The complete line consists of the following elements but may vary ostensibly according to the products to be manufactured. 1 FIRST LAYER FORMING STATION not chilled This is a unit mounted on a robust metallic frame that supports the forming cylinders. The dimensions of these are such that they adjust to the width of the belt and have a large diameter to allow for the maximum contact with the mass to be formed, optimising the transfer of cold (or warm). The cylinders have a diameter of 650 and 485mm. The thickness of the 20030802 11/14/03 1

product layer depends on manual adjustment of the separating distance between the cylinders. The product is deposited from the mixer into a receiving bin located above the first cylinder, from where the mass passes through the cylinders being formed at the required thickness. The bin comes with a level-control. The lower cylinder comes with a Teflon-covered scraper. Manufactured from material that is suitable for contact with food, the surface of the rollers is adapted for a better finish in the layer of product. Their separation distance is adjustable to determine the thickness of the layer; they are provided with their own lubrication to avoid sticking as well as Teflon scrapers to keep their surface clean. At the exit of the second cylinder, a refrigerated Teflon-covered scraper has been positioned to ensure the release of the layer, that is deposited on a collecting belt. All the unit is built to allow for minimum cleaning and maintenance stoppage. The lower cylinder comes equipped with a lubrication system from the continuous cylinder. The set is driven by means of a self-regulating electronic motor-driven speed reducer. 2 LUBRICATING + INFEED BELT This facility consists of a small tray mounted on the lower part of the belt. The system includes a rotating cylinder, constantly in contact with the oil in the tray and with the belt in such a way that the belt remains continuously impregnated with hot oil or whatever liquid is being used. This unit comes together with a small resistant deposit, a liquid-impulsion pump and a thermostat. The tubes that supply the oil from the deposit to the tray, and its return to the deposit, are also supplied. 4 CALIBRATOR CYLINDER not chilled Made with a Teflon covering, it is used for those products that need to even out the surface of the layer. Its height is adjustable and it comes with its own lubrication system. 5 12 MTS COOLING TUNNEL + COOL TABLE Cool table: due to the length of the tunnel the whole unit will be equipped with cool table to cool down to 15ºF. The tunnel has a length of 12 mts. Its mouth is located just after the shaper cylinders or the calibrator cylinder, should there be one. The belt is made from a food plastics material. It has its own drive unit with electronic speed variation and pneumatic-belt centring at both ends. The refrigeration equipment is integrated and is made up of a cold table with under-panel hermetic water circulation and a refrigerated-air circuit, either circulating in direct contact with 20030802 11/14/03 2

the product or cooling it by radiation through channels constructed for this purpose. The length of the tunnel may vary for special products or high work speeds. 6 CHILER Cooling equipment for the supply of cold water to the cooling cylinders, cold table and tunnel. For standard operations it consists of 1 compressors its corresponding evaporators for the cold slab and another compressor and two evaporators for the cold tunnel air cooling system. Each evaporator allows for independent temperature control. 7 DISC CUTTER Once cooled down, the layer of product passes through a unit where it is cut lengthways/ropes by means of large-diameter discs that turn at variable speeds. This discs cut the layer on the surface of a cylinder. The number of discs depends on the width of the belt and on the desired bar width. The discs come with a system of continuous greasing incorporated as well as a disc scraper/cleaner. 8 ROPES SPREADING SECTION. Ropes are then spread throughout the width of the line to avoid their re-sticking after cutting and to ensure a proper enrobing of chocolate at all sides of the product. It is at this section when the system goes to the final width of the line, and therefore matching with the width of the enrober. Spreading is achieved by the use of independent Teflon ropes - one for each product rope - connected at the exit of the rotating knives, where the bars are delivered. Collection of product is achieved by each one of the Teflon ropes, which are located in different levels to avoid bar ropes re-sticking again after cutting. Each Teflon rope is guided and driven by specially designed wheels located at the beginning and at the end of this section and the speed is co-ordinated with the speed of the rotating knives. 9 GUILLOTINE This system has been proved as the most suitable and flexible for the kind of product we re discussing. Powered by compressed air, it is provided with features and regulations that makes it more efficient, such as: Regulation of the cutting length. Cutter cleaning scrappers. Speed of the guillotine working in conjunction with belt speed. Systems to prevent product to be lifted after cutting. 20030802 11/14/03 3

