Forced Air Fry Holding Station Guidebook (FAFHS)
Equipment Prep Once your unit has been installed, you are almost ready to go! First, make sure that you and your team are familiar with all of the parts of the unit and that the unit is clean.
The FAFHS has two control elements Operating Instructions On/Off Power Switch o Turns on and off the fry warmer and lights only. PHUs will not be controlled by this switch Electronic Temperature Controller o Pre-set at the factory to the correct temperature and should not be adjusted Each morning, check the FAFHS to ensure that the equipment was properly cleaned and assembled the night before. Turn ON main ON/OFF power switch Allow 30 minutes for equipment to reach proper operating temperature. Equipment is now ready to use Temperature Check After the FAFHS has been allowed to heat up for 30 minutes, thoroughly clean any residual oil and salt from the (6) locations indicated by the red dots (shown below). Using a surface thermometer, place the surface probe on each area denoted in the graphic below. Temperatures in all locations should be above 160 F. Daily Cleaning Instructions Do not use oven cleaners, caustic cleaners, degreasers, acids, ammonia products, abrasive cleaners, steel wool or abrasive pads containing iron. These can damage the stainless steel and plastic surfaces. Remember, due to the nature of the technology of this equipment, if routine cleaning and maintenance is not performed, the lifespan of this equipment will be decreased. Do not spray cleaning chemicals or water into the electrical compartment or into any slots, louvers or the air filter. Do not use dripping wet towels or cleans the FAFHS with a water jet.
Daily Cleaning Instructions Cont d Each night at closing, turn PFF main ON/OFF switch Remove any unused food product and discard Allow equipment to cool a minimum of 30 minutes or until all surfaces are cool to the touch Detach removable parts in the following order a) Fry rack b) Shelf (optional in some units) c) Dividers d) Sorting Tray e) Mesh Filter (if applicable) f) Crumb Tray g) Filter Baffles Carry these to the 3-compartment since and wash, rinse and sanitize using approved chemicals Allow to air dry A, B C D F G Use Comb to remove food crumbs from the air discharge grill o Insert comb into air discharge grill o Move comb down o Tilt comb up and remove from the grill o Clean the interior surfaces Clean the interior surfaces with a soft clean red cloth Replace all removable pieces (fry holding rack, dividers, sorting tray, crumb tray)
Weekly Maintenance Instructions With the sorting tray removed, carefully remove inlet air filter by sliding straight up and out of the bracket Soak the filter in Burger King approved degreaser for 15 minutes Rinse and allow to air try Replace the air filter CAUTION: Do not operate the FAFHS without the air filter in place, this may void the warranty. Trouble Shooting Problem Possible Cause What To Do Equipment will not power NO heat, no airflow, no lights Unit not plugged in wall outlet is not working Verify unit is plugged in to outlet Plug FAFHS into another nearby outlet. If individual outlet is not working, use alternate and contact licensed electrician to repair or replace outlet as needed Equipment will not maintain proper temperature Lights won t come on Circuit Breaker has been tripped Equipment not properly assembled Electronic temperature is not set correctly List circuit unplugged Lamp is burned out Check circuit breaker to see if it has tripped. Reset if necessary. If this does not work, call FRANKE Technical Support Make sure all parts are properly installed, especially the crumb tray. Make sure air filter and sorting tray are properly installed so the slots are not blocked Display should indicate 150 106 (65 71 C). Press "set" button twice to see set point.
