Taylor PH61 Cleaning every 14 days Drain the Syrup Lines Remove each syrup feed tube from syrup bottle and let excess syrup drain from the feed tube back into the syrup bottle. When flow of syrup from the feed tube stops place feed tube in an empty bucket. Hold the corresponding syrup valve in the syrup bottle. Select the corresponding flavour from the control panel. Press the CAL key on the control panel to enter the Calibration mode. Press the WASH key on the control panel to pump the remaining syrup from the line back into the bottle. When no more syrup flows from the valve press the CAL key to stop the syrup pump. To avoid contamination, cover the syrup containers. Repeat this procedure for the three remaining syrup flavours, one at a time. Sanitise Syrup Lines & Valves Prepare 9.5 lt of fresh Kay-5 sanitiser solution - Add one packet Kay-5 sanitiser to 9.5 lt of warm water. Fill the squeeze bottle with sanitising solution. Place the four syrup feed tubes in the bucket of sanitiser. Select a flavour from the control panel and hold the corresponding syrup valve over an empty bucket. Press the CAL key on the control panel to enter calibration mode. Press the WASH key on the control panel to start the flow of sanitising solution through the syrup line. After the WASH key has been pressed, press and hold the corresponding black prime button in the syrup cabinet until all of the syrup has been flushed from the line and only sanitising solution flows from the line. Press the CAL key on the control panel to stop the flow of sanitising solution. Repeat sanitising procedure for remaining 3 syrup flavors. Remove the syrup feed lines from the bucket of sanitiser and allows them to drain. Press CAL & WASH to drain each pipe completely. Wipe the lines thoroughly with a blue/ green sanitised cloth. Replace all of the syrup feed tubes into the syrup containers. Ensure syrup lines match their respective flavors. Secure the feed tubes onto the bottles with the white screw caps. Disassemble the syrup valve. To remove the syrup valve cap, push down and turn counter-clockwise. 2014-03-07 2014 Yum Restaurant Services Group, Inc. 1 of 8

Remove the valve plunger out of the syrup valve by pressing the CAL and WASH keys. Be sure to keep your hand behind the plunger as the air pressure will force the plunger out. Press the CAL key to stop the airflow. Rinse the syrup valve body thoroughly with sanitising solution. Using the white end of a double ended brush, scrub the inside of the syrup valve body and syrup line to remove any residual particles. Using a clean sanitised blue/green cloth gently wipe any syrup and lubricant from the plunger. Lubricate the two o-rings on the plunger lightly with Taylor Lube HP. Re-install the plunger into the valve body and install the cap and spring assembly. Repeat for remaining 3 syrup valves Drain Mix & Release Pressure Discard the drained product. Remove Pump, Rinse Hopper & Barrel Remove the hopper lid, agitator blade, pump clip, and the assembled pump. Place parts into the parts tray as they are removed. Pour 8 lt of clean luke-warm water into the hopper. Using the white hopper brush to scrub the hopper, the mix level sensing probe and the outside of the agitator housing. Using the white brush (no 3) to brush the mix inlet hole. With a bucket under the door spout, press WASH. Open handle on freezer door to drain all of the rinse water and close the handle. Press WASH to stop the wash mode. Repeat this procedure using warm water (3-4 buckets), until the drained water is clear. Press AUTO to cancel automatic Delime operation. Press WASH to stop the wash mode. Switch Machine OFF Place the power switch in the OFF position. (Mix out & Mix low will flash) Be sure the power switch is OFF. The display will read "Power switch". Display will start counting time down from 5:00 minutes After 5 minutes display will say "unit cleaned" Remove Parts Place all parts into the parts trays as they are removed. Inspect o-rings and gasket for nicks, cuts, or holes. These rubber parts must be in good condition for the machine to operate correctly. Use extreme caution when removing the beater assembly, the scraper blades are very sharp and may cause injury. From the freezer door remove: 1. The spinner blade from the bottom of the door spout by lifting up the locking collar on the spinner coupling and pulling down the blade 2. The 4 x stud nuts, freezer door and freezer door o-ring from the inside of the door. 3. From the freezer door, remove the front bearing, pivot pin, draw handle and draw valve spinner assembly. 