Conveyor belt collecting the just cut bars normally runs at higher speed as the previous one to ensure longitudinal separation of the bars, which are already at their final shape and ready for enrobing. A standard line includes the connection between this last conveyor and the enrobing machine feeding table to make it more efficient and automatic. Speed and coordination of the guillotine and subsequently of the collecting conveyor is achieved by frequency controlled speed variation. 10 ULTRASONIC GUILLOTINE (optional) A servomotor driven unit, the cutting is made with a follow-through motion and using an ultrasonic system. The cut takes place after the exit of the infeed belt on top of an anvil and the follow-through movement deliver the product to the exit belt. Alternatively the cut can be done without the push motion. The frequency of the cut is determined by the lecture of the encoder at the infeed belt and the preset cutting length at the control panel. The guillotine, anvils and edges of both belts move along in order to achive a good cutting edge. TWO (2) 90º U-SYSTEM CONVEYOR BAND FOR 1000 MM WIDTH SYSTEM WITH 2 MTS SECTION IN THE MIDDLE "SIRE N 105" CHOCOLATE COATING MACHINE This coating line includes the following elements: Supply table with separate mesh for optimum maintenance of the area, with a dual purpose: the supply mesh is kept clean of chocolate. the supply table aids separation of the biscuits or pastries themselves in this area so as to avoid their subsequent falling into the coating machine head. The coating machine head is made up of: Coating bucket, which can be raised or lowered using electric jacks, which provide a single or double curtain of chocolate, the thickness of which is adjustable. Base coating machine, with mesh which can be adjusted to the drum using electric jacks, includes a filling / emptying device. Blower with adjustable nozzle, height or inclination, for the removal of excess chocolate from the product. Equipped with air heating and flow rate regulation. The excess is removed, falling through the mesh to the container. Mechanical vibrator for uniform surface of chocolate. Tail cleaner, consisting of a high-speed motor connected to a filter which cleans and levels the base of the product, avoiding the formation of tails. Two-way turn. Double-bottomed chocolate container, digital temperature control, with preselection of temperatures, coating supply pump and pipes, hot water drum and automatic valve for supplying cold water. Chocolate mixer. Raising of the whole of the head, using an electric jack, for comprehensive cleaning and inspection of the bucket and mesh. Decoration table, free area where the product is delivered from the mesh and taken on a conveyor belt to be cooled. Likewise, it could also be used for the incorporation of a chocolate shavings machine, or similar element. Fitted with an electrically operated 50- mm retractable blade. Our cooling tunnel is made from external sheet metal with plastic finishing decor plate, steel plate with PVC laminated surface and isolation in Polyurethane, with the advantages of being lightweight and allowing for insulation. Constructed to allow it to be opened completely for inspection and cleaning. The air circulation is longitudinal and the unit Incorporates all channelling necessary to allow the optimal air flow along the tunnel for a better and more uniform temperature distribution. Prepared to work with cold air flow either in convection (direct cooling) or radiation (indirect cooling). Evaporator and turbines are located at the lower part of the tunnel. Compressor and condenser included- delivered as an independent unit to be located according to customer needs, and has to be installed by local contractors. Separate belt for receiving and separating the product once it comes out of the tunnel cooled. Product collection area. Special lengths quoted on demand. Auto centring belt system. Several micro switches detect possible deviation on the belt, and signal the electric jacks to correct these deviations. Independent belt and mesh speed variation, both controlled by the frequency converter. This variation allows for correct and necessary cooling times for the amount of chocolate deposited, and for each type of chocolate. The electrical panel incorporates a programmable logic controller (PLC), and liquid crystal display for the control of all parameters. It is recommended that the tunnel exit and the whole of the tunnel be installed in an airconditioned area in which the temperature is between 20 and 22ºC and the maximum humidity 55%. The line, and the elements that comprise it, are tested in a vacuum on our premises before being shipped. 20030802 11/14/03 5

TWO (2) STORAGE TANK AR-1000 Storage tank for 1.000 kg capacity. Built with planetary movement to avoid solidary mass translation which is smoothly removed and shacked in a way that a post-conching job is achieved, giving to mass more homogeneity and plasticity. The AR tank is double jacketed with water distributed all around the tank in an efficient water circuit obtaining a perfect heating distribution. The heating system consists in electrical heaters submerged in the double jacket controlled by thermostat. Fully automatic temperature control can also be supplied (optionally) for a better tempering job.
