This unit can be run either wet (high moisture) or dry (low moisture). An indicator light will illuminate when operating in the dry mode. This manual provides the safety, installation, operating, and basic troubleshooting procedures for the CTD-24. We recommend that all information contained in this manual be read prior to installing and operating the unit. Your CTD-24 is manufactured from the finest materials available and is assembled to Roundup s strict quality standards. This unit has been tested at the factory to ensure dependable trouble-free operation. Warranty Information Please read the full text of the Limited Warranty in this manual. If the unit arrives damaged, contact the carrier immediately and file a damage claim with them. Save all packing materials when filing a claim. Freight damage claims are the responsibility of the purchaser and are not covered under warranty. The warranty does not extend to: Damages caused in shipment or damage as a result of improper use. Installation of electrical service. Normal maintenance as outlined in this manual. Malfunction resulting from improper maintenance. Damage caused by abuse or careless handling. Damage from moisture into electrical components Damage from tampering with, removal of, or changing any preset control or safety device. Important! Keep these instructions for future reference. If the unit changes ownership, be sure this manual accompanies the equipment. 2

In addition to the warnings and cautions in this manual, use the following guidelines for safe operation of the unit. Read all instructions before using equipment. For your safety, the equipment is furnished with a properly grounded cord connector. Do NOT attempt to defeat the grounded connector. Install or locate the equipment only for its intended use as described in this manual. Do NOT use corrosive chemicals in this equipment. Do NOT operate this equipment if it has a damaged cord or plug; if it is not working properly; or if it has been damaged or dropped. This equipment should be serviced by qualified personnel only. Contact the nearest Roundup Authorized Service Agency for adjustment or repair. Do NOT block or cover any openings on the unit. Do NOT immerse cord or plug in water. Keep cord away from heated surfaces. Do NOT allow cord to hang over edge of table or counter. The following warnings and cautions appear throughout this manual and should be carefully observed. Turn the unit off, disconnect the power source, and allow unit to cool down before performing any service or maintenance on the unit. Countertop Merchandiser (CTD-24) Important Safety Information The equipment should be grounded according to local electrical codes to prevent the possibility of electrical shock. It requires a grounded receptacle with separate electrical lines, protected by fuses or circuit breaker of the proper rating. All electrical connections must be in accordance with local electrical codes and any other applicable codes. Warning electrical shock hazard. Failure to follow these instructions could result in serious injury or death. - Electrical ground is required on this appliance. - Do NOT modify the power supply cord plug. If it does not fit the outlet, have a proper outlet installed by a qualified electrician. - Do NOT use an extension cord with this appliance. - Check with a qualified electrician if you are unsure if the appliance is properly grounded. This equipment is to be installed to comply with the basic plumbing code of the Building Officials and Code Administrators, Inc. (BOCA) and the Food Service Sanitation Manual of the Food and Drug Administration (FDA). Do NOT clean this appliance with a water jet. Important A.J. Installation Unpacking and Setup: 1. Remove all items from the shipping package. 2. Place the CTD-24 in a location visible to the customer, and accessible to the operator. 3. Unwrap the four 100 watt light bulbs and screw them into the upper light bar inside the unit. Do not over-tighten. Caution: Use only shatter resistant bulbs in this unit. 4. Unwrap the two glass door panels. The bottom of the door has the wide metal band and rollers. Install the first door by sliding the top into the inner channel above the door housing, and set the rollers down onto the inner roller glide so the groove in the metal band sits over the inner rail. Mirrored side should be toward the inside. Slide this door to one side. Repeat the above steps for the second door, using the outer channel, and set the rollers down on the outer roller glide rail. 5. Plug the cord into a standard 120V power outlet. caution All electrical connections must be in accordance with local electrical codes and any other applicable codes. caution Use only shatter-resistant bulbs in this unit. warning ELECTRICAL SHOCK HAZARD. Operating Instructions Refer to Figure 1 and follow these instructions to operate the unit correctly. 1. Add 1 gallon of water to the aluminum reservoir inside the doors, until the water level reaches the fill line (the indentation around the perimeter of the reservoir). 2. Turn the unit ON. The 4 light bulbs will illuminate and the water will start to heat. 3. Place stainless steel pans into the unit to prevent condensation on the glass. Operation Preparation Chicken wings must be thawed prior to cooking. Once thawed, chicken wings have a shelf life of five (5) days. Remove the chicken wings from the freezer 24 hours prior to anticipated use. Place the projected number of bags into the walk-in cooler. Frozen Thawed unopened package Thawed opened package SHELF LIFE Three months Five Days Two Days 4. Let the display heat for one hour before inserting chicken wings 5. Initial waterfill should last about 8 hours. The red indicator light will come on when the water reservoir becomes dry. Refill with 1 gallon (4 liters) of water or to the indentation line. The red light will go out momentarily. 6. Heated display is designed to maintain HOT products. Chicken wings must be immediately placed into the display case to maintain a safe temperature (145 F / 63 C). One case of chicken wings equals 10 lbs = 140 wings or 17.5 (8-pc) orders (approx.) 1. Spray a light coating of food release on the bottom of the clean and sanitized square wing pan. 2. Place 24 equal wings/drums in the pan. To ensure even cooking, lay the chicken pieces flat in the pan; DO NOT OVERLAP. 3. Place the pan into the pizza oven for eight (8) minutes at the normal cooking temperature. OPERATION (continued) 4. Using pan grippers and a support spatula remove the pan from the end of the oven. Make sure the wings exit the oven completely and are at 185. Use temperature probe. If wings are not completely thawed before cooking, they may require 1½ passes through the oven. Check temperature. 