4. Disassemble the draw valve spinner assembly. Remove the spinner by grasping the draw valve and pulling the spinner out. Remember to remove the spinner shaft seal inside the draw valve using the special tool (the seal install - remove tool). 5. Remove 2 x o- rings from the draw valve as well as the o-ring from pivot pin. From the freezer cylinder remove: 1. Beater assembly with scraper blades - remove the scraper blades. 2. From the back of the freezer cylinder, remove the drive shaft with the drive shaft seal - separate drive shaft seal from the drive shaft. From the pump cylinder remove: 1. The retaining pin, mix inlet adaptor (red), valve cap and the piston. 2. Remove the black pump gasket from the adaptor. 3. Remove the o-rings from the piston and valve cap. Remove the check ring and 2 x o-rings from the feed tube ends. Using the part remover tool, remove the drive shaft from the hub in rear wall of hopper. Remove the 2 x small o-rings and from the driver shaft and 1 x large o-ring from the drive shaft crank. Replace worn o-rings. Use o-ring remover to remove all o-rings. If there is more than one o-ring to be removed always remove the rear one first. This will allow the o-ring to slide over the forward o-rings without falling into the open grooves Do not use a knife 3 Step Cleaning because that will damage the o-rings. 2014-03-07 2014 Yum Restaurant Services Group, Inc. 3 of 8

Ensure that the sinks are cleared and cleaned before cleaning of the machine parts is to commence. Nothing else may be cleaned in them while cleaning of the machinery parts is in process. Take all disassembled parts to sink. Clean o-rings and small parts separate in an inset during the Deliming and 3-step cleaning to prevent them from getting lost through the drain Use the correct Taylor brush to clean each part. Be sure to brush all surfaces and holes (especially holes in pump and handle hole in freezer door.) Before cleaning, remove white/yellow milkstone from all the parts. Dilute 2 packets of Delimer in 8 lt of water in a bucket and mix well - pour over the parts in the sink. Prepare another 8 lt of Delimer solution and add to the parts in the sink. Soak for 5 minutes and then scrub with brush set. Do not soak any of the rubber parts in Delimer solution for longer than 5 minutes. If the build up on the rubber parts is extreme, replace all rubber parts. The machinery parts (including the parts trays) are to be washed with Kay Yellow Dishwashing Liquid, rinsed in the second sink and sanitised in the third sink. Prepare 9.5 lt of fresh Kay-5 sanitiser solution - Add one packet Kay-5 sanitiser to 9.5 lt of warm water. Dip the black brush in Kay-5 sanitiser solution and clean the rear shell bearing at back of freezing cylinder. Use the black brush dipped in Kay-5 sanitiser solution to clean the drive hub opening in rear wall of hopper. Rinse the brush in the sanitiser solution after each cleaning step. Using a clean, sanitised blue/green cloth, wipe all outside surfaces. Remove the left & back drip pans once the brush cleaning is completed to prevent water from running down into the machine. Wash, rinse, sanitise and air dry. If drip pans are filled with an excessive amount of mix, it means that the drive shaft seal(s), or o-ring(s) should be replaced or properly lubricated. Assemble & Lubricate the Door & Beater Lubricate groove on the drive shaft. Slide the drive shaft seal over the small end of the drive shaft. Generously lubricate drive shaft seal inside and the shaft. Do not lubricate the square end of the shaft. Once sanitised, place all parts onto the dedicated areas on trays 1 and 2. Take the trays with the parts to the machine to assemble. (The hopper lid, agitator blade, splash shield and drip tray do not fit onto the trays.) 2014-03-07 2014 Yum Restaurant Services Group, Inc. 4 of 8

