Temperature Protectors on Steam Generator 2 temperature protectors are integrated into the steam generator : 120 C boil dry warning: when protector opens, power is supplied to a parallel buzzer to remind the user to fill water 170 C overheat protection (marked with 2 green dots for identification) 46
Steam Generator with Thermostats 47
Valves on Combi Steam DESTEAM VALVE is normally closed, and will be opened in the desteam phase only. EXHAUST VALVE is normally open, and is activated during cooking to close the cavity. Not activated (i.e. open) during desteam phase. Vent hosecommunicates with small bypass in desteam valve to avoid pressure build-up in cavity. BOIL DRY BUZZER 48

MW: Safety Door safety system on microwave ovens: Primary switch Q2 is in series with MW relay and HV transformer, and is supervised by monitor switch Q1 (in case of fault this will break the fuse wich is incorporated as a SMD on the SOEC B2 power board) Secondary switch Q3 gives an input to the SOEC B2 power board (this door switch is present on Classic and Steam ovens too) Main 10 A slow fuse on microwave ovens is in series with the HV transformer primary 53

Oven Functions Grill: grill element Turbo Grill: grill element + hot air fan Hot Air: rear element + hot air fan Low Temperature Cooking: hot air with special temperature profile Defrost: hot air fan, sometimes with rear element FHU (fast heat-up): grill element + rear element + hot air fan, selectable with separate touch zone (only on models for 16 A) (refer to tables for default values and adjustment range) 63
Oven Functions Wet Steam: steam generator Hot Steam: steam generator and hot air, switched alternately (see profile on separate slide) Microwave Microwave + Grill (switched alternately on 10 A models - this leads to longer cooking times) Microwave + Hot Air (switched alternately on 10 A models - this leads to longer cooking times) (refer to tables for default values and adjustment range) 64
Wet Steam Wet steam function shall be selected only if: Cavity temperature is lower than 80 C (check residual heat indication) Either Duration or End has been set using the timer functions because: Preset temperature is 96 C, adjustable down to 50 C (else than on the big steam oven, temperature is controlled using the oven sensor) Valve control is based on the programme duration: Exhaust valve activated (i.e. closed) during the whole cycle, except the last 5 minutes Desteam valve activated (i.e. open) during the last 5 minutes of the cycle 65
Wet Steam Valves and Cooling Fan DUR (Process time) 5 min. 10min. exhaust activated DUR minus 5 min. desteam activated last 5 min. (without exhaust) Cooling fan speed 66
Hot Steam Heating Elements Alternately 25% steam generator / 75% hot air Tcavity < 110 C Tcavity > 110 C Steam generator: BK02 Rear element: BS01 When Wet Steam is selected, the desteam phase will start only 2 minutes before programme end 67
Hot Steam Valves and Cooling Fan exhaust activated DUR minus 2 min. DUR (Process time) 2 min. 10 min. desteam activated last 2 min. (without exhaust) Cooling fan speed 68
Low Temperature Cooking Default temperature 120 C, adjustable by user 100-230 C 80 C, not adjustable Default time 10 min, adjustable by user up to 9:59 hours 69
