ll see the cover decompress. You can also tap the bowl cover to remove any flour that may be caked on the underside of it. 15