Replace the drive shaft seal every 3 months or sooner if the seal is worn. To ensure that the mix does not leak out of the back of the freezing cylinder, the middle section of the boot seal should be convex or extend out from the seal. If the middle section of the boot seal is concave or extending into the middle of the seal, turn the seal inside out. Insert drive shaft through rear shell bearing in freezing cylinder and engage the square end firmly into the drive shaft coupling. Turn & push it until it locks into place. Check the scraper blades for any signs of wear. If any nicks are present, replace blades. If blades are in good condition install scraper blades over pins on beater assembly. Place both scraper blades over holding pins on the beater. Hold beater assembly with both hands holding the scraper blades in place Insert beater assembly into freezing cylinder Must be flushed with freezer cylinder Assemble draw valve spinner assembly. Inspect draw valve o-rings for nicks or cuts. Replace if nicked or cut. Slide the 2 o-rings into the grooves of the draw valve & lubricate Lubricate the outer diameter of the spinner shaft seal. Fill the cups on each end of the seal with lubricant Insert the spinner shaft seal into the bottom of the draw valve as far as it will go using the tool. The spinner shaft seal should fit into the seal groove located inside the draw valve cavity. Lubricate the smaller end of the spinner. Squeezing the split end together, insert the spinner through the metal opening of the draw valve until it snaps in place. Lubricate the inside of the freezer door spout, top and bottom. Insert & align the draw valve spinner assembly into the shake door Install and lubricate the pivot pin o-ring. With the stopping tab of the draw handle facing down, slide the fork of the draw handle into the slot of the draw valve. Secure the draw handle with the pivot pin. Place the freezer door o-ring into the groove on the back of the freezer door. DO NOT lubricate the o-ring. Lubricate the outside diameter of the front bearing & slide the front bearing into the door hub. Install the shake freezer door by aligning it over the 4 studs. Install the stud nuts equally in a crisscross pattern to ensure the door is snug Do not over tight screws - use only hands to tighten screws - no tools. Lubricate the shaft of the spinner blade up to the groove. Insert the spinner blade shaft into the center of the spinner, & through the draw valve cavity until the shaft appears at the top of the draw valve. The spinner blade must be aligned and engaged to the driven spinner at the bottom Raise the locking collar of the spinner coupling and insert the spinner shaft into the cavity of the coupling until the locking collar can drop into the locked position. Snap the restrictor cap over the end of the door spout Install the syrup valve retainer & clips Slide short drip pan into the hole in the rear panel of machine Slide 1 long drip pan into the front of machine Place the front drip tray and splash shield onto the drip tray shelf, under the door spout Pump Assembly Slide red o-ring into groove of piston. DO NOT lubricate the o-ring. Apply a thin layer of lubricant to inside of pump cylinder on both sides. Insert piston into the metal pump (put the side with the o-ring in last). If piston is installed upside down, the pump won't fit inside the machine. Slide the o-ring into the groove of the valve cap. DO NOT lubricate the o-ring. Slide the black pump gasket into the holes on the valve cap. DO NOT lubricate the gasket. Insert the valve cap into the hole in the adapter. Insert the mix inlet assembly into the metal pump cylinder. Slide retaining pin through the cross holes located at one end of the pump to hold the pump parts in position. The head of the retaining pin should be at the top of the pump when installed. Slide black check ring into the groove of the feed tube. Slide the two red o-rings onto the grooves on the two ends of the feed tube. Lubricate the two ends of the feed tube. Slide the large drive crank o-ring and the two smaller drive shaft o-rings into the grooves on the drive shaft. (use the o- ring tool) Thoroughly lubricate the o-rings and shaft. DO NOT lubricate the hex end of the shaft. Install the hex end of the drive shaft into the drive hub at rear of hopper. Sanitise Place clean agitator blade, pump assembly, pump clip and cotter pin and feed tube in the bottom of the hopper to sanitise. Prepare 9.5 lt of fresh Kay-5 sanitiser solution - Add one packet Kay-5 sanitiser to 9.5 lt of warm water. Pour the sanitiser solution over all parts in bottom of hopper. Let solution flow into the freezing cylinder. Prepare another 9.5 lt of Kay-5 sanitiser solution and add it to the hopper. Using the white hopper brush, clean the level sensing probe in the hopper, the hopper sides, the inlet hole, the pump, the pump