INTRODUCTION This manual contains all the required information to ensure that your new appliance is installed correctly and that you have all the information necessary to identify and order spare parts. It also contains comprehensive instructions for the user and for cleaning the appliance. To maintain peak performance, it is recommended that the appliance be regularly serviced and that when ordering spare parts, reference be made to the appropriate list quoting the Part No. and the description therein. THE FITTING OF A NON-STANDARD PART MAY VOID ANY GUARANTEE. All work carried out on this appliance during installation or servicing MUST be performed by a competent person and the connection of the appliance to the electricity supply MUST be carried out by qualified personnel in accordance, where applicable, with the relevant regulations. The siting of the appliance and the connection to the electricity supply must comply with the requirements of the FIRE PRECAUTIONS ACT 1971; the HEALTH & SAFETY AT WORK, ETC ACT 1974, the BUILDING STANDARDS (SCOTLAND) CONSOLIDATION REGULATIONS 1971. The installation MUST comply with the requirements of Local Authority Regulations and the wiring must comply with the latest I.E.E. Regulations. An easily accessible fused mains isolator must be fitted in the electricity supply. The details of the electricity supply will be found on the Data Plate, which is located on the rear of the flue upstand/splashback panel. INSTALLATION Important This appliance MUST be installed by a competent person in accordance with these and any other relevant regulations. The installation wiring MUST comply with the latest I.E.E. Regulations. WARNING: THIS APPLIANCE MUST BE ELECTRICALLY EARTHED. Before Installation Before commencing installation, remove all packaging materials from the appliance. It is suggested that any protective film adhering to the stainless steel panels should be left on until installation is completed. BUT THIS MUST BE REMOVED BEFORE COMMISSIONING OR OPERATING THE APPLIANCE. Check the appliance Data Plate (located on the rear of the flue upstand/splashback), to ensure that the appliance is suitable for the electricity supply available. Ensure that the floor upon which the appliance is to stand is level and capable of adequately supporting the weight of the appliance. TO COMPENSATE FOR SOME UNEVENNESS OF THE FLOOR, THE APPLIANCE FEET ARE ADJUSTABLE. THE FLOOR MUST BE FIRE PROOF. If it is not, or if any adjacent wall or surface is made of a combustible material, then the installer must ensure that the requirements of the LOCAL FIRE REGULATIONS are observed. Positioning Place the appliance in position allowing a minimum gap of 150mm (6") at the rear and at least 150mm (6") between the sides of the appliance and any adjacent wall. If the appliance is being suited then please refer to the separate instructions. The minimum distance between the top of the appliance and any overshelf or ceiling constructed of a combustible material must be 1525mm (60"). It is recommended that the appliance be sited below a ventilating hood, one preferably connected to an extractor system incorporating a grease filter. Important Note - Free-standing fryers MUST be secured to the floor, using the fixing holes in the flanged feet. Ensure that the appliance is level in two places - front to rear and side to side. To check the level it is recommended that a spirit level be placed on the fryer tank top. Level can be achieved by adjusting any or all of the screw in feet in each corner of the base. Installation (cont.) Electric Connection The connection should be made in electrical conduit, via a fused mains isolator on the wall adjacent to the appliance. The final connection MUST be made in flexible conduit so that the connections can be made at the rear of the appliance before it is moved into position. ENSURE THAT THE CONDUIT IS CLEAR OF THE FLOOR WHEN THE APPLIANCE IS IN POSITION. MLE30F-F A 230V, 50Hz, 1 Phase Supply is required, made through the 25mm conduit entry at the rear, suitably fused at an easily accessible fused switch isolator. MLE60F-F A 400V, 50Hz, 3 Phase, 4 Wire Supply is required, made through the 25mm conduit entry at the rear, suitably fused at an easily accessible fused switch isolator. LB-E30F-F A 440V, 50Hz, 3 Phase Supply is required, made through the 25mm conduit entry at the rear, suitably fused at an easily accessible fused switch isolator. Checking the Operation ALTHOUGH EVERY APPLIANCE IS TESTED AND SET BEFORE IT LEAVES THE FACTORY, IT IS IMPORTANT THAT THE INSTALLER RE-CHECKS CERTAIN FUNCTIONS BEFORE LEAVING THE SITE. 1) Ensure that there is an adequate amount of oil in the pan, and that the Operating Thermostat is set to the OFF position. 