Induction Cooking Overview 7 Induction cooking is the safest and most efficient way to cook The magnets of the burner excite the metallic pan to create heat. The pan becomes the burner, eliminating heat transfer through the glass cooktop surface unlike regular electric cooking. Induction cooking requires magnetic cookware. If a magnet will stick to your pan you can use it with an induction cooktop.

Induction Cooking Wolf Products 10 In 2016-2017, Wolf introduced the only thermostatically controlled twin convection for better baking with more even temperatures. Wolf is the first company to offer an induction range at a 36-inch pro-style width.

Induction Cooking Induction vs. Pro Gas 16 When we have chefs in our Electrolux kitchen, they always choose induction over pro gas Although professional gas is popular in high-end kitchens, induction is a better cooking product. Induction doesn t emit nearly the heat of gas and can be downdrafted, unlike professional gas. You also do not need a huge professional hood with induction. The benefit to induction is not limited to less venting and better efficiency. The speed and response of induction is simply superior to even the hottest professional gas unit. On the high end line, Thermador produced the only induction cooktop called the Freedom with no burners and the ability to cook anywhere on the surface. Miele has the most powerful cooktop at 7,700 watts and the most functional range. It will be interesting to see if other companies can double their wattage and add similar control.