5. Pour the chicken wings into a clean and sanitized stainless steel bowl. Place wing pan under the landing table. Ladle the 1 oz. of Hot Sauce/BBQ Sauce per (8 piece order) over the chicken wings and mix the wings using a rubber spatula. (If oven roasted, then proceed to the next step). If 3 orders, then mix 3 oz. of sauce. 6. Chicken wing pans and stainless steel inserts must be cleaned and sanitized before each use. Using the tongs, place 24 wings (12 wings and 12 drums) into a stainless steel pan and place into the display unit. Wings should lay flat in pans and not overlap. This will allow wings to stay warmer. 7. Mark expiration time (1 hour) on side of the pan with a grease pencil. 8. Using the tongs place 8 chicken wings (4 wings, 4 drums) into designated packaging and cover. Place all backup stainless steel pans of Chicken Wings into the designated area of the heated cabinet. NOTE: Prepared Chicken Wings have a one hour shelf life from the oven to the customer. After shelf life has expired, discard and record on waste chart Display Case Setup involves setting up the Hot Sauce and the Barbecue Sauce. Hot Sauce 1. Measure eight (8) oz. Franks Hot Sauce and one (1) oz Little Caesars Crazy Bread Spread into a clean and sanitized 1/6 size plastic container and mix thoroughly with the one oz. ladle. 2. The hot sauce does not need to be refrigerated throughout the day; however the mixture must be placed in the walk-in overnight. At close the hot sauce mixture should be poured into a clean and sanitized plastic container. Cover with lid and place into walk-in or pizza retarder. 3. The hot sauce recipe can be increased to accommodate higher sales as long as you maintain the 8 to 1 ratio. A 1/6 size plastic container, with 24 oz of Hot Sauce and 3 oz of Crazy Bread Spread will yield approx. 27 orders of Chicken Wings. Barbecue Sauce 1. Pour the desired amount of Barbecue sauce into a clean and sanitized plastic container. 2. The BBQ sauce does not need to be refrigerated throughout the day; however the mixture must be placed in the walk-in overnight. At close the BBQ sauce mixture should be poured into a clean and sanitized plastic container. Cover with lid and place into walk-in or pizza retarder. 3. Maintenance Cleaning & Maintenance 1. Turn off the display case and let cool. Remove all stainless steel trays, discard chicken wings and record on waste chart. 2. To clean, drain any water that is in the reservoir by turning the drain valve below the door area. caution Water may be hot. Make sure to place a pan or bucket below the drain valve. Reminder: Close the drain valve. 3. The aluminum reservoir can be cleaned using soap and water, then rinsed and drained. Use of a nylon bristle brush works very well. Note: Do not use abrasives to clean your display case. Abrasive cleaners will scratch the case. 4. If there is a buildup of mineral deposits from the water, fill the reservoir to the fill line (about 1 gallon), and add 2 cups of white vinegar. Let this sit for a half hour, wash the side walls and base of the reservoir with a nylon bristle brush, drain and rinse the reservoir with fresh water. 5. The outside of the unit can be cleaned using standard glass cleaner and a soft cloth. Note: Do not use abrasives to clean your display case. Abrasive cleaners will scratch the case. 6. To clean the interior of the glass: a. From the front (customer side), lift the black upper cover up until it stops. It is hinged in the back of the unit. Note: Do not force the cover. b. Pull the front domed glass towards the front until it stops. This piece is hinged at the bottom front of the unit. Note: Do not force the cover, or let it drop free. You now have access to clean the interior glass. c. To remove the side glass, if required, pull it towards the front. These pieces are not fastened in place, and are removable without the use of tools. d. Remove the mirrored doors by carefully lifting and pulling them out of the track and cleaning with glass cleaner and a soft cloth For Service Call Toll Free 877-312-1706 Troubleshooting Problem Water dripping from unit. Condensation is fogging the display. Excessive clouding. Possible Solution Make sure water pan is not overfilled. Check to see that all wing pans are nestled properly. Gaps could cause clouding. LIMITED WARRANTY Equipment manufactured by Roundup Food Equipment Division of A.J. Antunes & Co.. has been constructed of the finest materials available and manufactured to high quality standards. These units are warranted to be free from mechanical and electrical defects for a period of one year from date of purchase or 18 months from shipment from factory, whichever occurs first, under normal use and service, and when installed in accordance with manufacturer s recommendations. To insure continued proper operation of the units, follow the maintenance procedure outlined in the Owner s Manual. 1. This warranty does not cover cost of installation, defects caused by improper storage or handling prior to placing of the Equipment. This warranty does not include overtime charges or work done by unauthorized service agencies or personnel. This warranty does not cover normal maintenance, calibration, or regular adjustments as specified in operating and maintenance instructions of this manual, and/or labor involved in moving adjacent objects to gain access to the Equipment. This warranty does not cover consumable items such as platen release sheet and conveyor belt wraps. This warranty does not pay travel, mileage, or any other charges for an authorized service agency to reach the equipment location. 2. Roundup reserves the right to make changes in design or add any improvements on any product. The right is always reserved to modify equipment because of factors beyond our control and government regulations. Changes to update equipment do not constitute a warranty charge. 3. If shipment is damaged in transit, the purchaser should make a claim directly upon the carrier. Careful inspection should be made of the shipment as soon as it arrives and visible damage should be noted upon the carrier s receipt. Damage should be reported to the carrier. This damage is not covered under this warranty. 4. Warranty charges do not include freight or foreign, excise, municipal or other sales or use taxes. All such freight and taxes are the responsibility of the purchaser. 5. this warranty is exclusive and is in lieu of all other warranties, expressed or implied, including any implied warranty or merchantability or fitness for a particular purpose, each of which is hereby expressly disclaimed. the remedies described above are exclusive and in no event shall roundup be liable for special consequential or incidental damages for the breach or delay in performance of this warranty.