2) Switch on the electricity supply at the mains isolating switch, and check the green Mains ON neon lamp glows. 3) Switch ON the ON\OFF switch. 4) Turn the Thermostat to a low temperature setting until the amber neon glows. 5) Pivot the heating element assembly out of the pan and check that the safety micro-switch turns OFF the electricity supply to the elements (i.e. the amber neon will go out). 6) Replace the element assembly in the pan and check the elements are activated (i.e. the amber neon will glow), and the oil temperature rises. 7) Check that the Thermostat operates correctly. 8) On completion of the above tests, return the thermostat knob to the OFF position. 9) Switch OFF the electricity supply at the mains isolator switch. WHEN THE INSTALLATION IS COMPLETE, LEAVE THE INSTRUCTION MANUAL WITH A RESPONSIBLE MEMBER OF THE KITCHEN STAFF. Manual Part No: 930155-01 MD Electric Fryer - 12

USERS INSTRUCTIONS Important Note! The attention of the user is drawn to the fact that this appliance MUST be installed by a competent person in accordance with the latest I.E.E. REGULATIONS. See also the section of this manual referring to Cleaning and General Maintenance. Safety Note This appliance is intended for professional use and shall only be used by qualified personnel. Parts and surfaces of this appliance get hot in use. It is the responsibility of the kitchen supervisor to inform and warn every user and kitchen worker of this and, furthermore, to ensure those users wear and use protective clothing when operating the appliance. Should any adjustment or attention be necessary, you are advised to contact your nearest Service Engineer immediately. Users Instructions (cont.) Controls An isolating switch will have been fitted adjacent to the appliance to enable the power to be switched off when servicing work is being carried out. The isolating switch should also be switched off when the appliance is not going to be used for a long period, e.g. overnight. The green neon on the front of the appliance indicates that the isolating switch is turned ON, and that the appliance is ready for use. The thermostat fitted is also an "ON/OFF" switch, and operates through a temperature range of 90 C - 190 C. Turning the knob clockwise first switches the appliance "ON" and further allows the temperature of the oil to be set. The glowing amber neon indicates when the elements are on and when it goes out it shows that the desired oil temperature has been reached. Thereafter, the amber neon and elements will cycle ON/OFF. The fryer is fitted with a "Hi-Limit" (Override) Thermostat as a safety measure to prevent the oil overheating. If for any reason, the "Hi-Limit" thermostat operates, then the electricity supply to the elements is switched OFF. WARNING: The operation of the "Hi-Limit" thermostat indicates that there is a fault in the equipment And a competent service engineer should be consulted to rectify the fault and to reset the Hi-Limit thermostat. Operating Instructions WARNING: DO NOT OPERATE THE FRYER WHEN THE PAN IS EMPTY WE RECOMMEND THAT ONLY GOOD QUALITY VEGETABLE OIL IS USED AND NOT SOLID FAT. 1) Open the compartment door, ensure that the drain valve is fully closed and check that the cooking oil is up to the level indicated on the pan. The oil required to fill the pan to the level indicated is: 300 Fryer 21.4 litres (4.7 gallons) 600 Fryer 46.9 litres (10.3 gallon) 2) Turn on the electricity supply at the mains isolator switch, (the green neon will glow indicating power to the unit). 3) Switch On the ON\OFF switch. 4) Turn the thermostat knob clockwise to the desired temperature setting. The amber neon will glow now and the oil will heat up. Manual Part No: 930155-01 MD Electric Fryer - 14

