INSTALLATION INSTRUCTIONS CONFORMITY TO REGULATIONS AND LAWS The appliance is to be installed by an authorised person in accordance with AS5601 - the installer must ensure the installation complies with all regulatory and manufacturer requirements and operationally and functionally test, make necessary adjustments and commission the appliance as part of installation. WARNING The manufacture declines any responsibility if these obligations are not respected. INSTALLATION The overall dimensions, position/dimensions of connections and technical data are given in the installation diagram. If the appliance cannot be adjusted to perform correctly call the tecnichal assistant service. Positioning Install the appliance in a suitably ventilated environment. Position the appliance at least 15 cm from surrounding walls. This distance may be reduced if the walls are flameproof or protected by insulating material. This appliance is not designed for built-in installation. Remove the protective film from the external panels. Use a suitable solvent to remove any glue residue. Appliances 80 cm wide (ANBR98G..) must be fixed to the floor using the flanged feet. Level the appliance by means of the adjustable feet. Joining appliances togheter in line (Fig. 1) Insert the coupling plate ( supplied ) into the side housings on the backs. Join together the appliances screwing M5 flathead screws ( supplied ) in to coupling plate ( Fig. 1D ). Join together the appliances, at the front side, screwing the M5x40 screw ( supplied ) on the opposite insert (Fig. 1F ). Connecting to the gas supply Install a shut-off valve upstream of the appliance, in a place easily accessible. Check if the appliance is adjusted for the type of gas with which it will be supplied. If not, convert it according to the instructions in the paragraph "Conversion to different type of gas". Do not use supply pipe having a diameter smaller than the appliance s gas connection. Check that there are no leaks at the connection points. An external pressure regulator (Maxitrol RV48LM) must be installed at the gas inlet connection of the appliance. Connecting to the electrical power supply The appliance is set to operate at the voltage indicated on the data plate.total power is given in table T6 in Technical Data section. The appliance must be supplied with a separate electrical line using a flexible rubber cable with insulating properties not inferior to H07RN-F. The length of the cable between the cable clamp and the connection terminal blocks must be such that the live conductors tighten before the yellow/green earth wire, in case the cable come out of the cable clamp. Install suitable automatic cut-off switches (contact opening of at least 3 mm) and highly sensitive automatic differential protection devices. These must guarantee protection against direct or indirect contact with live parts and against currents towards earth in the event of malfunction (maximum dispersion current 1 ma/kw). To access terminal board remove the front panel. Connect the power supply cable to the terminal board as shown in the wiring diagram supplied whit the appliance. Earth and equipotential connection The appliance must be earth connected on the terminal block marked by the symbol located beside the input line terminal block. The metal structure of all the appliances installed must be connected together on the terminal marked by the symbol located close to the earth terminal (equipotential system). CONVERSION TO DIFFERENT TYPE OF To convert the appliance to a different gas supply, follow the instructions below. Use the injectors contained in the bag supplied with the appliance. Replacement of burner injector and adjustment of burner air flow (Fig. 2) Unscrew the existing injector "U" and replace with the one indicated in Table T1 in Technical Data section. Position the air regulator at the distance A indicated in Table T2 in Technical Data section. Retighten screw V and seal it with red paint. Replacement of pilot burner injector (Fig. 2) Unscrew fitting R and replace injector UP with the one indicated in Table T1 in Technical Data section. Retighten fitting R. Adjustment of the electric gas valve outlet pressure (Fig.3) The outlet pressure Regulator is factory commissioned (fully in) and sealed with red paint. No adjustment are required in case of conversion to a different type of gas. COMMISSIONING PROCEDURE Testing the gas system Switch on the appliance following the instructions for use and test burners ignition and flame uniformity. Also check the appliance for gas leaks and make sure the gas exhaust system functions correctly. Check the working thermostat operation at various cooking temperatures. Check the pan lifting microswitch operation. If necessary, consult the Troubleshooting guide below. Testing the gas nominal thermal power After installation, conversion to a different type of gas or servicing, check the nominal thermal power of the appliance. The appliance functions at the nominal thermal power when is fitted with the appropriate injectors for the gas used, the electric gas valve is commissioned according to manufacturer requirements (see paragraph "Adjustment of the electric gas valve outlet pressure) and the gas pressure measured at the inlet of combination contol is commissioned to the appropriate nominal value as specified in Table T5 in Technical Data section. Setting the manifold gas pressure (Fig. 3 ) Remove sealed bolt PP from the test point pressure IN and connect the pressure gauge pipe. Switch on the appliance following the instructions for use and commission the test point pressure value to the ( CR0687770) 6
