3 Warranty These conditions must be read in conjunction with the Moffat Limited s Terms of Sale and Delivery for Business Customers, section 9 Warranty. WARRANTY Moffat Limited warrants that the equipment, as supplied by Moffat Limited to the original purchasers, is free from defects in materials and workmanship. Should any part thereof become defective as a result of normal use within the period and limits defined below, then at the option of Moffat Limited such parts will be repaired or replaced by Moffat Limited or its Nominated Service Provider. The warranty time period shall be 24 months parts and labour warranty from the date of installation. This warranty is subject to the following conditions: Repairs under this warranty should be performed by a Moffat Nominated Service Provider. Moffat Limited will not be held responsible for charges incurred or service performed by Non-Moffat Nominated Service Providers unless prior approval to the repair has been given by Moffat Limited. Repairs pursuant to this warranty should be carried out between the hours of 8.00am and 5.00pm Monday to Friday. Out of hours call-out rates and charges may not be accepted without prior agreement. All installations must be carried out in accordance with local Installation Code and Local Authority requirements covering electricity, gas, fire, health. Installation and commissioning procedures are to be carried out in accordance with the instructions in the manuals supplied with all units. EXCLUSIONS The Equipment warranty specifically relates to component failure. Consumables, component adjustments and the resetting of safety devices are covered under warranty only for the first 30-days from date of installation except items listed in 1, 2, 3. The warranty does not extend to nor will Moffat Limited be liable for the following; 1. Installation issues i.e.) Adjusting and correcting installation issues, including; Adjustments associated with the commissioning of the machine or requirements specified in the products user manual, e.g./ checking operation of door switches, setting switches in correct position, checking drive chains, etc. Incorrect installation not carried out in accordance with the instructions in the manuals supplied with all units. 2. Connecting services i.e.) any connecting service that does not meet the equipment specification, including; Electrical supply cabling and/or mains connections made by other parties. Electrical connecting plugs made by others and/or wall socket outlets. Gas supply pipe work and or connections made by other parties. Gas flow or pressures issues. 3

4 Water supply (hot or cold) pipe work and or connections made by other parties. Water quality and/or water temperature outside equipment specification. Drains and or connections made by others and/or pipe work not specifically part of the equipment supplied. 3. Abuse associated with wilful and/or deliberate damage i.e.) any part of the unit which has been subject to; Misuse and/or wilful damage. Neglect. Incorrect operation. Accidental damage. Damage caused by movement or transportation by other parties. Freight damage (where freight is not paid for by Moffat) Use of abrasive or incorrectly specified cleaning chemicals. Water ingression and/or damage due to incorrect cleaning procedures. 4. Glass including the following; Door glass panels. Globes/bulbs and fuses when blown due to globes/bulbs failure Lens covers. Gauge glasses. 5. Seals i.e.) Rubber/silicon products - including; Door seals. O-rings. Light seals. Drive belts. Cabinet Sealants 6. Cleaning and maintenance including; Costs associated with cleaning the equipment so as to gain access to relevant fixtures and components. All lubricants and any cleaning materials used. Rusting and/or corrosion. Descaling. Blocked gas pilots and/or injectors. Blocked solenoid body s. Blocked drains, drain pipes and/or failure of components due to a blockage. Failure of the equipment s components where directly due to the lack of cleaning and/or maintenance. Costs associated with performing general equipment servicing. Tightening and/or adjusting tension of drive chain or v-belts. Tightening, adjusting tension and/or tracking of conveyor belts. 7. Missing items including; Lost components, fittings and/or attachments. 4