clip, the feed tube, and the cotter pin. Wait at least 5 minutes before proceeding with these instructions. Install Pump Assembly & Sanitise Install pump assembly at the rear of the hopper. To position the pump on the drive hub, align the drive hole in the piston with the drive crank of the drive shaft. Secure pump by slipping the pump clip over the collar of the pump, ensure the clip fits into the grooves in the collar. Place agitator blade on agitator drive. Take the feed tube and cotter pin out of the hopper and place one side to install later. Ensure screen reads "UNIT CLEANED". Prime Syrup Lines Syrup lines must be properly primed with syrup to eliminate air in the line before the calibration procedure is performed. Prime the syrup line by holding the syrup valve over an empty bucket. Push the corresponding syrup flavour key. The light should be illuminated. Press the CAL key. Press the WASH key to start the pump and to prime the syrup line. There is a black prime button mounted at the top of the syrup cabinet that speeds up the syrup priming process. After the WASH key has been pressed, press and hold the corresponding black prime button in the syrup cabinet until the syrup flow out of the line is consistent and all air bubbles have been removed from the line. Press the CAL key again to stop the pump. Calibrate Syrup Lines Push the corresponding syrup flavour key. The light should be illuminated. Hold the small portion of the measuring cup under the syrup valve. Press the CAL key. Press the AUTO key to start the pump and to dispense syrup for 5 seconds. The pump will automatically stop. If the amount of syrup delivered is within specification the syrup pump is calibrated. (refer to CSL, Milkshakes - Syrup Calibration for the correct dosage / flavour) If the calibration run "over" dispensed syrup, turn the corresponding syrup adjustment knob counter clockwise to decrease the syrup flow. If the verification run "under" dispensed syrup, turn the corresponding syrup adjustment knob clockwise to increase the syrup flow. Repeat calibration process until the correct amount off syrup is dispensed. Put the syrup valve back into the corresponding flavour port and secure Place power switch in the ON position. Press the WASH key. Allow the sanitising solution to agitate for a few seconds. This will allow the sanitising solution to come in contact with all areas of the freezing cylinder. With a bucket under the door spout, open and close the draw valve six times. With the calibration cup over the mix inlet adapter opening, press the PUMP key to sanitise the inside of the pump. Press to PUMP key again to stop the pump. Open the draw valve and draw off all remaining sanitising solution. Press the WASH key to stop the wash mode. Discard Syrup in calibration cup. Clean and dry the calibration cup after every session. Repeat calibration for the remaining 3 flavours. Fill with Milkshake Mix With a bucket under the door spout and the draw handle open, pour 10 lt of Milkshake mix into mix hopper and let it flow into the freezing cylinder to drain any remaining sanitiser solution through the spout. Pour the milkshake mix into the front end of the hopper to ensure that all sanitised water is properly drained from the machine. When only mix is flowing from door spout, close the handle. Check Cup Fill Level The portion control sensor located under the cup holder can be adjusted to fill the cup to the desired level. If the fill level is too low, or the cup is overfilling, it may be necessary to adjust the sensor position. (Refer to CSL, Milkshakes, for the cup fill levels) Loosen the locking nut on the screw adjuster below the sensor. Turn the adjustment screw clockwise to raise the fill level, or counter clockwise to lower the fill level. Once the desired fill level is achieved, tighten the locking nut. Wash & sanitise hands. When mix stops bubbling down into the freezing cylinder, Test to see if the pump is working: Hold a measuring cup in front of the mix feed outlet and press PUMP - mix should be spurting through the mix feed outlet; Press PUMP again to stop the pump. Insert the outlet end of the mix feed tube into the mix inlet hole in the mix hopper. Place the inlet end of the feed tube into the outlet fitting of the pump. Secure with cotter pin. Fill hopper to maximum level with Milkshake mix. Place cover in position on hopper. Slide the cup holder back over the sensor block.
