Cook Chill Menu Items Many menu items can be produced in Cook Chill equipment soups, sauces, stews, casseroles, salad dressings, cold salads, gelatins, pie fillings, whole meats, and many ethnic specialties. Mixer Kettles Any product that will flow can be cooked in a Mixer Kettle and pumped with a Food Pump into Cook Chill bags or pans. This produces consistently high quality food by: Mixing gently yet thoroughly while cooking to achieve the desired textures and flavors. Pumping product with a piston food pump to retain the shape and quality of the food. Cooking to the desired doneness and rapidly chilling to stop the cooking process and retain quality. Producing hot or cold recipes while maintaining food safety standards. Cook Tanks & TurboJet Meats and many other foods such as rice, potatoes and vegetables can be cooked in a Cook Tank or TurboJet. Both use a low temperature water bath to slow cook the vacuum packaged products.

Automatic temperature controls, combined with automatic steam heating and water cooling ensures that the product is mixed and cooked to exact specifications. All types of foods can be produced in Cleveland Mixer Kettles such as soups, stews, sauces, ground beef, salad dressings, cold salads, pie fillings and many more. TurboJet with Jib Crane With a Cook Tank or TurboJet, meats and other products are cooked slowly at a low temperature. This results in an average of 25% less shrinkage. It also produces a more moist and tender product (even with tough cuts of meat) while retaining natural juices and flavor. Simple to operate controls can be set to automatically cook and cool products during the day or overnight.

Tumble Chilling & TurboJet Chilling Metering Filling Station Tumble Chiller The Cleveland Metering Filling Station is an air operated, piston style food pump. It provides a gentle but efficient transfer of hot or cold food from a mixer kettle into a Cook Chill bag or pan without cutting or mashing the food. It is equipped with a variable volume control. A clipper and label dispenser can be mounted allowing the operator to seal, label and trim each casing in one swift motion. The Cycle-Matic is an automatic form-fill-seal machine for higher volume operations. It provides a hands free solution for packaging any hot or cold pumpable product (soups, stews, sauces, chili, salad dressings, etc.) into heat sealed pouches. This high speed food pump converts rolls of film into heat sealed pouches while automatically filling them. The pouch and portion size can easily be changed with the user friendly touch screen controls. Water bath chilling rapidly reduces the food temperature with a gentle tumble action without product damage. Fully automated controls assure correct chilling in the fastest possible time. Retherm & Serving Combination Oven/Steamer Convection Steamer Steam Jacketed Kettle Cook Chill food preparation allows for a safe, refrigerated storage shelf life of up to 45 days or even longer, depending on the product. Prepared and chilled foods are safely stored in a low temperature food bank (walk-in refrigerator) at a temperature of 28 F to 32 F. Refrigerating and not freezing the food provides many benefits easy handling of ready to heat menu items, improvement of food consistency and quality as well as energy savings. Nutritional attributes of food are not lost. Cleveland Range provides a wide variety of methods and equipment to heat Cook Chill foods to a safe serving temperature. Convection Steamers, Combination Oven/Steamers, Kettles, Tilting Skillets and other conventional cooking equipment can be used to bring foods to temperature.