To Turn Off 1) For short periods, turn the thermostat knob to the "OFF" position λ. 2) For longer periods, (or if the fryer is to be left UNATTENDED), turn the thermostat to the OFF position λ, the ON/OFF switch OFF the mains isolator switch. Cooking Instructions With the thermostat knob turned to the required cooking temperature, allow the oil to heat up for about 20 minutes before starting to cook. After each load is removed from the fryer always allow 2 1/2 minutes for the temperature of the oil to recover before the next load is put into the oil. The Frying Medium Ensure oil is always maintained at the level indicated. Good quality VEGETABLE OIL IS RECOMMENDED. The life expectancy of oils will be lengthened if they are filtered regularly - food particles not removed turn rancid and reduce oil quality. The life of the oil will also be extended if the temperature is turned down when the fryer is not in use. "Please note also, using old oil will reduce the flash point and therefore present a greater fire hazard and be more prone to surge boiling. Attention shall also be drawn to the effect of over-wet food and too large a charge on surge boiling". IF SOLID FATS are to be used, then it is essential to set the Operating Thermostat to a LOW temperature setting below 100 C for a few seconds then turn OFF. Repeat this procedure until all the fat is melted. FAILURE TO ADOPT THIS PROCEDURE MAY RESULT IN A PAN FIRE. Chip Frying The recommended load for each basket is 1.5 / 2.0 kg for each basket. This will fill the basket about 2/3rd full and it is important that this load should not be exceeded. Fish Frying Cook fish by free floating them. Seven or eight 100g pieces in the 300 fryer or 12-14 pieces in the 600 Fryer may be cooked at one time. Slide the fish into the pan slowly to avoid splashing of the oil and prevent the fish sinking and sticking to the base of the pan. Manual Part No: 930155-01 MD Electric Fryer - 15

Use good quality oil, which has a high breakdown temperature. Use only clean oil and strain daily. Maintain the oil at the correct level. Do not start to fry until the oil has reached the correct temperature. Do not exceed the temperature of the oil as recommended by the supplier. Do not overload the fryer. Remove the crumbs or pieces floating on the surface of the oil. When using frozen foods follow the food manufacturers cooking instructions carefully. Users Instructions (cont.) Cleaning DISCONNECT THIS APPLIANCE AT THE MAINS ISOLATING SWITCH BEFORE CLEANING OR SERVICING. WARNING: THIS APPLIANCE MUST NOT BE CLEANED BY A SPRAY OR JET It will be found that it takes less time and effort if appliances are cleaned every day, particularly while they are still warm and before grease and spillage are burnt on. PROPRIETARY OVEN CLEANER MUST BE USED WITH CARE. THEY ARE HIGHLY CORROSIVE AND MAY CAUSE DAMAGE TO SURFACES AND COMPONENTS. Clean stainless steel with soap and water or a mild detergent solution. Rinse and dry thoroughly. DO NOT USE CAUSTIC OR ABRASIVE CLEANERS, DO NOT USE ABRASIVE PADS. Daily Cleaning. 1) Turn the mains isolating switch to OFF. 2) Screw the drainpipe into the drain valve. Place a suitable container with a filter below the drain tap and open the tap. Note! The oil will flow more freely if it is still warm, but on no account should the oil be filtered at frying temperatures. 3) Remove the frying basket and also the strainer from the bottom of the pan and clean these thoroughly at the sink. 4) Clean the inside of the pan with a clean cloth, taking care not to damage the two thermostat phials in the pan. 5) Refit the strainer in the bottom of the pan and close the drain tap. Weekly Cleaning. 6) Repeat stages 1 to 3 above. 7) Close the drain tap, fill the pan with a mild detergent solution and bring to boil. 8) Drain off the solution and wipe all surfaces clean. 9) If the fryer is to remain out of use for some time after cleaning with water, ensure that the pan is greased immediately after to prevent formation of rust. A coating of cooking oil is best. 10) If the fryer is to be re-used after cleaning, replace the strainer. Ensure the drain tap is closed, remove the drainpipe and renew the frying medium, maintaining the correct level indicated on the back of the pan. IMPORTANT! SERVICE AND MAINTENANCE INSTRUCTIONS ENSURE THAT THE ELECTRICITY SUPPLY TO THE APPLIANCE HAS BEEN TURNED OFF BEFORE DISMANTLING ANY COMPONENTS. Maintenance MUST only be carried out by a competent person. Routine Maintenance Procedure 1) Turn ON the electricity supply to the appliance at the isolator switch and check that the green neon is alight. 2) Switch ON the ON/OFF switch together with the thermostat and check that the amber neon is alight and the elements are working. 