Rules for Safe Operation Safety Procedures All cookers are potentially hazardous: fire, electrical shock, or burns may occur. The hazard is increased in pressure cookers operations because shortening is under pressure. When the oil is under pressure and the lid is opened before the pressure is fully released, hot oil can spray out and burn team members in the immediate area around the cooker. If a team member tries to open the lid when still under the pressure, the lid may fly up and strike the team member in the face or head. So DO NOT attempt to open the lid when pressure is still inside the cooker. Wait until the cooker has finished its cycle and the pressure is released. The equipment must be installed and serviced ONLY by authorised service agents. All operating procedures must be followed carefully or serious burns, personal injury, fire, and/or property damage could result. Cookers are equipped with safety devices that minimise these hazards. Make sure that the control panel is securely fastened before turning the cooker circuit breaker ON. Make sure the elements are completely covered with oil before turning the heat ON. Cooking The manager will: Turn off the cooker at the wall; Wait 2 minutes for the cooker to release the pressure; Unlock the lid to make sure all pressure is released Slowly open the lid; Discard the product. Follow all established procedures for operating the equipment and cooking the products. Do not open the drain valve during the cooking cycle. Cook only authorised products and follow established minimum/maximum cook quantities. Do not open the lid until all pressure has been released. If Things Go Wrong NEVER OPEN THE LID UNTIL ALL PRESSURE HAS BEEN RELEASED FROM THE COOKER. If the lid is opened before the end of the cycle, hot oil can spray out and burn team members in the immediate area around the cooker. Sometimes things can go wrong during the cycle, for example: 1.Forget to start the timer 2.Timer fails to start 3.Timer malfunctions or stops during the cycle 4.Power surge or blackout 5.Steam leaks from the safety valve or lid seal Filtering/Cleaning In all cases except number 1 contact your supplier for cooker maintenance. Turn the cooker and circuit breaker OFF before draining the oil into the filter unit. Follow the procedures in this section for emptying and cleaning the collector. Never use steel wool to clean any part of the cooker. DO NOT use any burn-off method to clean the elements. DO NOT use any unapproved cleaning aids to clean any part of the cooker. DO NOT use water to clean any part of the cooker, except where specified in the following procedures. Turn the controlling circuit breaker OFF or disconnect the cooker each time the cooker is cleaned. When cleaning or servicing canopies/ hoods and filters, disconnect the cooker, close the cook pot lid, pull the cooker away from the wall, and use a ladder to reach the canopies do not stand on top of the cooker. Checking Oil Temperature Strictly follow all instructions when checking oil temperatures. Use care when operating or cleaning the cooker to avoid burns from hot metal parts or oil. Do not use a cooker that does not operate properly, or has faulty, loose, or missing parts contact maintenance. DO NOT operate a cooker under pressure if the cook pot contains water. Always keep clutter (e.g., closed containers, cigarette lighters, aerosol cans, papers) away from the cooker or hot oil. DO NOT spill any liquid (beverages, water, milk) into the oil. Always turn the controlling circuit breaker OFF and disconnect the cooker before allowing any cooker repairs to begin. If cooker is unsafe or an accident occurs while cooker is in use, take action to fix the problem immediately. DO NOT open the control panel. Where a mild jolt or tingling is noticed---immediately turn the controlling circuit breaker OFF, and disconnect the cooker.- Contact maintenance for a service and do not use the cooker until repaired. In the case of an electrocution.- Do not panic - act immediately.- Check for Danger - to yourself, bystanders and the casualty- Turn the controlling circuit breaker OFF, and disconnect the cooker.-where the person is unconscious follow cardio-pulmonary resuscitation procedure only if you are a certified First Aider. If any electrical shock occurs during operation, immediately turn the controlling circuit breaker OFF and disconnect the cooker. Contact maintenance. DO NOT pull on the pressure relief valve ring. The oil may be deep stirred in the collector ONLY during the morning start-up. - To prevent serious burns, personal injuries, fire, and/or property damage, and to stop fines/cracklings from being spread throughout the oil, DO NOT deep stir the oil at any other time. - The heat plate must be placed in the collector after stirring during the morning start-up. If the computer alarm sounds and the display panel shows HI, turn the cooker OFF at once. This reading means the oil temperature is 23ºC or more above the set point. - Check that the oil level is over the heat elements. - Press the HI-LIMIT reset button once. If the computer display panel shows PROB, turn the cooker OFF and contact maintenance. This reading means the probe is defective. If the alarm continues after the power is turned OFF, unplug the cooker from the electrical outlet until repairs are made. Make sure that the computer indicates DROP for the product or the number of heads selected before beginning the cook cycle. All of the selections use the word DROP to indicate that the oil temperature is ready to cook for only the round that has been selected. The DROP temperature for a 4-head round is higher that the DROP temperature for a 2- head round. If the wrong DROP temperature is used, chicken will be either overcooked or undercooked and cannot be sold. - If the cooker trips again, contact maintenance. - If the oil is above the heat elements and the display still reads HI, contact maintenance. This appliance needs to be electrically grounded. The cooker must be positioned under a working exhaust hood as some products or the oil may burn and catch fire. Therefore don t use the equipment near or below combustible walls and materials. Failure to maintain a safe operating distance may cause the wall to discolour or catch fire. ELECTRICAL SHOCK HAZARD Failure to follow the instructions in this manual could result in serious injury or death. An electrical ground is required on this appliance. Do not put electrical cable or plug in water. Unplug from outlet when not in use, before putting on or taking off parts and before cleaning. Do not operate this equipment if it has a damaged electrical cable or plug, if it is not working properly or it has been dropped or damaged in some other way. Do not allow the electrical cable to hang over the edge of the bench or counter, or touch hot surfaces. Keep the electrical cable away from hot surfaces. Do not use extension cables. All electrical equipment has been tested and tagged within the last 6 months. Boil-over Prevention If the following instructions are not followed, oil can overflow the cook pot and cause serious burns, personal injury, fire and/or property damage. DO NOT deep stir oil at any time other than morning. Filter oil a minimum of twice per day in an electric cooker or more depending on fines build up. Filter oil at least every 3 rounds in a gas cooker. Filter only when COOL is displayed. Brush all fines from cook pot surfaces and cold zone during the filtering process. Be sure the cooker is level. Be sure the oil is never above the MAX Oil Level Line (upper cook pot FILL line). In a gas cooker, be certain that the gas control valve and burners are properly adjusted. Be sure the fines basket is in place and is emptied throughout the day. After morning start-up do not stir oil in the cold zone. Cooker Parts If the elements come out of the heater brackets, do not use heavy tools to put them back.
