Lighting A very important function of the hood, besides purifying the air, is that of creating ambiance and lighting the cooking area. 3 How the extractor hoods work. Most cooker hoods operate in both duct out mode and recycling mode. Duct out mode is where the air is sucked up the hood, fats are trapped by the grease filters and then odours, fumes and condensation are expelled out through an exterior wall via the ducting pipe. Recycling mode, sucks the air up into the hood, fats are trapped by the grease filters, the air then passes through charcoal filters which absorb the cooking odours, the purified air is then recirculated back into the room. Which system should one choose? The choice depends firstly on whether it is possible to install a duct out pipe system, and secondly on energy saving considerations. Ducted out hoods The ducting out mode offers greater advantages in eliminating unpleasant odors, as well as steam and condensation, but requires specific installation with pipe work and an exterior wall through which to expel the air. The shortest length of ducting pipes with the minimum amount of bends should be used to ensure optimum performance of the hood. All ducting outlets are 150mm diameter which also maximizes efficiency; anything smaller will reduce effectiveness and increase noise levels. Maximum length of ducting runs should be 4 metres one 90 bend; 3 metres and two 90 bends; 2 metres and 3 90 bends Please note that ducting must not be connected to any other existing ventilation or flue systems. If a ducted hood is to be installed into a room containing a fossil fuel burning appliance such as a gas or oil central heating boiler, then its flue must be of Style & Lifestyle Technologies the room sealed or balanced flue type. A ducted hood is not suitable for use in a room where any open flue is in use, as dangerous fumes of combustion can be sucked back into the room (appliances include central heating boilers, coal fires, log fires, gas fires, wood burning stoves etc). The above is a requirement of UK and European legislation and is in the interests of safety. Energy consumption is another consideration. While the hood is in operation it removes air from the room. If the room is heated centrally, then the warm air is removed, lowering the temperature and perhaps encouraging the heating system to work harder to maintain the required temperature. To further ensure maximum performance, the metal grease filters should be removed and washed in neutral detergent every 2 or 3 months depending type and amount of cooking. Synthetic filters should be changed approximately every month. Recycling Mode In the recycling mode, air is sucked up into the hood, fats are trapped by the grease filters, the air then passes through charcoal filters which absorb the cooking odours, the purified air is then recirculated back into the room. Sometimes it is impossible to fit a ductable system, so using the hood in recycling mode is the only option. This is the simplest system to install as no additional pipe work is required. To guarantee continued maximum efficiency regular maintenance is required; removal and cleaning of the metal grease filters in neutral detergent should be carried out every 2 or 3 months depending on type and amount of cooking ; if they are synthetic then they should be changed approximately every month and the charcoal odour filters should be changed about every 2 or 3 months. Choosing the appropriate extraction power of the hood (airflow) generally depends on the size of the kitchen and the kind of cooking that takes place there. The air capacity of a hood is expressed in cubic meters/hour (m3/h), and represents the quantity of air which the hood is able to extract at maximum speed, measured according to international standard IEC EN To calculate the appropriate airflow level for your kitchen, multiply the volume of your kitchen by ten. For example: if your kitchen is 3 meters wide, 5 meters long and 2.7 meters high, your calculation would be: (3,00x5,00x2,70) x 10 = 405 This would mean, a hood with an extraction of 400 m 3 /h. or more will achieve efficient ventilation of the room. If, you often cook fish, fried foods, grilled meat or other dishes which produce a large quantity of smoke, grease and odours, we advise that you select a hood with an even greater air capacity.