appropriate nominal value as specified in Table T5 in Technical Data section. TROUBLESHOOTING GUIDE The pilot burner is difficult or impossible to ignite Gas supply pressure low. Gas pipe or injector clogged. Gas valve faulty. Piezo igniter faulty. Ignition electrode (ignition spark gas should be 3 + 1/0 mm) or cable faulty. The pilot burner goes out during use Thermocouple faulty, insufficiently heated or incorrectly connected to gas valve. Gas valve faulty. The main burner is difficult or impossible to ignite Gas supply pressure low. Injectors clogged. Gas valve faulty. Working thermostat faulty. Pan lifting microswitch faulty. The temperature of pan is difficult or impossible to regulate Gas valve faulty. Working thermostat faulty. The pan tilting device is difficult to operate Nut screws worn. Poorly lubricated moving parts (nut screws, screw, pins and linkages etc.). REPLACEMENT OF SPARE PARTS Before every intervention close the gas shut-off valve upstream the appliance and disconnect the electrical supply. Never tamper with any of the sealed components. After every intervention, check for gas leaks, if necessary. Burners, Thermocouple, Ignition electrode, Piezo igniter. Remove the front panel and replace the component. Gas valve Disconnect the pipes and thermocouple. Disconnect the electrical connections. Replace the component. Working thermostat Remove the front panels. Remove thermostat bulb from it seat underneath the pan. Disconnect the electrical connections. Replace the component. Pan lifting microswitch Disconnect the electrical connections. Replace the component. Screw nut and manual system pan movement Lift the pan completely, blocking it firmly in that position (e.g. with a bar). Disconnect the screw from the handwheel shaft. Replace the component. USE AND MAINTENANCE INSTRUCTIONS WARNINGS Do not store flammable materials in or near the appliance. Do not spray aerosols in the vicinity of this appliance while it is in operation. Beware of the appliance s hot surfaces! This appliance is designed for professional use and must only be used by trained personnel. It is exclusively designed to cook food. Any other use is considered improper. ATTENTION: Do NOT use this appliance to heating oil ( as a fryer ). Risk of fire If the appliance breaks down, close the gas shut-off valve upstream of the appliance and call the technical assistance service. Repairs should only be carried out by authorised service centres. For service and spares parts, please contact Comcater 1800 810 161. Before using the appliance, thoroughly clean all surfaces that may come into contact with food. Safety device A pan lifting micro-switch cuts off the pan burner when the pan is raised and relights the pan burner when the pan returns to cooking position. Micro-switches that automatically interrupt pan movement on completion of pan raising and lowering operations (only for motor tilting). A manually-reset safety thermostat, automatically cuts off the gas supply to the burners when the pan bottom temperature exceeds the maximum working temperature permitted (working thermostat faulty). To restore operation, remove the upper front panel and press the thermostat reset button. If the appliance does not heat, disconnect the gas power to the appliance and call the technical assistance service. USE Lifting/emptying and lowering pan Pan tilting selector has the following positions: Lifting operation Lowering operation Hand-tilting: Turn the handwheel clockwise to lift and empty the pan and anti-clockwise to return the pan to the cooking position. Motor-tilting: Turn and hold the selector in the lifting operation to lift and empty the pan and in the lowering position to return the pan to the cooking position. Before lifting/emptying the pan position a suitable container in correspondence with the outlet of the pan. Filling the pan Lower the pan to cooking position. Lift the pan lid. Press and hold the button A. Do not exceed the maximum water level marked on the pan. ( CR0687770) 7
Pan lifting micro-switch Use of the bratt pan The working thermostat control knob has the following positions: 0 Pan heating off 100 C Minimum cooking temperature 285 C Maximum cooking temperature The gas valve control knob has the following positions : Off Pilot ignition Pan burner on Turning on the pilot burner Press the knob in and turn to the position Pilot ignition. Press the knob fully in to light the pilot flame. Hold the knob pressed in for approx. 20 seconds, then release it. If the pilot flame goes out, repeat the operation. Make sure the pilot burner is lit by checking the flame through the inspection hole in front panel. Turning on the pan burner Press and turn the gas valve knob in to position Pan burner on. Turn the working thermostat knob to the desired cooking temperature. Approximately 10 minutes are required to reach a temperature of 285 C at the base of the pan. Turning off the burners To switch off the pan burner, turn the working thermostat knob to position 0 and turn gas valve knob to position Pilot ignition. To switch off the pilot burner press the gas valve knob in and turn to position Off. CARE AND MAINTENANCE Do not wash the appliance with jets of water. Before cleaning the appliance, disconnect from the electric power supply (if connected). Make sure the water circuit is free of ferrous particles. Any such particles deposited in the bottom of the pan may cause it to rust. Clean stainless steel surfaces daily using water and nonabrasive detergents. Rinse thoroughly and dry. Do not use steel wool pads or chlorine-based products. Do not use corrosive substances to clean the floor underneath the appliance. Periodically lubricate the pan tilting system (linkages, nut screws and screw etc.). If the appliance is to remain idle for a long period, close the gas shut-off valve upstream of the appliance and clean thoroughly. The appliance should be inspected and the gas exhaust pipe cleaned by an authorised service engineer at least twice a year. For this purpose we recommend taking out a service contract.
