Clean the sultanas and combine with the cherries and 2/3 tablespoons of the sifted flour. Soften the butter with the lemon rind, add the sugar gradually and beat mixture until soft and light. Whisk the eggs and add to the mixture a little at a time with a spoon of flour. Beat well after each addition. Fold in the remaining flour. Fold in the fruit. Turn into the prepared tin and bake in pre-set oven for 1 hour, then reduce the heat to 160 o C (150 in fan ovens)/mark 3. Continue cooking for approximately 1 hour and test with a skewer. Watch towards the end that the fruit on the top doesn t burn. Remove from the oven when any mixture clinging to the skewer is cooked - don't wait for the skewer to come out clean. 24 A HELPING HAND FOR ST. FRANCIS HOSPICE, RAHENY. Valuable links, with St. Francis Hospice and our society, have been established in recent years. Hospice collecting buckets have become a familiar sight at our Open Garden events. Your generous contributions go directly into hospice funds. Every little helps to assure the continuation of the many services on offer. In addition, and to emphasise our gardening links, a further annual contribution, from proceeds generated by the plant stalls at our shows, is used directly to purchase plants. Many pots of spring bulbs, followed by an array of summer bedding provide a bright and uplifting environment, so important for the wellbeing of both patients and the wonderful, caring staff. A sincere thank you to everyone who supports our efforts. Please continue to help us to help the hospice. 24 HSHS info@hshs.ie
