Thoughout the ages... History From its beginnings in 1858, Avenue George V has evolved into a major thoroughfare at the heart of the most prime district in Paris. Chef Frederic Vardon explains that the values of sharing and generosity were the basis for the restaurant concept : I imagined a dining room as it may exist in a home, with everything going on around it. A challenge to time... Design At 39 George V, lighting designer Sophie Bruere created a first ever design based on Geoluminescence. Passers-by can withness light shows on the façade. From the courtyard or the restaurant terrace, one can discover an observatory, where light variations are projected onto a circular screen. These variations are based on sky color and light produced across the global by human activity at night. The observatory is visible from the ground and interior corridors. A second light fixture located on the roof allows the building to be spotted from the Champs-Elysees Avenue. 21
