INSTALLATION INSTRUCTIONS Inspection of Shipment After unpacking, check thoroughly for any damage which may have occurred in transit. Claims should be filed immediately with the transportation company. The warranty does not cover damage that occurs in transit, or damage caused by abuse, or consequential damage due to the operation of this machine, since it is beyond our control (reference warranty in back of manual). Model Description Model Series 2396 is a pedestal style topping dispenser with an LED lighted sign. Model includes an open rack assembly which will accept 2 boxes of topping. The pedestal(s) mounts to a counter top; the open rack is installed under the counter in an enclosed area for the heater to maintain product temperature (countertop and cabinet to be provided by customer). The forced air heating system controls the temperature of the cabinet to 120-130 F. The foil heater in the pedestal assures dispense temperature of 110-130 F. This series has no heated line capability. See below for individual model descriptions. 2396-00-100: Single Pedestal Topping Dispenser, with one open rack assembly. 2396-00-101: Single Pedestal Topping Dispenser, with one open rack assembly; unit features an ADA Remote Switch. 2396-00-110: Double Pedestal Topping Dispenser, with one open rack assembly which feeds both pedestals. 2396-00-111: Double Pedestal Topping Dispenser, with one open rack assembly which feeds both pedestals; unit features two ADA Remote Switches. 2396-00-140: Double Pedestal Topping Dispenser, with one open rack assembly which feeds both pedestals (has 5 ft. long tubing to pedestal). Setup This unit has been tested at the factory. 1. Remove all packaging and tape prior to installation. 2. The pedestal and rack assembly must be installed in a sturdy, level cabinet (provided by the customer). Follow all instructions in the Electrical Requirement and Unit Installation sections of this manual to complete installation of this unit. 3. After setup, the unit should be cleaned prior to use (see Care and Cleaning section of this manual). Electrical Requirements The following power supply must be provided: 2396-00-100, 2396-00-101: 120 V~, 324 W, 60 Hz 2396-00-110, 2396-00-111, 2396-00-140: 120 V~, 390 W, 60 Hz DANGER Machine must be properly grounded to prevent electrical shock to personnel. We recommend this equipment be on a dedicated and protected circuit. Failure to wire properly will void the warranty and may result in damage to the machine. It is Gold Medal Products Co. s recommendation that this machine be plugged directly into a wall outlet. The use of extension cords is not recommended due to safety concerns, and may cause sacrificed and/or reduced performance. Make sure cord is located to prevent a trip hazard or unit upset. Before You Plug In Machine 1. Make sure all machine switches are OFF before plugging equipment into receptacle. 2. Make sure wall outlet can accept the grounded plugs (where applicable) on the power supply cord. 3. The wall outlet must have the proper polarity. If in doubt, have a competent electrician inspect the outlet and correct if necessary. 4. DO NOT use a grounded to un-grounded receptacle adapter (where applicable). 5. Install unit in a level position. CAUTION If the supply cord is damaged, it must be replaced by Gold Medal Products Co., its service agent or similarly qualified persons in order to avoid a hazard. 039_080614 Page 6

Unit Installation Follow the instructions below to install the Topping Dispenser. 1. The bottom portion of the Topping Dispenser (the rack assembly) needs to be placed in an area under the counter that can be enclosed on all sides in order for the heater to properly maintain product temperature (cabinet to be provided by customer). Limit the width of the cabinet to 3 feet, to ensure adequate cabinet temperature. Access will be required to the front of this area allowing sufficient clearance to clean and maintain the pump, and to add or remove boxes of topping. 2. The countertop will require preparation by drilling the mounting holes for the pedestal, and by cutting the rectangular holes for the power cable and oil tube, drip pan, and remote switch (if equipped). See Countertop Cutout Dimensions on next page for reference. If your counter is thicker than the provided mounting studs attached to the pedestal, then counter bore the underside of the countertop to allow for the washers and wing nuts. 3. Set the pedestal onto the countertop and secure it in place with the wing nuts and washers provided. 4. Set the rack assembly into the opening under the counter. 5. Attach the heated discharge oil-line tubing from the base to the aluminum tube on the pedestal with the hose clamp provided (dual pedestal units will have 2 lines). 6. Plug the power cord from the pedestal(s) into the 6-prong receptacle on the side of the control box (located on top of the rack assembly). 7. Plug the power cord from the rack assembly into a proper outlet (see Electrical Requirements section). 8. If model is a dual pedestal unit, turn the power on and test the connections. Press the dispense button and check to see that the correct pump is running to feed product to the correct pedestal. If not, turn the power off and switch the six-prong plugs to the opposite receptacles. 9. The unit is now ready to load boxes of topping, see Topping Installation section. Page 7

