Line #: 1a, 1b, 1c (CCSD # 2) PASS-THRU HEATED CABINET (NARROW): VICTORY HS-1D-1-PT, ONLY A. Provide one-section pass-thru heated cabinet. Net storage capacity to be minimum 23.7 cubic feet. Provide with 6 inch stainless steel adjustable legs as specified on the purchase order. B. Cabinet exterior sides, front and shroud shall be 20 to 22-gauge corrosion resistant stainless steel. Upper shroud shall be hinged, with stay-open feature to provide easy access to refrigeration system. Cabinet interior shall be 22-gauge, corrosion resistant stainless steel. Bottom and top surfaces are die-stamped to provide radius corners and recessed floor. C. Full-height solid doors field reversible. Door exterior shall be 22-gauge, corrosion resistant stainless steel. Interior liner shall be stainless steel, formed to protrude beyond the door gasket to protect the gasket from tearing. Each door has two edge mount, self-closing, cam lift style hinges. Doors can be removed from cabinet without the use of tools. Metal door handle is recessed into the door for easy grip without impacting aisle space or ergonomically correct vertical door handles to be guaranteed for the life of the cabinet. Provide keyed door lock. Lock engages into a heavy-duty strike mounted to the cabinet face. Door gaskets are magnetic and mount to the door snapping in place and are removable without tools. D. Cabinet and base shall be fully insulated with high-density foamed in place polyurethane. E. Interior light mounted to the interior ceiling is controlled automatically through a switch mounted in the hinge assembly to protect against breakage or proximity switches shall energize the recessed interior incandescent lighting when the door is opened. Door openings are protected with heavy gauge stainless steel breaker strips or top door mullion. An air duct is mounted to the ceiling assuring low velocity, even air movement throughout the cabinet interior. F. Cabinet is designed to maintain temperatures between 80 F and 180 F. Heating elements are helical shaped, with tubular fins. High-speed blower provides uniform airflow in the cabinet. Entire heating system is mounted to the exterior of the cabinet ceiling, outside the food zone. It is assembled as one piece and can be removed as one piece. Temperature is controlled by an adjustable electromechanical electronic thermostat. System on/off switch is located on the front exterior of the cabinet. Unit to be provided with digital thermometer mounted to the kitchen side of the cabinet. G. Electrical connections shall be 208-240 volt, 60Hz, single phase. 10 foot cord and plug set is supplied and field installed on site and included in the price quoted. H. Evaporator condensate is eliminated using an energy efficient hot gas system. Unit to be provided with digital thermometer mounted to the kitchen side of the cabinet. G. Electrical connections shall be 115V, 60Hz, single phase. 10 foot cord and plug set is supplied, attached to a junction box mounted on the exterior top of the cabinet. H. Exterior top, front and sides shall be constructed of 18-gauge stainless steel. Opening shall have an air curtain design with cool air forced over the opening to retain the cold air in the interior of the unit. Opening shall have two hinged lids to cover the top and the front. Interior liner shall be 18 to 22-guage stainless steel (2BF finish). Cabinet shall be fully insulated with 2 high-density foamed in place polyurethane. C. Cabinet shall maintain 34 o F to 40 o F interior cabinet temperature at 100 o F ambient room temperature with lids open. Properly chilled food product shall consistently maintain 34 o F to 40 o F with lid open. D. Refrigeration system shall be controlled by a timer and a thermostat providing accurate holding temperatures and automatic defrost control. E. Unit shall hold sixteen milk crates. Pre-wired at factory and ready for final connection to a 115/60/1 phase-15 amps dedicated outlet. Compressor shall be 1/3 HP with condenser coil, two evaporator blower coils and condensate evaporator. Provide thumb screws in compressor cover plate. F. One (1) 8 foot cord and plug set to be included. G. Unit shall be mounted on 6 diameter casters with locks. H. Provide lid locks with all units to be keyed alike. I. Installation must include startup-calibration and test. E. Provide with quick disconnect gas hose. F. Provide two (2) year parts and labor warranty. 7

Item # 8a, 8b, 8c (CCSD #16) CVAP HOLDING/PROOFING CABINET: WINSTON HL4522-SS-W-HR-5, ONLY A. Cabinet to have 20-gauge polished stainless steel exterior and 18 gauge stainless steel interior. Insulation shall be 1-½ fiberglass full perimeter of cabinet as well as door. Provide with half doors with magnetic latches and heavy-duty hinges. Provide viewing window in each half door. Doors to have high temperature silicone door gaskets full perimeter. Doors are field reversible. B. Cabinet shall be equipped with electronic solid state differential type controls to provide precise food temperatures from 90 F to 180 F and maintain food texture with settings labeled moist, soft moist, firm moist, and crisp. Cabinet shall utilize controlled vapor technology as a method and apparatus for holding hot foods, consisting of an air heater and water heater to establish ideal water vapor content that is in relation with the moistness characteristics for the food. Cabinet shall have digital temperature read-out to display the existing evaporator temperature at all times while the unit is turned on.