5 8. Resetting of tripped safety devices where equipment and where no other fault exists including; Tripped over temperature devices. Tripped overload devices. Tripped circuit breakers. 9. General exclusions including; Supply hoses and/or drainage lines not supplied by Moffat Limited. Fitting of any non-genuine Moffat Limited component will void warranty. Any modifications or alterations to equipment not approved by Moffat Limited. Addition labour costs associated with poor access. No-Fault found calls. Where operator error is established. 10. General exclusions for remote sites including; Travel charges outside 100km travel distance or 2 hours travel time, round trip from nearest service centre Additional costs incurred (without prior approval) for any; o Accommodation. o Ferry/barge charges. o Associated waiting time relating to attending remote sites. o Car hire. o Personnel allowances o Flights 5

Introduction 1.1 Important Symbols Before using your new oven, please read this instruction manual carefully, pay particular attention to any information labelled WARNING, CAUTION, IMPORTANT or NOTE in this manual. Warning Indicates a hazardous situation which, if not avoided, will result in death or serious injury. Caution Indicates a hazardous situation which, if not avoided, will result in minor or moderate injury. If you are unsure of any aspect of installation, instructions or performance of your oven, contact your TURBOFAN dealer promptly. In many cases a phone call could answer your question. 6

9 3. Instructions for Use 3.1 Operation Using Crew Mode 1. CONTROL OFF key to turn control on 2. CONTROL ON to show HELP (All screens) CREW to start using oven On/Off. controller. to turn oven light to cool down oven. to turn OFF 3. PRE-HEATING to show HELP to return to previous Heat On symbol will illuminate when oven is heating. Oven pre-heating will occur automatically 9

10 4. SELECT SHELF to select shelf to show HELP to return to previous 1, 2 or 3 shelves can be selected 5. SELECT PRODUCT scroll bar to scroll up/down recipes. Select product from list to cancel a product. Please Wait screen will display until oven is up to correct temperature for product selected. 10

11 6. LOAD TRAY (S) Load Tray (s) to selected shelf or shelves 7. PROGRAM START When door is closed after loading tray, the program starts automatically. When tray shelf is running, it is coloured RED. Part Oven Load Full Oven Load Recipe name and countdown time alternate in the shelf display. 8.DONE TIME UP Open oven door. Remove tray(s). 11

RETURN TO STEP Operation Manager Mode Settings Selecting Manager Mode NOTE: Recipes stored in the oven controller should be regularly backed up to a USB stick by using the Copy Recipes to USB key shown in Item 3 Manager Screen #1 below, so that should the controller fail, the recipes stored on USB can be up loaded into the new controller. 1. Installation Installation Requirements: Important **Installation shall comply with local electrical, health and safety requirements. **It is most important that this oven is installed correctly and that oven operation is correct before use. 4.1 Unpacking Remove all packing Check equipment and parts for damage. Report any damage immediately to the carrier and distributor Remove protective plastic coating from side panels Check that the following parts have been supplied with your oven: 6 Aluminium Baking Trays 1 Vent Deflector Report any deficiencies to distributor who supplied oven Oven feet should be pre-fitted to the oven base Check available power supply is correct to as shown on Rating Plate located on front lower corner of right hand side panel. Refer to Technical Data in Specifications section 4.2 Location Position the oven in its working position Use a spirit level to ensure oven is level from side to side and front to back. (If this is not carried out, uneven cooking could occur). The feet / legs used with bench or shelf mounting are adjustable and may require adjusting to level the oven The oven should be positioned so that operating panel and oven shelves can be easily reached for loading and unloading Fit supplied vent deflector into vent outlet as shown below Important: The vent located at top of oven must NOT be obstructed. 21 4.3 Clearances To ensure correct ventilation for motor and controls, the following minimum installation clearances are to be adhered to:- Top 100 mm / 4 Rear 25 mm / 1 Left-hand side 25 mm / 1 Right-hand side 25 mm / Electrical Connection The appliance is supplied with a fitted 3 pin plug, electrical cord. Check that plug is correct for electrical supply. Warning This oven must be earthed / grounded. If the supply cord is damaged, it must be replaced by a suitably qualified person in order to avoid a hazard. 4.5 Initial Start-Up Before using the new oven; 1. For first time use of oven, operate oven for about 1 hour at 190 C / 375 F to remove any fumes or odours which may be present. 2. Please refer to Operation Section of this manual for details on how to correctly operate and shutdown oven. 4.6 Technical Data Plate Location Technical Data Plate for E25T Convection Oven is located at bottom left corner of RH side panel. 21

