He loves to travel the world with his culinary road show, and in 2016 launched Fourghetti, his new restaurant in Bologna. Lasagna in crosta (Lasagna en croute) with seafood sauce in Bolognese friggione soup Ingredients For the lasagna: 4 sheets of egg pasta Extra-virgin olive oil For the seafood sauce: 4 prawns 8 mussels 8 carpet shell clams 8 tartufi di mare (sea truffles) 4 squid 4 small cuttlefish 2 ripe tomatoes, garlic and parsley For the friggione: 1 red onion ½ cup prosciutto, cubed 1 cup tomato puree Directions For the friggione: Julienne the prosciutto cubes and the onion; combine and lightly fry, add tomato puree, a pinch of salt, and a pinch of sugar, and cook over low heat for about 20 minutes. For the seafood sauce: In a pan with oil, garlic, and parsley and a ladle of water, open the mussels, clams, and tartufi di mare for 2 minutes over high heat. Removed from heat, shell the mollusks, strain the water, and thicken with a bit of butter and flour (should be like a béchamel sauce). Cut the cuttlefish, squid, and prawns into large pieces, sauté in a pan with the tomatoes for a few minutes; add the mollusks. For the lasagna: Cook the pasta in salted water. Butter 4 aluminum molds and line them with the pasta, add the seafood sauce and the cream sauce made with the mollusk water. Fold pasta over the filling to close. Bake at 350 for approximately 10 minutes. To Serve Pour the friggione into small bowls. Remove lasagna from molds and place on top. Garnish with a drizzle of extra-virgin olive oil. Serve warm.
