Check that the correct button has been selected for the number of heads / fillets that you will be cooking Always heat the oil while you are breading and racking chicken so that the cooker is ready when you are. Check Display for "Drop": Put a cover rack into slot above the top rack of chicken to stop pieces from floating while cooking. Insert the basket handle into the basket. Close the Lid: Carefully close the lid. Push hard on cross arm to catch safety latch. Turn spindle clockwise until tight and the red spindle knob is lined up with the red knob. Start Cooking Cycle: End Cooking Cycle: DO NOT try to turn spindle on 4-head until the pressure gauge shows no pressure; and DO NOT open drain valve until AFTER removing chicken from the cooker. You can get burned, break the locking system, or damage the equipment. Press button for number of heads of chicken to be cooked. Make sure countdown timer has started. Do not press any other button until cook cycle has finished. Wash hands with warm water and use antimicrobial soap. 1 minute before the end of the cook cycle, take required quantity of hot bun trays and racks from upright holding cabinet and put onto racking table. Slowly turn spindle anticlockwise to release remaining pressure. Continue turning until spindle stops. Push down on cross arm, pull up on latch, and then lift lid carefully. Wipe down inside lid with blue/green Remove basket and hang onto rim to drain for 15 seconds. Press the button under flashing light so that display reads Fltr. Rack Chicken: Put basket on racking table and rack chicken bone down. Code date for 90 minutes using a Hot and Fresh tag. Load from bottom position upwards, with thighs pointing towards the back on one rack, and pointing towards you on the next rack. Put a cover rack into the slot above the top rack to stop chicken from floating during cook cycle. Only load cooker once breading is completed. Close the Lid: Press button for number of heads of chicken to be cooked. Make sure countdown timer has started. Do not press any other button until cook cycle has finished. Wait for the pressure to drop before opening the lid. Open Lid and Drain Chicken: Clean Cooker: After each round remove crackling ring and brush elements with an L-shape Teflon brush. Filter oil at least twice daily, after midday peak and before closing. Refer to CSL for filtering oil. Wipe the outside surface with blue/green Check Display for "Drop": Slowly release the handle bar by lifting the handle up. Push down on lid using your hand. Release the latch. Lift handle, push it back, lower handle and lift the lid. Press flashing button to end cook cycle. Basket will stay on the lid. Drain for 15 seconds. Rack Chicken: Put 2 half racks onto solid bun tray. Mark with 90 minutes hold time. Racking Diagram (Holding): Stir oil using plugging tool to remove cold zones. Load racks of breaded chicken into basket. Using the drain hook, lower the clamshell/quarter rack basket slowly into cooker to stop oil from boiling over. Twist basket to properly put the basket in the cooker. Close the Lid: For Collectramatic Cooker: Refer: Africa KFC Product, Rack Original Chicken Hold the black bar and slide lid towards you into position over cooker. Turn the black handle anticlockwise to lock lid. Do not press the panel for cook cycle until the lid is fully locked as doing so will damage the gasket. Always use the black handled bar to open and close the lid. Never open or close the lid using the silver bar running across the front of the lid it might be hot. Start Cooking Cycle: Hold the handlebar with both hands, swing lid down onto cooker. Push the handlebar down, then pull the bar towards you to lock the lid. Wipe down outside surface with red/pink Record the number of heads cooked on MP and C. Never cook any product for less time or at lower temperature than the standard. Undercooking chicken can result in poor product and is a food safety risk. If cooking cycle is interrupted before cooking is complete, all product in cooker must be discarded. Do not open the lid until all pressure has been released from the cooker. If the lid is opened before the end of the cycle, hot oil can spray out and burn Team Members in the immediate area around the cooker. To release the lid, turn handlebar in clockwise direction. Use black handlebar to slide lid back to open position. Lift basket using drain hook. Put hook handle in lid-lock block to drain for 15 seconds. Press flashing button to end cook cycle. Cooker display panel will display Cool. Drain chicken for 15 seconds or the end product may be too greasy. Rack Chicken: If cooker is not immediately needed to cook another round, leave cooker in CooL mode. This keeps the oil at 121 C. When the next round is needed, press EXIT COOL and the HEADS button for the size round needed. Then bread and rack the chicken. The cooker should be at drop temperature by the time breading has been completed. Using the CooL mode will increase oil life because less heat is being applied to the oil. Leaving the cooker at drop temperature all of the time damages the oil and uses more energy. Wait until all pressure has vented before attempting to open the lid! NEVER try to open lid before cook cycle ends! Hot oil can severely burn you. NEVER open or close the lid using the silver bar running across the front of the lid. Always use the black handled bar to open and close the lid. Move basket to racking table and rack chicken bone down.
