Perfect for food that easily boils over. A sensor that measures the product s temperature controls the boiling or cooling process.the core temperature is also a prerequisite for logging and follow-up via Getinge Storkök s control program, gs-doc. Controlled tilting All tilting kettles in the M4 series are supplied with electronically controlled tilting as standard. ART (Automatic ReTilt) automatically retilts the kettle and makes filling simple and highly accurate in all types of receptacles. Precise water filling The pipe is mounted directly on the kettle, minimising the risk of contamination via surfaces that are not intended for handling foodstuffs. Water filling is electronically controlled via a flow meter. The precise volume of water is entered on the display. The new M4 model has an improved and more user-friendly control panel that makes it possible to carry out several operations simultaneously. Control of the core temperature is more precise and the pouring lips have been strengthened. The new flow meter for water filling means that it is now also possible to dose in decilitres. The pan s tightness classification, support and accessibility for servicing have been improved. It goes without saying that we have included the popular and unique turnable lid. With one simple operation you turn the lid on its end and lower it into the pan. All you have to do then is wash it clean with the pistol hose. All in a good working posture. The pan s steam jacket is naturally also fitted with a sealed steam system and automatic water filling. The M4 has also been provided with a number of new accessories including container cradle, foot pedal and e-log. gs-doc (Maxi) has also been developed and become web-based. M4 Hi has a higher tipping height that delivers better ergonomics and simpler portioning. Intelligent boiling & browning The boiling function uses double power-stages and precise temperature measurement. This produces rapid heating followed by an even temperature. If a product is put into the pan the control system reacts immediately and restores the temperature. The boiling process can also be time controlled. When the set time has elapsed a heat-retention program takes over. At high temperatures you also have the option of browning directly in the pan. Powerful stirring The stirrer has 5 pre-set programs (from 15 to 155 revolutions/min), which cover everything from very gentle stirring to high speed stirring when whisking. The stirrer is very powerful, which means, for example, that it is possible to make mashed potatoes from a full pan of boiled potatoes. The stirring tool is made entirely from stainless steel, is graduated (volume) and easy to insert in the kettle. The stirring tool s scraper is removable. Both stirring tool and scraper are easy to wash up in a dishwasher. Effective cooling The cooling function uses ordinary cold water to cool down the tilting kettle s steam jacket. Cooling is electronically controlled, which delivers maximum utilization of the water and a water saving of approx. 30% in comparison with traditional systems. (You can also read about the IWC system on page 9) Programming & settings The pan s control electronics are also equipped with a programming function. 99 different programs can be stored in the memory, simplifying and increasing the efficiency of the cooking process.

4 A REVOLUTIONARY NEW CONTAINER CRADLE - SIMPLE, SAFE AND ergonomic! ACCESSORIES FOR A MORE ENJOYABLE AND SIMPLER WORKING LIFE! Container cradle A revolutionary new combined cradle and shelf for the kettle. The cradle rotates together with the kettle as it tilts, enabling portioning to take place in GN containers without scoops and ladles and with no mess! Easy to fill up one container at a time with any product you like. The cradle is now revolved half a turn and it locks in a position that gives you an optimum surface on which to place milk cartons right beside the kettle! Place a 20 litre milk carton on the shelf and allow the milk to flow through the lid s grating at the same time as the stirrer is in operation. Simple, safe and ergonomic! Foot pedal Have both hands free when you are working with your pan! As long as the foot pedal is pressed down, the stirrer is allowed to rotate at 20 revolutions/min with the lid open. ACT Washing-up tool Now with a more robust design. The washing-up tool ACT (Advanced Cleaning Tool) cleans the kettle quickly and efficiently. This reduces the workload for the staff in the kitchen. The washing-up tool is controlled by means of three pre-set programs. Simply add a small amount of washing-up liquid and the washing-up tool does the heavy work. Finish off by rinsing out the kettle. The pan is then ready for use again! The washing-up tool has a number of benefits compared with traditional washing-up: ACT can successfully clean a pan without any prior soaking, reducing water and energy consumption. This produces a better operating economy and less environmental impact. ACT washes up with the same effectiveness time after time (the level of precision is increased in that the washing-up process is standardised to a greater degree, with less influence from external factors). ACT substantially increases efficiency in conjunction with washing-up as the washing-up process goes more quickly and a more powerful washing-up detergent can be used. Strainer plate The strainer plate is an invaluable accessory when, for example, draining water from potatoes or pasta. The stable strainer plate is mounted in the kettle s outlet in one simple operation. Pistol hose Makes cleaning the pan easy. The pistol hose is manufactured in an