Topping Installation Use maximum of (2) 35 pound boxes of topping for this unit. IMPORTANT: DO NOT attempt to operate this system with a bag which has been removed from the box. This product is not intended for use with volatile food products (i.e. real butter). 1. Load two boxes of pre-heated topping onto the rack. Gold Medal s Backroom Warmer (Item No. 2262) may be purchased for pre-heating the topping. Mount the box in the rack so the topping bag nozzle is located towards the bottom of the box to permit a free flow of the topping from the bag. 2. Remove the cardboard cutout on the box to expose the bag nozzle, and then remove the cap from the bag nozzle. 3. Attach the Universal Bag Connector (from the rack assembly) to the bag nozzle as shown below. Once oil is connected, the unit is ready for use. OPERATING INSTRUCTIONS Controls and Their Functions HEAT SWITCH Three position rocker switch. Center position is OFF. Up position is HEAT ONLY. This activates the display light, the heater/blower that will maintain cabinet temperature, and activates the foil heater in the pedestal. Down position is PUMP & HEAT. This activates the display light, the heater/blower, the foil heater in the pedestal, and provides power to the pump(s). PUSH BUTTON PUMP SWITCH There are two Push Button (PB) Pump Switches on a pedestal. One is located on the top of the pedestal and the other is at the base of the pedestal. Press and hold button to dispense butter flavored topping. Release button to stop dispensing topping. ADA REMOTE - PUSH BUTTON PUMP SWITCH (for Model 2396-00-101 and 111 Only) Press and hold the Remote PB Pump Switch to dispense butter flavored topping. Release button to stop dispensing topping. (Dual Pedestal Models have an ADA Remote Switch for each pedestal.) RED PILOT LIGHT Pilot Light located on the control box of the rack assembly. When lit, the red light signals the pump is active. (Dual Pedestal Models have a Pilot Light for each pedestal.) 1 AMP FUSE The 1 AMP Fuse protects the oil dispense unit from an overload condition. (Dual Pedestal Models have a fuse for each pump.) Operating the Topping Dispenser 1. To Pump and Heat Topping - Turn the Heat Switch (located on control box) to the PUMP & HEAT position to activate the display light, the heater/blower (to maintain cabinet temperature), the foil heater in the pedestal, and provide power to the pump(s). 2. To dispense topping - Press and hold either of the Red PB Pump Switches located on the pedestal (or remote, if equipped). If this is the first time the unit has been used, it may take a few seconds to completely fill the tube and dispense topping. 3. To use Heat Only -Turn the Heat Switch (located on control box) to the HEAT ONLY position to activate the display light, the heater/blower (to maintain cabinet temperature), and the foil heater in the pedestal. On the HEAT ONLY setting the pump is de-activated. Page 11

