BRAISING PAN DESIGN & CONSTRUCTION wash down hose on the Betterpan DBR- series Braising pans. Firex Braising pans meet the stringent requirements of CE, ETL, and NSF. They are also certified DNV ISO 9001, OASAS 18001 and DVGW 0085. Firex Braising pans use 304 stainless steel on the structural frame, exterior and cover. The cooking surface is also available in either stainless steel ("I") or a bimetal composition. Firex is the only manufacturer with this construction feature. Also, includes a 3 year warranty on parts and labor. Firex units are also IPX certified for complete wash-down, not just wipe-down, to assure a sanitized vessel. The optional sprayer attachment makes the cleaning process even more convenient. 2

COOKING MODES The versatile design of the Firex Braising pans allows you to take control of your products and cook in different modes, resulting in consistent results. Betterpan Easybratt Frybratt Braising Mode: Full power setting to braise, sear and caramelize at temperatures up to 482 F. Boiling Mode: Suitable for water cooking with a maximum temperature of 212 F, also with a timer program. Frying Mode: Suitable for cooking with oil with a maximum temperature setting of 383 F. Automatic and manual water filling controls are disabled in this mode for safety reasons. C-N Probe Mode: Used when precise finished product temperature is required by means of the optional food core probe. Requires setting the product temperature and the cooking temperature. Can also be programmed to hold the finished product at 149 F at the end of the cooking cycle. C-S Probe Mode: Best suited for delicate and slow cooking processes by using the optional food core probe and selecting a temperature differential between the product core temperature and the cooking surface. Can also be programmed to hold the finished product at 149 F at the end of the cooking cycle. The unit is simply controlled by a manual thermostat knob with temperature settings from 45 C 295 C on the electric models, or a numbered thermostat knob (1-7) which corresponds to a specific temperature on the gas models. The user has precise control over the product by setting the cooking temperature, product temperature and cooking time. Speed, duration and direction can also be programmed for the Multi-directional agitation, depending on the product being cooked. The Firex Betterpan is available in Pressure ( A ) versions as well, adding even more versatility and productivity. Through superheated steam, foods cook faster and use less water so retain natural color, flavor, minerals and vitamins. Pressure-cooking enhances the richness and natural flavors of food. This allows the Chef to use less salt, sugar, herbs and seasoning while achieving superior taste and lowering cost. Cooking time is reduced, less energy is consumed, which lowers energy costs. Firex is the only manufacturer to offer these as stock units. 5

FIREX 24/7 HACCP CONTROL STATION The Firex 24/7 Station is a HACCP control and monitoring center that can connect up to 10 units to a single computer and enables the user to monitor, control and record data as an integral part of a HACCP program. The 24/7 Station also allows the user to control cooking programs, recipes and data from on-site or via remote access. The 24/7 Station does not require discs, courses or handbooks for usage. It is a user-friendly system that allows you to download data whenever and wherever you are, by viewing the information online. 6

VESSEL FILLING Betterpan The Firex Betterpan series has an automatic water metering device mounted on the pillar of the unit. This allows the user to program the desired amount of water that fills the vessel. After the desired amount is entered, the display notifies the user of programmed and actual input amount. This ensures repeatable recipe consistency and increases kitchen efficiency. The Betterpan can also be equipped with an optional wash-down sprayer that is mounted directly to the unit for easier and more convenient cleaning. The Firex Betterpan is also IPX wash-down certified, assuring complete sanitation. Easybratt The Easybratt comes standard with an integrated faucet for filling and cleaning the braising pan. Frybratt The Frybratt has the option to add a double pantry faucet mounted on the top of the unit, with hot and cold water, for ease of filling and cleaning the unit. 7