impact resistant design, with the option of adjusting both the jet s concentration and pressure. The pistol hose can be simply suspended on the pan s support and supplied with a mixer fitting for hot and cold water. Measuring rod The measuring rod is used to keep a continuous check on the volume being utilised in the kettle. Shaped to hang on the edge of the kettle. Tool trolley The tool trolley facilitates movement and storage of items such as strainer and draining plates. The trolley is made of stainless steel and is available in versions for two or three sets of tools. Drain valve Butterfly valve in hygienic construction for draining the kettle or connecting a pump. Made entirely in stainless steel with a gasket made of EPDM. Can be supplied in sizes 2 and 3 and in ISO or SMS version. Alternative designs The designs below are examples of options that can be supplied for special adaptation. Pans in steam versions The pans can be adapted for heating with steam from existing external steam boilers. Bearings Bearings adapted for most makes available on the market can be manufactured to order. This makes it possible to install a new pan from Getinge Storkök in an existing line of pans. Loose bearings can also be manufactured for installation in other equipment or on walls. Support The pan s support can be specially manufactured in several different widths to make it possible to install new pans from Getinge Storkök in conjunction with existing floor drains where there were previously pans of other makes. The possibility also exists of adapting the location of electricity and water supply. Electricity connection The pan s electrical equipment can be adapted for other mains voltages. The pan s output can also be modified.

5 SIMPLE documentation WITH gs-doc AND e-log Cooling directly in the pan High cooling effect Closed system Environmentally friendly e-log (option) A pan from Getinge Storkök is highly energy efficient with a coefficient of utilization of 95% (measured according to EFCEM s standard). However, there is a lot that the user can do to prepare food in an energy efficient manner. Don t boil at unnecessarily high temperatures, don t keep food warm for unnecessarily long periods etc. To assist the user in reducing consumption of power when cooking, Getinge Storkök has produced an aid, e-log, to log energy consumption both per process and in stand-by mode. It can also add up the total energy consumption during the pan s lifetime. The respective pan s energy consumption is available via an ordinary web browser on the local network. gs-doc (option for Maxi) gs-doc is a system that has been developed to simplify the documentation in an HACCP plan. The system stores information in conjunction with each individual boiling process, including temperature, time and which employee has performed the process. The system also deals with all operational alarms. All data is saved locally in the respective pan. The operational information for a pan is accessible for inspection in the same way as with e-log. Technology e-log and gs-doc are located on a web server in the pan s electronic controls. This connects the pan to the local network. Connect the local network to the Internet for remote administration and fault localization. Which version do you need? IWC external cooling IWC is perfect for a kitchen that supplies refrigerated food as the cooling takes place directly in the kettle. This saves a lot of time and minimises the number of heavy lifts that the staff have to perform during the cooking process. IWC is also excellent when preparing cold dishes as it guarantees that the product does not reach temperatures that can promote the growth of micro-organisms. IWC is a high-performance system for cooling directly in the pan. This system uses an ice bank that manufactures ice by means of a refrigeration compressor. When a refrigeration process is underway, ice water circulates between the pan and the ice bank through thick pipes. The high rate of flow in the pipes, combined with the ice, produces a very high cooling effect. As it is a closed system it is also very environmentally friendly with minimal water consumption. As cooling of foodstuffs is a process that is entirely dependent on the correct temperature and refrigeration speed, gs-doc is always included in conjunction with sale of tilting kettles with IWC in order to facilitate quality assurance (see page 9). Technology Ice bank including refrigerating unit is supplied complete from the factory. The ice bank is made of stainless material and includes compressor, heat exchanger, accumulator tank, circulation pumps and control electronics. An air compressor with accompanying tank shall be connected to the system for evacuation of ice water to the accumulator tank when the process is completed. The tilting kettle is a modified model M4 MAXI that is specially adapted with connections for cooling agent, valves and a special electronic control that manages the refrigeration process. In addition to this system there are safety components such as high quality pressure gauges and safety valves. The heating elements are mounted in a unique construction that ensures that the elements are always located under water. The elements are also equipped with overheat protection. The pan s system for tilting is equipped with anti-slip protection that ensures that the kettle is always secure in all positions. The stirrer s speed is continuously monitored against excess speed, guaranteeing that the set speed is never exceeded. The pans also have a low sound level (max. 68 db(a)) and a very low external temperature of about 30 C.