Care and Cleaning DANGER Machine must be properly grounded to prevent electrical shock to personnel. DO NOT immerse in water. DO NOT clean appliance with a water jet. Always unplug the equipment before cleaning or servicing. 025_111616 WARNING To avoid burns, DO NOT touch heated surfaces. DO NOT place or leave objects in contact with heated surfaces. 009_092414 Good sanitation practice demands that all food preparation equipment be cleaned regularly (only use non-toxic, food grade cleaners). A clean looking, well-kept machine is one of the best ways of advertising your product. Follow the directions below to clean and sanitize the unit each day after use. 1. Turn machine OFF, unplug the unit and allow it to cool before attempting to clean. 2. The exterior surfaces can be cleaned by wiping oil spills with a clean dry towel, then wipe with another clean towel dampened with mild soap and warm water. 3. Wipe the stainless steel parts with a clean cloth and cleaner designed for stainless steel, such as Gold Medal Watchdog Stainless Cleaner (Item No. 2088). DO NOT use oven cleaners or abrasive materials as they will damage parts of machine. 4. Where applicable, drip pan/drip pan insert may be taken to the sink to clean with mild soap and warm water. Allow to dry, then reassembly. 5. Clean plastic panels with glass cleaner. Gold Medal Watchdog Glass Cleaner (Item No. 2588) is recommended. Ammonia cleaners will damage plastic panels. Use only non-ammonia cleaners, such as Gold Medal Watchdog Glass Cleaner (Item No. 2588). Sanitizing the Tubing and Pump Items Needed: (2) Empty Pails (1) Cleaning Bracket (Item No. 12594) Gold Medal Chlor-Tech Sanitizer (Item No. 1109) Measure Cup (for priming unit) 1. Make sure Topping Dispenser has cooled completely before attempting to clean. 2. Fill a clean, empty pail half-full with hot water and Gold Medal Chlor-Tech Sanitizer (reference instructions on sanitizer container for appropriate amount). Page 12

3. Disconnect Universal Bag Connector from topping bag, and connect it to cleaning bracket as shown below. Make sure the quick disconnect is engaged. Step 1: Step 2: Step 3: Plunger OUT in open position. Cleaning Bracket Slide Connector onto Bracket Push Plunger IN to lock onto bracket. Plunger ENGAGED on pin. 4. Place hose with cleaning bracket into pail of sanitizing solution. 5. Place an empty pail under dispensing spout to receive cleaning solution pumped through unit. 6. Use the Red PB Pump Switch (located on the pedestal, or remote, if equipped) to dispense solution until tubes are clean and free of topping. 7. When pumping is complete, discard dirty solution, clean the pail, and refill with clean hot water. 8. Remove hose with bracket from solution pail and place it in the hot water. 9. Place the empty pail under spout. 10. Use PB Switch to dispense hot water until tubes are clean and free of sanitizer. 11. When cleansing is complete, remove pail from dispenser. 12. Remove hose with bracket from hot water, disconnect bracket, and wipe hose and bag connector dry. 13. Reconnect dispenser to bag of topping. 14. Purge and prime the system hold a measuring cup (or medium sized container) under dispenser spout; press the PB Switch to dispense topping until all water has been expelled and tubes are primed with topping. After cleaning, always discard the topping dispensed in priming. 15. Sanitize cleaning items for next use. Page 13

WARRANTY WARRANTY + Gold Medal Products Co. warrants to the original purchaser each item of its manufacture to be free of defects in workmanship and material under normal use and service. Gold Medal Products Co. s obligation under this warranty is limited solely to repairing or replacing parts, f.o.b. Cincinnati, Ohio, which in its judgment are defective in workmanship or material and which are returned, freight prepaid, to its Cincinnati, Ohio factory or other designated point. Except for Perishable Parts on specific machines, the above warranty applies for a period of two (2) years from the date of original sale to the original purchaser of equipment when recommended operating instructions and maintenance procedures have been followed. These are packed with the machine. Parts warranty is two (2) years, labor is six (6) months. THIS WARRANTY IS IN LIEU OF ALL OTHER WARRANTIES EXPRESSED OR IMPLIED, AND OF ALL OTHER OBLIGATIONS OR LIABILITIES ON OUR PART, INCLUDING THE IMPLIED WARRANTY OF MERCHANTABILITY. THERE ARE NO WARRANTIES WHICH EXTEND BEYOND THE DESCRIPTION ON THE FACE HEREOF. In no event shall Gold Medal Products Co. be liable for special, incidental or consequential damages.
