2 You must have 6 of clearance on all sides of the machine The unit requires this spacing to prevent hot air from recirculating into the machine and causing poor freezer operation. Twice A Week - Minimum CREATED by CELCO INC 2

4 For cleaning and sanitizing your machine you will require: A Container or Bucket To Hold All Parts A Food Grade Bucket for Mixing A Whisk Disposable Gloves Brush Kit Lubricant (1 tube comes with the machine) Ice Cream Machine Sanitizer CREATED by CELCO INC 4

Drain Product From The Machine If the unit was in overnight/standby mode

Remove the lid from the hopper and take out the air tube. Set the air tube into the container for cleaning If the unit has product in it, press RESET then wash. If the machine was just in use and the cylinder product is frozen let the wash cycle run for a minute or two. With a bucket under the dispensing assembly, pull down the draw handles to dispense the product. If the product is to be kept, draw one handle at a time, pouring product into separate containers, and then place the product into a fridge. Once product slows down press RESET. 18 Remove the drip tray from the front of the machine. Wash, dry and place back onto the screws. NOTE: Leaving this to the end allows any dripping of product or water from cleaning the machine to be caught and not spill onto the floor. CREATED by CELCO INC 18

19 Wash all the parts in food safe soap and water, rinse well and dry all parts before assembling the machine. Remove and wash O-Rings and put back onto each part as you go. This helps prevent loss of O-Rings and mixing up the O-Rings CREATED Celco by CELCO Inc. INC 19

Reassemble Drive Shaft and Beater Assembly Put a small amount

22 Right Attach the beater shoes to the end of the beater. The beater shoes when properly placed do not overhang the edges and the indent wraps around the beater bars and are not sticking up at the end. Right Wrong Wrong CREATED by CELCO INC 22

23 Attach the scraper blade clips to the scrapers Attach the scraper blades to the beater and hold in place while inserting into the cylinder. Engage with the drive shaft at the back. CREATED by CELCO INC 23

24 Snap the star caps onto the base of the door assembly Lubricate the O-Rings on the prime plugs Place the prime plugs back into the door assembly CREATED by CELCO INC 24

Insert the draw valves from the top of the door assembly, making sure the H-Ring middle draw valve is in the middle position (in positions 2 and 4 of a 5 handle). 26 Right Wrong Attach 1st nut to the end of the retention pin. Starting at one end, thread the retention pin through the door assembly, inserting the handles (placed in screw side down) into the holes on the draw valves and threading the retention pin through each handle until all handles are installed. Screw the 2 nd nut onto the other end to secure the pin in place. CREATED by CELCO INC 26

Place over the beater guide ridged side down and press into place. Put another small amount of lubricant onto the flat side of the gasket and spread evenly around the gasket. CREATED by CELCO INC 27

28 Place the beater guides onto the beater rods Insert the beater rods into the cylinders and slide into place. Make sure the door assembly is sitting onto all 4 screws CREATED by CELCO INC 28

You are now ready to sanitize your machine prior to adding any product to the machine. Do not add product to the machine if it has not been sanitized first.
