Page 14 2. INSTALLATION: GENERAL FEATURES TYPE AND POSITION OF CONNECTIONS See "Technical Data" at the beginning of this instruction manual. 2.1 GENERAL REQUIREMENTS The installation, modification or repair of the appliance must be carried out according to current regulations by a specialised engineer. The appliance is of Type A (not connected to an outlet for products of combustion). These appliances must be installed with sufficient ventilation to prevent the formation of excessive concentrations of harmful substances within the premises in which they are installed. The required flowrate for fresh air for combustion is 2 m 3 /h per kw of calorific output. These units must only be placed centrally or against a wall. The latter must be of non-combustible materials or, if not, must be covered with an appropriate, good insulating and non-combustible material. The manufacturer certifies that the packing conforms to directive 94/62/CE of 20.12.94 and requests that the final recipient respects the directive with regard to recycling or reuse of the packaging materials. 2.2 HANDLING The appliance should only be handled with specialised lifting equipment. Should the appliance need to be transported, it must be done on its original pallet and must not be stacked under any circumstance. If the appliance is to be moved without a pallet, it should be carried and not dragged. 2.3 UNPACKING Before installation, remove the strapping from the appliance. The individual parts are not bolted down. Remove plastic film from the stainless steel parts before heating. CIDELCEM GRANDE CUISINE

Page 15 2.4 ACCESS TO COMPONENTS BEHING THE FRONT FACIA 2.4.1. CONTROL FACIA - Undo the screws holding the gas control and water knobs. - Remove the knob(s). - Undo the screws under the facia. - Lift the facia upward and pull it forwards. - It is possible to hook the facia on the unit in the open position. To re-assemble, reverse the above operations. Remark: In the case of an electric boiling pan, it is not necessary to remove the control buttons to remove the facia. CIDELCEM GRANDE CUISINE

Page 16 2.4.2. LOWER FACIA - Undo the screws under the lower facia. - Pull the facia downwards, then outwards. To re-assemble, reverse the above operations. CIDELCEM GRANDE CUISINE

Page 20 Assembly of units on a plinth - Lay out the gas manifold(s) in the hollow section of the plinth (marking out the connection points on the suite). - Locate and centre the stainless steel frame on the plinth and fasten with anchor bolts. The stainless steel frame comprises sub-assemblies of lengths 500, 750, 1000, 1250 and 1500 enabling frames to be made to requisite lengths. Sheet steel templates are delivered with the stainless steel frames, enabling sub-assemblies to be positioned and fastened together quickly and accurately. Page 23 4.2 GAS CONNECTION Make sure the appliance setting correspond on the type and pressure of the gas on site.(see section 1 :Identification plate). Connect the appliance to the gas supply pipe interposing a stop cock to provide local isolation from the rest of the installation. The gas supply pipe will be sized so as to minimize losses of load: its diameter is determined according to its distance (length, number of bends...) and total power of the appliance(s). To verify the supply pressure to the appliance, simply connect a water guage to the gas control module or the test elbow detailed below.. The gas pressure recorded must be the same as the one indicated on the identification plate for the gas in use (See section 1: Identification plate). NOTE: bends with integral pressure test point. An accessory is available to allow the pressure to be checked at the point of connection. bend 15/21 (1/2"): Code 130528 TAKING THE PRESSURE: Loosen screw (without removing it) Connect the water guage Test with the burners in operation. These bends are to be directly connected to the gas inlet point: Gas inlet Gas connections must comply with the current applicable standards (DTU 61.1) and must be undertaken by a qualified engineer. Gas connections are made to a 1/2" male gas fitting (see above). CIDELCEM GRANDE CUISINE
