- COMPLAINT INSPECTION (559) 287-9637 PR0009405 July 31, 2018 INITIAL COMPLAINT INSPECTION CERTIFIED FOOD HANDLER: EP DATE: Troy Hommerding-REHS A complaint was recently received by our Department alleging violations of the California Retail Food Code at this facility. In response to the complaint, an inspection of the facility was conducted and our investigation findings are provided below. If violations are noted, then appropriate corrective action is required as listed in the main section of this report. Thank you for your cooperation. One reinspection will be conducted (if needed) at no charge. A service fee is assessed for each additional reinspection required. Inspection Findings and General Comments: Today's site visit was prompted by a complaint alleging an employee was observed using Raid insect spray around the salad bar area. The results of today's inspection are as follows. The operator did state they use Raid flying insect spray for flies. A can of Raid Flying insect spray was observed in the back area. The operator was asked not to use this type of insect spray as this insect spray is for house hold use only not for commercial kitchens. Today the facility did have some fly issues inside the customer and kitchen areas. Several UV fly light traps are currently in use with in the facility. An air curtain fly fan is being installed on the back service, the operator is waiting for the electrician to install the proper electrical outlet. Walk in refrigeration temperature was measured at the proper regulatory temperature 41 F. Date marking was observed on stored items in the refrigeration unit. All items were observed properly stored and covered. All freezer units were operating properly. Two cooked hamburger patties were checked for final cooking temperatures, both measured at 178 F. A this time the complaint is substantiated, please do not use house hold insecticide sprays in this commercial establishment. Further pest control must be conducted by a professional pest control company. IMPROPER MAINTENANCE OF FACILITY OR EQUIPMENT [HSC 114161-114182 & 114257] Mechanical dish washing unit is down for repairs, the operator stated this unit is waiting for a part. (559) 287-9637 PR0009405 June 08, 2018 ROUTINE INSPECTION EP DATE: Abel Simon - REHS IMPROPER COLD HOLDING TEMPERATURE(S) [HSC 113996] Observed a cold holding prep table to be holding at 44 F in the kitchen. This unit was lowered during the inspection. This unit held potato salad and cole slaw. Please be sure all cold holding units hold at or below 41 F. IMPROPER ECLUSION OF VERMIN OR ANIMALS [HSC 114259-114259.3] Observed numerous flies in the kitchen. There are air curtains observed in the facility as well as UV fly lights. Please consider obtaining more UV lights and contact a certified pest control if needed. IMPROPER MAINTENANCE OF FACILITY OR EQUIPMENT [HSC 114161-114182 & 114257] Observed there to be pooled water in the dish washing area. Employee stated this was because of the plumbing not fastened. Please be sure to have this repaired. There is a knob that allows for the release of the water in the steam table to drain. The placement of this knob is such that every time the bottom door of the prep table opens, it causes the knob to release resulting in a small water leak. It is suggested that there is something done so that this does not keep happening such as allowing space between the units or having the steam table indirectly drained into a floor sink. General Comments: The hand wash sink was noted to be fully stocked with hot water, soap, and paper towels. Except for the above noted unit, all other units were noted to be holding at or below 41 F. The temperature of the hot foods was noted to be above 135 F. There was a lot of smoke observed upon entering the kitchen even though the hoods were noted to be on. (559) 287-9637 PR0009405 December 13, 2017 ROUTINE INSPECTION EP DATE: Vikram Manke IMPROPER HOT HOLDING TEMPERATURE(S) [HSC 113996] Ribs were measured between the temperature of 112 F and 120 F. This food item was voluntarily discarded by the operator. Please monitor the temperature of food items IMPROPER MAINTENANCE OF HANDWASH FACILITIES [HSC 113953-113593.2] One hand wash station in the kitchen was not functional. Handles of both the hot and cold water were missing. Please repair this hand wash station. All other hand wash stations were observed to be adequate. IMPROPER FOOD HANDLING PRACTICES [HSC 113961-113973] General Comments: In the walk-in refrigerator, raw meats were observed to be stored above cooked meat items. Please discontinue this practice. Hand wash stations had soap, paper towels, and warm water supply. All cold holding units were measured below the maximum allowed temp of 41 F. Hot food items with the exception above were measured above a temp. 135 F. Facility was observed in clean condition. Employees were observed washing hands and wearing gloves while handling food items. Please correct the above noted violations. (559) 287-9637 PR0009405 June 06, 2017 2ND+ FOLLOWUP INSPECTION EP DATE: Lupe Tapia None Noted General Comments: Conducting a third follow-up inspection at this facility and noted the following: -Facility is in compliance with the Health & Safety Code. Violations noted during the previous follow-up inspection (May 11, 2017) have been corrected, new violations were not observed. -Facility has incorporated methods that have eliminated the cockroach infestation noted during previous inspections. Facility contracted with Terminix to service the facility twice a month and new cleaning procedures have been implemented. -Continue doing a great job in maintaining facility clean/sanitize and free of vermin.
