Automated Fat Fryers

Automatic fat fryer Type EL 6/1000 S, EL 9/1500 S and EL 10/1700 S An automatic system for fat frying and automatically filling pastries with a max. diameter of 104 mm. The pieces of pastry are transported in baskets. The frying temperature can be continuously set to a maximum of 200 C. The frying zone is divided up into 2 heating zones, working independently. The dough pieces are transported by transfer cloths and sheets and then are injected automatically. Photoelectronic monitoring on each injection unit ensures that the filling function is only activated when a piece of pastry is in front of the injection needle. The finished pieces of pastry are removed either from a receiving and sugaring trough or a removal belt. Fat level regulator Berlin-style donuts and other pastries absorb fat when they are fried, thus lowering the fat level in the automatic fat frying system. The result is a poorer frying quality. The fat level regulator compensates for this loss and it can simultaneously be used for melting blocks of fat. We revised the original design so that there are no longer any tools mounted in the storage tank. The fat is heated with thermal oil in a double casing where it is electrically heated. This unit is equipped with insulation to lower the heat radiation. A weighing cell controls the level. This unit is available in two sizes depending upon the model of the automatic fat fryer. It is possible to retrofit existing systems with this unit. Fat level regulator

Shaping unit SKF 1 The shaping unit is an independently functioning heading machine for shaping crullers, especially cruller rings with a diameter of up to 90 mm and approximately 50 mm high. The shaping head of the shaping unit moves in the cycle of the automatic fat frying system and covers 6, 8 or 10 pieces per row with crullers (depending upon the fat frying system). The dough funnel of the shaping machine is manually charged. We supply pestles in 1.75 and 2 depending upon the automatic fat frying system. The SKF 1 shaping unit is designed as an attachment and can be removed from the automatic fat frying system for cleaning or producing different types of pastries. These pestles and the frame of the shaping machine are made of stainless steel while the funnel is made of aluminum. Exhaust hood The exhaust hood is directly mounted above the fat fryer unit. A vacuum blower draws the ambient air in the frying area up through a flameprotected filter system, thus cleaning it mechanically. It consists of: exhaust hood made of stainless steel filter ambient air duct suspension on the frame/building structure provided by the customer lighting frame for the hood suspension upon request and for an additional price suction fan The exhaust hood, equipped with an extinguishing system that uses a foam agent may be installed upon request. Jam pump station The jam pump is station is an additional unit for the automatic fat frying system that guarantees that the injection medium is continuously available at the injection station. A container, supplied with compressed air by the customer's system, is connected to the pumping station. A pump conveys the injection medium into the pressure vessel. Finally, the injection medium is conveyed to the injection station by means of compressed air. Control system We changed our control system from the previous system based upon an Siemens Simatic S5 to the follow-up model S7. This allows us to include a series of new functions into the control design. The most noticeable innovation is the new model OP 17 operating panel. It is now possible to enter data for individual products such as frying time, frying temperature and the number of active turning stages.. When changing products, you just select the appropriate product at the control interface, which simultaneously sets the system parameters. You may also activate the password protection function to prevent unauthorized operation. By means of function keys, parameters can be changed and a logical text display shows errors and unit status data such as temperatures. Control system You can easily add equipment to the system by setting the software. The control system can be optionally equipped with a modem, thus offering the possibility of remote servicing and telephone error diagnosis.

Fat storage and filtering system The fat storage and filtering system consists of a 200 µm disc filter with manual cleaning, a I.D. 25 stainless steel line, pumps with a pressure-switch and the required oil storage tank. After production is finished, the oil is conveyed into the storage tank and the disc filter simultaneously cleans it of suspended particles. This allows for the easy cleaning of the empty automatic fat frying system afterwards. The oil is pumped from the storage tank into the automatic fat fryer before production is restarted. Furthermore, preheating the oil in the electrically heated storage tank shortens the heat-up time for the fat frying system. The containers are equipped with an electrical trace-heating system to make it easier to clean the storage tank. Since previously used heating rods are no longer necessary, there are not any tools mounted in the tank. The level control with a floater switch has been replaced with a load cell to make it function more reliably. The fat storage and filtering system can be easily retro-fitted into existing systems. We also offer the storage tank with various volumes, depending upon the size of the system. Oil storage tank

Combined cloth transfer system The combined cloth transfer system is a transport belt that subsequently transfers the dough pieces to a mesh belt for further transport into the fat trough. The empty cloths are collected below the transfer belt. Transferring the dough pieces to a mesh belt significantly reduces the amount of flour introduced into the fat trough, thus making it possible to extend the usability of the frying fat. We offer the combined cloth transfer for all automatic unit sizes. A special design is a divided cloth transfer, recommended for large systems. The pieces are transfered with this design using two transfer sheets each. It is possible to retro-fit existing systems with cloth transfer without an intermediate belt. Automatic frying systems for medium-sized and large industrial companies In addition to systems for retail companies, REIMELT manufactures fat frying systems and complete production lines for medium-sized and large industrial companies. The capacity of these systems ranges from 3,000 to 8,000 pieces per hour with a frying time of approximately 5 minutes. We have supplied systems with an output of 20,000 to 40,000 pieces/hour with frying times of approximately 2 minutes for customers in Great Britain and the United States. These systems can be heated in a variety of fashions depending upon the energy carrier. Beyond electrical heating, industrial systems may also use steam or thermal oil. Furthermore, we can design and implement entire production lines integrating other equipment from REIMELT. We design these systems together with the customer according to his requirements.