3) Lift up the elements and check that the amber neon goes out, to indicate the power supply to the elements has been cut-off. 4) Turn the electricity supply OFF. 5) Check that the door movement and door catch is satisfactory. 6) Check that the phial and capillary on the Thermostat and Override Thermostat are located correctly and show no sign of damage. Check calibration. 7) Remove the control panel and control box cover. Examine the wiring for excessive overheating, ingress of moisture or grease and that the terminations to the thermostats and contactor etc., are secure. 8) Replace any panels or components removed. 9) Turn ON the electricity supply. 10) Repeat steps 2 & 3 to ensure the appliance still operates correctly. Removal of Elements 1) Drain the fryer of oil and remove the Batter Plate. 2) Lift up the elements to gain access to the Cover Plate securing screws. 3) Remove the screws and withdraw the Cover Plate. 4) With the elements placed back in the tank, undo the supply cables and remove the elements from the mounting plate. 5) Replace by reversing the above procedure. Removal of Micro-Switch 1) Working from the rear of the appliance, remove the fixing screws securing the upper rear panel and remove. 2) Lift up the plastic cover on the micro-switch and remove the wires. 3) Remove the Batter Plate and lift up the elements to gain access to the two micro-switch securing screws. 4) The micro-switch can now be removed. 5) Replace by reversing the above procedure. Removal of Operating Thermostat 1) Drain the fryer of oil and remove the Batter Plate. 2) Pull off the control knob and remove the control panel, secured by two screws. 3) Remove the wires from the thermostat (noting their positions). 4) Remove the thermostat from the control panel, secured by two screws. 5) Open the compartment door to gain access to the thermostat phial gland nut. Undo the gland nut and withdraw the phial from the tank. 6) Replace by reversing the above procedure. ENSURE THAT THE THERMOSTAT CAPILLARY IS NOT KINKED AND THAT THE PHIAL IS CORRECTLY LOCATED IN ITS HOLDER. Removal of Override Thermostat 1) Drain the fryer of oil and remove the Batter Plate. 2) Pull off the control knob and remove the control panel, secured by two screws. 3) Remove the wires from the Override Thermostat (noting their positions). 4) Open the compartment door to gain access to the Override Thermostat fixing nut and remove Override Thermostat. Undo the gland and withdraw the phial from the tank. 5) Replace by reversing the above procedure. Removal of Neon s 1) Replace by reversing the above procedure. 2) Pull off the wires to the neon s (noting their positions). 3) Remove the locking nut and withdraw the neon from the control panel. 4) Replace by reversing the above procedure. Removal of Fuse 1) Working in the compartment, the fuse is within the box mounted on the RH side. 2) Remove the two fixing screws securing the box and remove. 3) The fuse can now be removed or replaced. Removal of Contactor 1) Working in the compartment, the Contactor is within the box mounted on the RH side. 2) Remove the two fixing screws securing the box and remove. 3) Remove the wires from the Contactor (noting their positions) and undo the fixing screws. 4) Replace by reversing the above procedure. VISCOUNT CATERING LIMITED WARRANTY COVER The Company offer twelve months warranty with each new piece of equipment subject to our normal conditions of sale and will undertake responsibility for warranty subject to the additional following conditions. Notice of the defect/damage is given within 48 hours of breakdown or in the case of damage four days from the date of despatch and the manufacturer given adequate opportunity to examine the goods in order that appropriate action can be taken. The Company will not be obliged to repair or replace any goods if after examination the defect/damage is found to be through accident, misuse, neglect, incorrect installation or maintenance by other than approved engineers, or any other cause beyond the reasonable control of the manufacturer. EXCLUSIONS TO WARRANTY Normal routine maintenance is not covered and the warranty specifically excludes any problems, which are related to scale caused by hard water and the cleaning of pilot jets. Also excluded from the warranty are the following consumable items. Tap washers and springs, gaskets, oven lamps and indicating lights, door seals and any other perishable parts.
