General Information The high performance heater proofer cabinet will hold food hot at a constant temperature and supply humidity for proofing. This cabinet is NOT a re-thermalizing or cooking appliance. Dimension: Weight: 24.25 (W)x31.75 (D)x69.7 (H) 130lb/65kg Approx. UNPACKING Examine the interior and exterior to determine whether any damage has occurred during shipping. If so, notify the carrier immediately to file a damage claim. All Win-Holt equipment is carefully tested and inspected prior to shipment. When accepted for delivery by carrier, the responsibility for safe arrival at the destination is assumed by the carrier. Examine the interior of the unit to make sure all packing materials are removed before the unit is plugged into an electrical outlet. Caution: If any damage is found, do not attempt to operate the unit. Call your dealer IMMEDIATELY to arrange for service. INSTALLATION Position your unit on a level surface and plug in the supplied cord into any grounded 120-volt AC, 20 amp power supply dedicated breaker. It is highly recommended that you use ONLY the power cord supplied. Use of a dedicated circuit will help to ensure proper operation. Do not operate the unit with an extension cord. MAINTENANCE The equipment has been designed to require minimum maintenance and has been constructed to meet NSF and electrical safety standards. Non-toxic chemical cleaners or mild detergents are recommended for cleaning. DO NOT use steel wools of any kind. Steel wool particles will work into the grains of the metal causing corrosion. Also, these particles can cause a health hazard. If scouring is required, use a non-abrasive type of cleaner. Do not use caustic solutions on your equipment. Hosing or steam cleaning should not be necessary to keep these fixtures clean and sanitary. Do not allow water or steam to come into contact with electrical components. Warning: Never power wash or steam clean the cabinet with the power drawer inserted. Warning: Be sure to disconnect power source before cleaning and servicing the unit. Liability for improper or careless use is the responsibility of the equipment owner or persons servicing the unit, including the authorized service agent. OPERATING INSTRUCTIONS Plug the unit into a 120V 20 Amp dedicated outlet. Fill the water pan to ½ from the top of the water pan for proofing or if moisture is required during the heat mode. Check water level every 1-2 hours and refill if required. Warning: Pre-heat the cabinet to the desired temperature before placing hot food in the cabinet. This is not a re-thermalizing or cooking appliance. Food MUST be at the right temperature before being placed into the cabinet. Warning: Excess water dripping from the unit can be a slip hazard. Heating Instruction 1. Turn power switch ON. 2. Set Heat/Proof switch to Heat. 3. Set heat thermostat to 10. 4. Pre-heat cabinet until desired temperature is reached. Typical warm up time from room temperature to 160 F is approx. 45 minutes. 5. Re-adjust the heat thermostat to the required temperature. Power indicator light will turn on and off as the heat thermostat cycles. Proofing Instruction 1. Fill the water pan to ½ from the top with HOT tap water. 2. Turn power switch ON. 3. Set Heat/Proof switch to Proof. 4. Set heat thermostat to 2. 5. Set humidity thermostat to 10. 6. Pre-heat cabinet until desired temperature and humidity is reached. Re-adjust the heat and humidity thermostat to achieve the required temperature and humidity. Power indicator light will turn on and off as the heat and humidity thermostats cycle. 1

Trouble Shooting Basic operation When the power switch is turned ON, the blower motor and temperature display is always on. If the Heat/Proof switch is set to Heat only, the heat thermostat is active and can be set to achieve the required temperature. When the Heat/Proof switch is set to Proof both the Heat and Proof thermostats are active and can be adjusted to achieve the required temperature and humidity. The indicator lights cycle on/off as the heat and proof thermostats cycle on and off.
