Please read the following carefully before using this appliance. Warnings and Precautions Please ensure that all commissioning checks and initial start-up procedures have taken place. This manual should be kept in a safe and accessible place for future reference. This appliance is designed for professional use and must only be operated by qualified personnel. Please ensure that the appliance is serviced regularly by a competent catering equipment engineer. Failure to comply will invalidate the warranty. Scale formation within hot water appliances is problematic and more so in hard water areas. Damage to the appliance caused by excessive scale build up may invalidate the warranty see notes on de-scaling. 2.2 SITING The appliance must be installed in accordance with the appropriate regulations listed prior. For correct operation the chip scuttle must be checked and adjusted for level during installation. Any partitions, walls or kitchen furniture less than 100mm from the appliance must be of noncombustible material. The appliance should be installed on a level surface in a suitable position that is well lit, and positioned to minimise the possibility of accidental touching. A clear space of at least 100mm must be left to the rear of the appliance to allow for servicing with a clear space of 600mm to the front to allow for safe operation. A minimum space of 100mm must be left between any side of the unit and any combustible surfaces or walls. 2.3 ELECTRICAL SUPPLY AND CONNECTION The unit is supplied fitted with the appropriate plug and lead. The unit is supplied for connection to a 230-240V supply. 2.4 COMMISSIONING 2.4.1 BAIN MARIE CONTROLS Operation of the bain-marie is by the control knob on the fascia panel. When rotated clockwise the control knob provides power to the overhead light and element. 2.4.2 OPERATION Turn on the power supply at the isolating switch. The green neon will light indicating that mains power is on. Turn the control knob to the required set point; the amber neon will light indicating that the heating element is energised. When the temperature reaches the selected set point, the element will cycle on and off to maintain the set temperature. 2.4.3 SHUTTING DOWN THE APPLIANCE To turn off the appliance, rotate the knob to the off position and switch off at the isolating socket. WARNING: After operation, the appliance will remain hot for some time; care should be taken to avoid injury. Ensure that the person responsible understands how to safely operate, clean and shutdown the appliance. Note: This manual must be kept in a safe and accessible place for future reference. SECTION 3 USER INSTRUCTIONS 3.1 PREPARATION OF THE UNIT Before using the appliance for the first time, ensure that all protective coating is removed from the unit. Fill the tank to the indicated level with clean water. 3.2 OPERATION Before operating the unit always check that the tank is full to the indicated level with clean water. This will always ensure a 24 hour continual operation. Turn on the power supply at the isolating switch. The green neon will light indicating that mains power is on. Turn the control knob to the required set point the amber neon will light indicating that the heating element is energised. When the temperature reaches the selected set point, the element will cycle on and off to maintain the set temperature. 3.2.1 BAIN MARIE CONTROL 1. Turn on the power supply at the isolating switch and turn the control knob to the required temperature setting. 2. The green neon will light, indicating that mains power is on and the amber neon will light indicating that the heating element is energised. 3. When the appliance reaches temperature, the element will cycle to maintain this temperature. 3.2.2 SHUTTING DOWN THE APPLIANCE To turn the appliance off completely, rotate the control knobs clockwise to the OFF position. Warning: After operation, some parts of the appliance will remain hot for a period of time. Please take care to avoid accidental burns. Note: In the event of the unit boiling dry the element protector will operate shutting down the appliance. It is important to observe the following instructions for resetting: 3.2.2 RESETTING THE LIMIT THERMOSTAT 1. Isolate the unit from the electrical supply. 2. Leave the unit for at least 20 minutes to cool before refilling to the indicated level with fresh water 3. Reset the limit thermostat by manually depressing the button (refer to the drawing above for location). 4. Reconnect the unit to the electrical supply and operate as normal. IS195 ECN2396 5

3.3 CLEANING Ensure the unit is isolated from the mains supply before commencing cleaning. After use, clean the unit down with a warm detergent solution. Do not use abrasive cleaners or any containing chlorine on stainless steel surfaces. Do not use a water jet to clean the appliance. Warning. The appliance is not protected against the ingress of water. The appliance must not be submerged for cleaning purposes. Do not use water jet spray cleaning equipment on the appliance. The appliance is splash protected and has the code IP24B. Scale The formation of scale within a hot water system is common and if left unchecked may cause problems to the functioning of the appliance. In hard water areas scale formation builds up quicker than in softer water areas therefore checks on scale formation need to be more frequent. It is advisable, in order to prevent injury, the appliance be isolated and allowed to cool before inspecting for scale deposits within the tank. De-scaling the Appliance It is recommended that the appliance be de-scaled regularly using the Lincat approved descaler LS19. Excessive scale deposits may become difficult to remove with some de-scaling products. To de-scale the appliance, isolate the appliance from the electricity supply. Remove all bain-marie pots from the tank. Fill with water to the indicated level. Turn on the electricity supply and heat the water to boiling then turn the thermostat off. Add the de-scaling compound a little at a time, allow the frothing to subside then set the unit on full. Some de-scaling compounds may cause hot water to erupt. It is advisable to follow the instructions of the manufacturers. Allow the appliance to heat for up to 30 minutes, then allow the water to cool. In the case of severe scale deposits it may be necessary to repeat the de-scaling process. On completion of successful de-scaling isolate from the supply, evacuate the tank via the drain tap then rinse with clean water. This appliance should be serviced and maintained regularly, according to the service instructions. Before carrying out any maintenance on this appliance, isolate from the mains supply. SECTION 4 COMPONENT REPLACEMENT 4.1. NEON REPLACEMENT 1. With the unit on its side or top, remove the front base panel, access to the power neon is now possible. 2. Remove the wires and unscrew the neon-retaining collar at the rear of the fascia. Withdraw the neon from the front of the fascia. 3. Remove and replace wires correctly, marking with an indelible pen if necessary. Replacement is a reversal of the removal sequence. Being careful not to trap the wiring harness whilst replacing the fascia. 4.2. ELEMENT REPLACEMENT 1. With the unit on its side, remove the base as above. 2. Disconnect the cables from the element terminals and withdraw the thermostat and limit stat bulbs. 3. Undo the nuts holding the element and support ring to the tank. 4. Remove the element and seal from the inside of the tank. 5. Ensure the mating face of the tank is clean, then fit the new element and seal assembly. 6. Reverse procedure above to reassemble appliance. 4.3. THERMOSTAT REPLACEMENT 1. With the unit on its side, remove the base as above. 2. Remove the control knob taking care not to lose the knob clip. 3. Slide the thermostat bulb from its mounting on the element. 4. Remove the wires from the thermostat connections 5. Unscrew the M4 screws, which hold the thermostat to the fascia panel. 6. Fit the new thermostat by reversal of the above procedure. 4.4. LIMIT STAT REPLACEMENT 1. With the unit on its side, remove the base as above. 2. Remove the wires from the limit stat connections. 3. Note the limit stat orientation to the mounting bracket then remove the stat. 4. Slide the thermostat bulb from its mounting on the element. 5. Fit the new thermostat by reversal of the above procedure. SECTION 5 ADDITIONAL INFORMATION Opus Floor Stand installation instructions OA7921 400mm wide Floor Stand To fit the Bain Marie to the above floor stand proceed as follows: 1. Remove feet from counter top unit. 2. Put 30mm packer on top frame side channels, taking care not to cover mounting holes and position unit on top. 3. Place the four spacer tubes over the mounting holes on top frame side channels. 4. Insert four M10 x 50mm long hex socket screws through the mounting holes in the top frame (from underside). 5. Align bolts with nuts in the unit base, from which the counter top feet were removed, remove packers and tighten screws until the unit pulls up on the tubes.
