PREPARING YOUR DEEP FRYER FOR USE Prior to using for the first time, remove all packaging materials from the exterior and interior of the fryer. Make sure the fryer is unplugged. Wash the Frying Basket and removable Oil Reservoir in hot soapy water. Dry all parts thoroughly. CAUTION: Do not immerse cord, plugs or control panel assembly in water. TIPS FOR DEEP FRYING Fill the unit with oil between the minimum and maximum capacity lines only. Do not overfill the basket. To achieve excellent results food, needs to be surrounded by oil. Too much food causes the oil temperature to drop, resulting in soggy food. Food should be no higher than the top of the basket. Be sure that all ice crystals are removed from the food and food is completely dry. Excessive water and ice can cause the oil to splatter and/or overflow. Coated foods (bread crumbs, batters, etc.) are best for deep frying. The coating acts as a protective layer keeping food moist on the inside and crisp on the outside. For best results, defrost frozen food for 20 minutes prior to frying. Fry foods at the correct temperature for best results. This will prevent burning and give you even coloured, crispy food. Pre-packaged frozen cooked foods may cook faster than uncooked food. For even cooking, shake basket halfway through cooking time. USING YOUR DEEP FRYER NOTE: Never turn on the fryer with an empty oil reservoir. Always use your fryer on a flat, heat resistant surface. 1. Open the lid pressing the Lid Release Button. 2. Lift the Frying Basket from its sitting position within the oil reservoir by pulling the Basket Handle up until it locks into the horizontal position. 3. Pour cooking oil into the Oil Reservoir until it reaches between MIN and MAX marks. DO NOT OVER OR UNDER FILL. Place the Frying Basket back into the Fryer. 4. Close the lid. 5. Press the Handle Release Button to lower the basket into oil. 6. Make sure the fryer is OFF and insert the plug into the power outlet. 7. Set the fryer to the desired temperature. 8. Turn the Timer Knob to the maximum (30 minutes) in order to turn on the deep fryer. The pilot light will come on. 9. The pilot light will switch off when oil is pre-heated (Do not leave the Deep Fryer running without any food in it). Press the Lid Release Button. 10. Place food inside the Frying Basket, (do not over fill with food). Close the lid and lower the Frying Basket into the Oil Reservoir. CAUTION: Always replace and close the lid before immersing food in the oil. Do not immerse or drain food with the lid removed or open. 11. Reset the Timer Knob to the desired time (either backwards or forwards from the initial setting for preheating). IMPORTANT: When setting the timer for less than 5 minutes, turn the timer past the 5 minute mark and then rotate back to the desired time setting. This will ensure that the timer operates correctly and safely.

12. After the cooking time is up, a bell will sound. Lift the Frying Basket out of the Oil Reservoir. To remove excess grease and retain crispness, let the food drain in the Frying Basket for at least 10-20 seconds. Open the lid, and lift the Frying Basket by the handle and pour contents onto a plate covered with paper towels before serving (Be careful not to splash any hot oil on yourself or others). 13. When finished cooking, make sure the fryer is turned OFF and unplugged from the power outlet. CARE AND CLEANING CAUTION: Always turn the fryer off, disconnect from the power outlet and allow to cool before cleaning. CAUTION: Do not immerse cord in water or any liquids. 1. Unplug from the power outlet and allow the fryer to cool completely before cleaning. 2. Remove the lid. 3. Open the Filter Cover and remove the Filters. 4. Remove the Frying Basket. 5. Carefully lift the Oil Reservoir straight up out of the Main Housing by holding the two handles on rim of the bowl. Store oil in an airtight container. See TIPS FOR OIL USE AND STORAGE. Clean with warm soapy water and allow the dry. NOTE: We do not recommend placing the oil reservoir in the dishwasher as this may damage the protective coating. 9. The Control Panel Assembly and Body Housing should never be immersed in water or other liquids. Gently clean the outer surface of the Control Panel Assembly with a damp cloth containing mild soapy water or plain water, and dry thoroughly. 10. Replace Anti-Odour and Grease filters regularly. 10. Insert the Oil Reservoir back into the Main Housing. 12. Place the Frying Basket into the bowl. 13. Put the Filters back into the Lid and put the Cover on. 14. Replace and close the Lid. REPLACING AND CLEANING FILTERS NOTE: Replace every 3 months or after 12 uses. 1. Open the Filter Cover, and remove both Filters. 2. The Foam White Grease Filter may be washed in hot soapy water. Allow to air dry. 3. Charcoal Filters are not meant to be washed and it is recommended to replace every 3 months or after 12 uses. 4. Clean the inside of the Cover with a damp soapy sponge. Rinse and dry thoroughly. 5. Place the clean White Grease Filter and Black Charcoal Odour Filter back into lid, then replace the Filter Cover.

FRYING TIME AND TEMPERATURE The frying times in this chart are a guide and should be adjusted to suit the different quantities or thickness of food and to suit your own taste. Preheat time is 7-10 minutes for the fryer to reach the desired temperature. (The pilot light will cycle ON/OFF during frying as temperature fluctuates due to the food load.) NOTE: Pre-packaged frozen cooked chicken may cook faster than the below times stated. The chart below is a GUIDE ONLY, times will fluctuate based on the amount of food placed in the fryer. FOOD TEMP SETTING TIME (minutes) Chicken Nuggets 190 o C 5-8 Chicken Pieces, Bone-In 180 o C 15-20 Fish, Battered 170 o C 8-10 French Fries, Frozen 190 o C 3-5 Fritters 190 o C 2-4 Onion Rings 190 o C 3-5 Shrimp, Breaded 190 o C 2-4 TIPS FOR OIL USE AND STORAGE Do not use seasoned or flavoured oil such as walnut, olive oil, lard or drippings as they have a low smoke point. Use blended vegetable oil, pure corn oil, sunflower oil, soybean oil, or grape seed oil (canola oil) as these oils have a high smoke point. Peanut oil is not recommended because it impacts the flavour greatly. Oils should never be mixed when deep frying. High heat, water and burnt food particles beak down the oil s smoke point. Replace oil if you notice: Excessive smoking at normal temperatures Strong oil discolouration A rancid smell Excessive foaming around the frying food. Oil darkens with use because the oil and food molecules burn when subjected to high/prolonged heat. The more you use an oil, the more slowly it will pour. When smoke appears on the oil s surface before the temperature reaches 190 C, your oil will no longer deep-fry effectively. When frying foods with strong flavour and/or aroma like fish or chicken, use the oil only once. Filtering the oil with a cooking oil filter or fine-mesh strainer can keep it fresher. Although storing oil in a refrigerator may extend the life of the oil, this should never be done. This process of chilling oil then bringing to room temperature causes excessive splattering during the heat up process. Store the covered oil in a cool dark pace, for up to three months. Check the oil before using for colour, smell, or excessive foaming. Discard the oil if it shows any of these qualities.
