3 Electric or Gas - Which Do You Prefer? Electric Fryers Ultrafryer Systems use a unique element design to preserve and reduce degradation of shortening. The streamlined vertical cross section (Flat Bar) allows for more effective heat transfer while the extra bends increase overall length for lower power per square inch. Additional energy is saved with insulated vats to reduce heat loss. Electric Ultrafryers are available in 35 lb., 45 lb., 65 lb., 75 lb., and 125 lb. capacities. Battery of 4-75 lb. Vats Electric Heating Element Our advanced design heating elements give Ultrafryer the power to cook food faster with quicker recovery times. The higher average cooking temperature means less oil is absorbed resulting in a better tasting product. Convenient and cost effective built in filtration systems are available in every Ultrafryer. Electric Heating Element Gas Fryers The high efficiency design of our patented heat exchangers can save you up to 50% in energy costs per year. While other fryers have a typical exit temperature of 1100 to 1300 degrees from a 3000 degree input, Ultrafryer s advanced heat exchanger produces an exit temperature of 500 degrees or less. This puts more energy into the oil which results in faster recovery time, higher production, and reduced energy use. We produce gas Ultrafryers in 45-50 lb., 60-100 lb., and 120 lb. capacities. All of our gas fryers feature Automatic Vat Protection to prevent accidental dry firing and ensure a long life. Our Patented Heat Exchangers The combustible gases travel through the tubes and boxes of the patented PAR-2 and PAR-3 heat exchangers transferring heat energy to the oil. Combustible gases enter the heat exchanger at approximately 3000 F and exit at 500 F or less. The heat exchanger has efficiently transferred the most available energy to the oil. Extended Oil Life The air temperature inside the PAR-3 heat exchanger changes dramatically from the flame in the beginning to the exiting air. The outer walls of the heat exchanger are much more uniform in temperature. The heat exchanger in turn heats the shortening. Because the temperature is very uniform throughout the vat, the result is perfectly cooked food. Most users discover that food cooks faster in the PAR-3 vat. Exposed to oil for a shorter period of time, food absorbs less shortening, resulting in better tasting food. It is common for users to save on shortening usage since less is absorbed in the food, less must be added back to the vat. The agitator baffles are different from standard baffles as these have multiple ports and deflectors to swirl the hot air in all directions, which increases the efficiency of the heat exchanger.