23 6. Ordering Parts/Service Important: Only genuine authorized replacement parts should be used for servicing and repair of this oven. Instructions supplied with parts should be followed when replacing components. For further information and servicing instructions, contact your nearest authorized service provider or Turbofan Dealer. When ordering replacement parts, please quote part number and description as listed below. Cavity Probe Reading: Shows actual oven temperature. Light Output: Off/On to change output state and check light operation. Cavity Heat Output: Off/On to change output state and check heating element operation. Fan Forward: Off/On to change output state and check fan motor forward direction operation. Fan Reverse: Off/On to change output state and check fan motor reverse direction operation. 5. SERVICE SCREEN #3 to set oven temperature offset. (Oven offset is the value that used for calibrating oven chamber temperature.) screens to show HELP to exit SERVICE Set oven temperature offset value. Range 28 to 28 C. For E25T, the default temperature offset value is 0. to confirm. to cancel. 31

32 7. Cleaning & Maintenance Cleaning Guidelines Caution Always turn off electrical power at mains supply before commencing cleaning. This oven is not water proof. Do not use water jet spray to clean interior or exterior of appliance. Clean the oven regularly. A clean oven will perform better. Carbonised grease on oven will hinder transfer of heat from cooking surface to food. This will result in loss of cooking efficiency. NOTE: Carefully read and follow safety instructions on label of cleaning product to be used. DO NOT use water on oven while oven is still hot as warping and cracking may occur. Allow oven to cool down before cleaning. DO NOT use harsh abrasive scouring pads, abrasive detergents, strong solvents or caustic detergents as they could corrode or damage oven. Ensure that any detergent or cleaning material has been completely removed after each cleaning. To keep your oven clean and operating at peak efficiency, follow the procedures shown below:- o o o Oven Cool-Down Procedure This Mode can be used to cool down the oven after cooking operations have been completed and prior to cleaning, to ensure that the oven is at an acceptable temperature before commencing the cleaning operation. Refer to Using the Oven in the Operation Section for further details. 7.1 Daily Cleaning: Oven a. Thoroughly clean interior and exterior surfaces of oven with a damp cloth moistened in hot water and detergent solution and use a soft scrubbing brush if required. b. Any carbon deposits within oven should be removed using a wooden or plastic scraper tool and then wipe with a damp cloth to prevent accumulation of food deposits. c. Dry oven thoroughly with a dry cloth and polish with a soft dry cloth. Oven Trays a. Thoroughly clean oven trays with a damp cloth moistened in hot water and a detergent solution and use a soft scrubbing brush if required. DO NOT use harsh abrasive scouring pads, abrasive detergents, strong solvents or caustic detergents as they will damage oven trays. 32

33 7.2 Weekly Cleaning: NOTE: If oven usage is very high, we recommend weekly cleaning procedure is carried out more frequently. DO NOT use water on oven while oven is still hot as warping may occur. Let oven cool before cleaning. DO NOT use harsh abrasive scouring pads, abrasive detergents, strong solvents or caustic detergents as they will damage oven and oven seals. Ensure protective gloves are worn during cleaning. Exterior a. Clean with a good quality stainless steel cleaning compound. Harsh abrasive cleaners may damage the oven surface. Stainless Steel Surfaces a. Clean exterior surfaces of oven with a damp cloth moistened with a mild detergent solution, or a soft bristled brush. b. Baked on deposits or discolouration may require a good quality stainless steel cleaner. Always apply cleaner when appliance is cold and rub in direction of grain. c. Dry all components thoroughly with a dry cloth and polish with a soft dry cloth. 33
