Opening of Building & Handling Money The concession stand will be opened and closed by a staff member or the booster concession manager. By the time you are asked to arrive, the stand should be opened. If it is not, call 301-325-3738. The Athletic Director will bring down 1 (for a smaller game) and 2 (for a big game) cash pouches. Each pouch will have $100 in change (for a big game the main cash pouch may start with $200). At the end of the night, leave the amount of cash you started with in the red bags AS MANY $1 S AS POSSIBLE and put all other cash in blue bag and give all red and blue money pouches to Stu or Scott Rivinius or Booster concession manager with a signed note of amount of cash included in each pouch your name and date. Set Up If counters are dusty or dirty wipe down with antiseptic wipes, dry. Roll out blue/green tablecloth rolls to cover center tables. Fill three large metal urns with water and pug in. Two urns are for hot chocolate- make according to instructions on the can, one is for hot water only for tea, instant coffee and cup of noodles. (Probably just one is needed for warm weather). Unlock small drink refrigerators. The key is in the freezer in the back room. Soda and Gatorade is stored in the back refrigerators. Fill front refrigerators as needed. Candy &Chocolates are kept in one of the refrigerators in storage room. Arrange on center tables. Bring chip racks out and arrange on table behind the candy. Fill as needed. Pizza, pretzels if being used will arrive about 15 minutes before game. Keep pizzas in bag. If Potomac pizza takes bags, put the pizza boxes in metal oven to warm. NO TIP FOR THE DRIVER!!! Fill large free standing coolers with ice and drinks so they are chilling and can be used to refill small fridges. Always have napkins, coffee condiments available in easy reach. You may want to set up a separate table or put out at counters Wear a glove while in concession area for serving all food. 2

Service of Hot Dogs/Hamburgers/Pizza 1. Condiments can be set up on separate table outside of concession stand or at window. You decide based on crowds etc. 2. Grill Masters should start gas grill after pulling from shed. And set up a folding table for assistants to use to wrap cooked burgers/dogs. 3. Hamburgers and hot dogs will be either in freezer or back cooler. 4. Buns will be in cooler. These should be pulled out immediately upon arrival. 5. Grill Masters should load up metal rolling shelf and take items out to the grill along with foil wraps. 6. Grill Masters should set up a separate condiment table away from front of concession windows. 7. As burgers/dogs cook, an assistant (or two) should insert in rolls, wrapped in foil and run into the concession stand. 8. Foil-wrapped burgers and dogs are kept warm in the large crock pots. If burgers and dogs are being cooked at your event, immediately upon arrival fill crock pots (see below instructions) and begin heating. 9. Pizza will be preordered to arrive within 15 to 30 minutes of game start. Do not tip driver. Pizza warming 3

bags go on middle tables. If there is time, check pizzas in advance to make sure they are sliced through to make serving easier. Slices are served on paper plates. There is no reordering of pizza during a game. If we are out we are out. 10. Soccer/Lacrosse.IF GRILLS ARE NOT IN USE, immediately upon arrival fill crock pots (see #7), microwave hot dogs & cheeseburgers from back freezer and rolls and wrap in foil. Put in crock pot to warm. 11. Soccer/Lacrosse.IF GRILLS ARE NOT IN USE, microwavable hamburgers and/or cheeseburgers will be in freezer. Microwave according to directions and wrap in foil. Put in crock pot to keep warm. 12. Soccer/Lacrosse.IF GRILLS ARE NOT IN USE, set up condiments either at front window or on separate table as you decide. People entitled to be fed for free THE ONLY STUDENTS (WCHS OR OTHERWISE) ENTITLED TO FREE FOOD ARE THOSE WORKING THE SCOREBOARD AND/OR ANNOUNCING. NOT managers or trainers or whatevers. THE ATHLETIC DIRECTOR WILL ENTER THE CONCESSION STAND TO GET FREE CONCESSIONS FOR ANY OTHERS SUCH AS REFEREES, VISITING COACHES ETC. STUDENTS ARE NOT PERMITTED IN THE CONCESSION STAND AT ANY TIME. NO EXCEPTIONS. 4

Closing 1. Refill Small Cooler from Larger Coolers in the back and lock both coolers. Place Cooler Key back in freezer. 2. Place all of the dry goods back on the shelves in the back storage, with the exception of the chocolate & candy which is placed in the refrigerator so it will not melt. The chip stands go on the top shelf. 3. No concession items should be left in the concession stand serving aread since many people have access to this area and things disappear. 4. Unplug the Hot Water Urns and empty out the water. Empty water from Crock Pots. Wash utensils and nacho crock pot 7. Cleaning supplies are on the sink or on the back storage room. Wash any dishes or utensils that were used. Please wipe/clean the microwave. 8. Please wipe/clean counters and place the trash can out in the outside trash cans. Place a new trash bag in the trash can. 9. Take trash bags out and empty boxes/containers to trash bins in entrance area. 10. Grill goes back in shed (turn off the propane please). Shed is locked with Cooler Key from white fridge/freezer. 5

Use of Popcorn Machine Plug Kettle plug into top of machine and twist to secure. Make sure that machine electrical cord is plugged in. There are 3 switches HEAT, MOTOR & LIGHTS WARMER. Turn the HEAT on, let it warm up about 75 seconds. The popcorn kit has two compartments. Use a scissor to cut open ONLY the oil compartment of the popcorn kit and pour the oil into the kettle. Kettle is HOT so be careful. Turn the MOTOR on, this turns the kettle so nothing burns. Add the popcorn kernels. Wait for them to pop, about 2 mins. When you hear the popping stop DUMP the popcorn out. (don t wander off here or it will burn) Turn the MOTOR off If you aren t planning on making more popcorn right away turn the HEAT off. Turn the LIGHTS WARMER on to keep popped popcorn warm. To clean up. Unplug. Wash off side rail with soap and water and wipe out all remaining popcorn, kernels, crumbs from bottom of machine. Also pull out drawer compartment and empty that all into trash. Wipe the bottom with damp 7

cloth/paper towels. Once it is cool enough, take out kettle and wipe out kernels, oil with damp cloth/paper towels Nacho Prep Plug in round crock pot and turn to low. Pour bag of cheese in save cap. Use small ladel to pour cheese. Unused cheese in open container can go in the fridge with cap. Use of Rectangular Crock Pots Immediately upon arrival, if hotdogs/hamburgers are either being grilled or microwaved at your game, fill 1, 2 or 3 base units with water and plug in turn on. Put black metal insert pan into crock pot and place foil wrapped bugers/dogs inside to keep them warm. To clean up. Rinse out insert pans and pour water from base units. Put back in storage room. Use of Hot Water Urns Fill with water and plug in. 8
