These damages are the responsibility of the consignee and must be reported to the carrier within 10 days in order to file for a claim. Please consult our warranty at the end of this document. I: Initial Inspection Installers Section Open the shipping crate, and locate the following items: 1. Three (3) Molding Plates 2. One (1) Pressing Handle 3. One (1) plastic bottle of hydraulic fluid (located inside the base). NEVER operate the machine without oil in the transmission. NEVER spray down the machine as it will result in removal of important grease and oil. Note the electrical ratings on the data plate; ensure the supply voltage matched these rating. II: Installation Section A: Selecting an Installation Location Installation of the BRD should be made in accordance with all applicable local codes. The installation location should be free and clear of all obstruction. The floor should be smooth and level and must be capable of supporting the weight of the appliance. Allow adequate clearance at the sides of the appliance for serviceability. Allow adequate clearance on the right and left side for tilting of the head. The BRD must be anchored to the floor to prevent the appliance from moving during operation. Located on the base of the appliance are four (4) mounting holes use appropriately sized bolts and anchors to secure the BRD to the floor. 14.5" 14.5" Mounting Pattern Cross Section View Typical Mounting B: Electrical Connections Electrical connection must comply with all applicable State and local codes and in accordance with the NEC and NFPA. The BRD comes from the factory with a six foot (6 ) power supply cord and plug, the plug configuration is a NEMA P15-20. If the appliance is to be hard wired, electrical connections MUST be made by a licensed electrician. The BRD is rated at 208 Volts Three Phase at 15 Amps. A suitable circuit is required. C: Install Press Handle Install the press handle into its slot at the top of the dividing head. Secure it into place using the two set screws. Page 5 of 14
D: Adjust Cutting Knives There must be a gap of approximately 1/32 (the thickness of a credit card) between the knife blades and the molding plate to prevent possible damage to the knife blades. Remove the Dough Check Ring by rotating it until the slots in the ring align with the slots in the head as shown (note: picture shown with the head assembly covers removed). With one of the plastic Molding Plates installed on the platen pull down on the Press Handle until it stops. Move the Dividing Handle to the right until the Knife Blades are lowered. As shown, there should be a 1/32 gap (approximately the thickness of a credit card) under the blades. Use the Handle Stop Bolt, located at the head assembly directly under the handle, to adjust this setting. Page 6 of 14
E: Lubrication VERY IMPORTANT! Prior to operation the platen transmission must be lubricated. The BRD shipped with a supply of lubricating oil, it is located in the base of the appliance. Remove one of the Head Pins and tilt the Dividing Head. Locate and remove the Oil Filler Screw. Using a funnel, empty the contents of the container into the transmission. Replace the Oil Filler Screw and re-seal with a food grade silicone. Oil Fill Screw Carefully lower the head assembly back into position. Re-install the Head Pin Re-install the Dough Check Ring. For the installation company: I/we certify that the BRD-36- model divider rounder, serial number(s) has been installed and tested and is in excellent operating condition. III: Operations Customer Operation Section Calculating the amount of dough required for each press by multiplying the desired weight for each roll by the number of divisions. Scale the bulk dough into the desired weights and place it, moist side down, onto one of the molding plates ensuring the smooth side is down. 2. Flatten the dough so that the center is slightly higher than the outside edges. 3. Spread the dough into a circle to cover the molding plate. 4. Insert the molding plate into the divider. Note: The surface of the dough should be dry to avoid sticking to the molding head. Do not dust the molding head with flour, if the dough is moist dust slightly with flour to avoid sticking. Ensure that there are no objects between the molding head and the plate. Ensure that the molding plate sits flat onto the molding surface and that it is locked onto the mounting pin. WRONG: Molding Plate over stop block. Damage to knives will result. CORRECT: Molding Plate sits flat on molding Surface NEVER operate the rounder with two or more molding plates installed! 5. Lower the Dividing Head by pulling down on the Pressing Handle until it stops in the down position. 6. While holding the Pressing Handle down, move the Dividing Handle to the right, the dough will now be cut into 36 even pieces. Use the Weight Gauge, located at the top of the Divider Head, to adjust for the specific thickness of the dough. 7. Continue holding down on the Pressing Handle while slowly move the Rounding Handle to the right until the dough has been formed. While the Rounding Handle is in use the platen table will begin to rotate forming the dough into rounds. 8. After the desired rounding time, slowly return the Rounding Handle to the left. 9. Return the Dividing Head into the raised position by slowly lifting the Pressing Handle upward. Page 10 of 14
Cleaning and Maintenance CAUTION: DISCONNECT THE APPLIANCE FROM THE POWER SUPPLY PRIOR TO CLEANING. THERE IS RISK OF SERIOUS INJURY! NEVER hose down the appliance instead use a clean cloth and warm soapy water to clean surfaces. Weekly Monthly Cleaning 1. With a #2 Philips screwdriver, remove both covers from the top of the BRD clean with warm soapy water and dry with a clean cloth. 2. Remove any loose particles of dough from around the head assembly. 3. With the dividing head in the raised position, rotate the dough check ring so that the grooves in the ring align with the slots in the upper retaining guide blocks. 4. Carefully lower and remove the dough check ring. 5. Wash the ring in warm soapy water, towel dry then apply a conformal coating of mineral oil. 6. Remove any loose particles of dough from in and around the cutting head. 7. Set the weight gauge to its highest position. 8. Remove the head pin (either left or right). Never use a hammer to remove these pins. Page 11 of 14
9. Carefully tilt the head assembly using the pressing bar as a lever. 10. Lower the cutting knives by pulling down on the pressing handle. 11. Clean the cutting knives with warm soapy water. 12. Clean the surface of the dividing plate with warm soapy water. 13. Towel dry all surfaces and apply a conformal coating of mineral oil. 14. Push the pressing bar back up so that the knives are retracted back into the cutting head. 15. Re-set the weight gauge to its original position. 16. Carefully lower the dividing head back down until it makes contact with the stop block. 17. Coat the head pin with mineral oil and re-insert into the head. 18. Re-install the dough check ring and turn it until the stop pin makes contact with the head. 19. Clean the surface of the dividing table with warm soapy water then towel dry; if necessary use a scotch bright pad. 20. Towel dry and apply a conformal coating of mineral oil. 21. Re-install the head covers. 22. Clean all exterior surfaces of the appliance with warm soapy water. Never spray water directly on the appliance. Page 12 of 14
