3 LIMITED WARRANTY Subject to the terms and conditions of this Limited Warranty as herein stated, Equipment and Parts purchased new, from an authorized representative, are warranted by the Manufacturer as to defects in material or workmanship for a period of twenty-four (24) months from the date of installation, provided, however, that with regard to labor costs in connection with this warranty, see below. All installations must be made by a qualified kitchen equipment service agent in accordance with all applicable codes and/or regulations in the jurisdiction in which installed. Limited warranty coverage is extended to the original owner only and is void if the unit is resold. During the Limited Warranty period, units will be replaced or reconditioned, at manufacturer s factory, any part or parts of this unit which manufacturer s inspectors judge defective, provided the unit has been properly installed, subjected to normal usage, and operated and serviced properly. This Limited Warranty does not cover cosmetic damage, and damage due to acts of God, accident, misuse, alteration, negligence, abuse of the unit or the use of unorthodox repair methods. All parts replaced under this Limited Warranty carry only the unexpired term of this Limited Warranty. Limited Warranty service may be furnished only by an authorized service agents. If Limited Warranty service is requested, factory-authorized service representatives will be dispatched to repair, recondition, replace or inspect subject units with such labor being rendered without cost to owner for twenty-four (24) months from the date of installation. Otherwise, service, including labor and transportation charges or other expenses, in connection with the removal or installation of any part or parts supplied under this Limited Warranty, are specified on the original sales contract between the purchaser and the authorized representative. Failure to use manufacturer OEM replacement Parts and Filters may void the factory warranty. The Manufacturer reserves the right to change or improve its equipment and parts in any way without obligation to alter such equipment or parts previously manufactured. The Manufacturer makes no further warranties, express or implied including implied warranties of merchantability or fitness for a particular purpose, and has no other obligation or liability not specifically stated herein. Repair or replacement as provided under this Limited Warranty is the exclusive remedy. Manufacturer shall not be liable for any incidental or consequential damages for breach of any express or implied warranty on this product, except to the extent prohibited by applicable law. Any implied warranty of merchantability or fitness for a particular purpose on this product is limited in duration to the duration of this limited warranty. Used equipment or parts, or equipment and parts, not purchased from an authorized representative, carry no warranties, express or implied.

7 Safety KD-GAL FRYER Safety Safety Overview The instructions contained in this manual have been prepared to aid you in learning the proper procedures for installing, operating and servicing your new Model KD-GAL Series Fryer. Throughout this manual, safety precautions are identified through the use of the safety alert symbol and three signal words: DANGER, WARNING and CAUTION. All safety alert information precedes the tasks to which they apply. Suggested, recommended, or other noteworthy information is identified through the use of NOTES, or be noted as IMPORTANT!. Additionally, certain words are used to indicate a specific meaning or to add emphasis as follows: Shall: understood to be mandatory. Should: understood to be advisory. May: understood to be permissive. Will: indicates a future event or condition to occur. Hazard Alert Symbols are used in conjunction with key words DANGER, WARNING, and CAUTION to alert user to potential personal injury hazards and/or poor operating practices. These will immediately precede precautionary measures pertaining to such hazards or practices. Adhere to all safety messages which follow these symbols to avoid possible injury, or even death. Failure to do so may also void the factory warranty. Indicates an imminently hazardous situation which, if not avoided, will result in serious personal injury, even death. Indicates a potentially hazardous situation which, if not avoided, could result in serious injury, even death. Indicates a potentially hazardous situation which, if not avoided, may result in minor to moderate injury. This notification is also used as an alert to unsafe practices. If used without the safety alert symbol, indicates a potentially hazardous situation which, if not avoided, may result in equipment and/or property damage, and may void the factory warranty. 8 KD-GAL FRYER Safety Specific Safety Precautions For your safety, please observe the following precautions when operating or servicing the. Adhering to the following important safety information will help to prevent personal injury and/or damage to the equipment. Before cleaning or performing maintenance, place power switch in the OFF position. Unplug power cord or turn OFF power at the electrical panel supplying power to remove all power from the appliance. Close valves on the gas supply line and place Fryer gas valve in the OFF position. DO NOT wash down the Fryer interior or exterior with water from a spray hose. Failure to comply with DANGER notices will result in serious injury, even death; or damage to equipment and/or property and may void the factory warranty. Prior to installation, consult a qualified electrician to ensure that installation will comply with all electrical requirements and codes. The unit must be adequately and properly grounded. Improper grounding may result in electrical shock to the user. Always refer to local electrical code to ensure proper grounding of this or any other electrical equipment. Check the rating label on the unit to determine the proper power supply required. Always consult with an electrician, or other qualified service technician, to ensure that circuit breakers and wiring are of sufficient rating and gauge to power this equipment. A Wiring Diagram has been provided with the unit as an aid for technicians. The unit must be installed and electrically grounded in accordance with local codes, or in the absence of local codes, in accordance with the National Electrical Code, NFPA 70. Improper installation, adjustment, alteration, service or maintenance could result in serious injury, even death; equipment and/or property damage; and will potentially void the factory warranty. DO NOT use or store flammable liquids, or materials that produce flammable vapors, in the vicinity of this or any other appliance! DO NOT for any reason stand or step onto the top of the appliance, and DO NOT allow other persons to do the same. Cooking oil in the fry pot can be in excess of 330 F (166 C) and bodily contact will cause extremely serious injury. Covers used to cover cooking vats/pots are not designed to, and WILL NOT, support the weight of a person. Failure to comply with WARNING notices could result in serious injury, even death; damage to equipment and/or property; and will potentially void the factory warranty. vi

9 Safety KD-GAL FRYER The appliance must remain in an upright (vertical) position. Exercise care when removing wooden crate framework and the unit from shipping pallet. DO NOT operate the appliance, unless its components and their intended functions are fully understood (see Section 3). Once you have read and fully understand Section 3, closely follow the instructions presented in this Operations Manual in order to prevent equipment damage, or malfunction. Parts of the Fryer become very HOT during operation! Temperatures inside the cabinet may exceed 150 F (65.5 C). Exercise caution during operation, when loading/unloading food products, and when cleaning and servicing. To avoid personal injury, it is recommended that thermal protective gear (gloves or mitts) be worn while tending the appliance. Before operation, be sure the Fryer is positioned in a stable, safe location with the casters in the locked position. Some jurisdictions may require special anchoring for this type appliance; check local code. Allow the appliance to cool down at least minutes before cleaning or servicing. This appliance is not intended for use by persons (including children) with reduced physical, sensory, or mental capabilities, or lack of experience and knowledge, unless they have been given adequate instruction and/or supervision concerning its use by a person responsible for their safety. Children should not be allowed to play with, or around, this appliance. Prior to sale, cooked food products must be maintained at a minimum temperature of 150 F (65.5 C), or in accordance with governing health regulations. Failure to comply with CAUTION notices may result in minor to moderate personal injury, damage to equipment or property, and potentially void the warranty. Components exposed on the Control Panel surface are impact-sensitive. To avoid damage and maintain proper operation, exercise care when working around, or using rolling carts or tables, near the appliance. DO NOT install the unit near combustible walls and materials. Failure to maintain safe distance may result in fire. When cleaning the appliance: - DO NOT steam clean. - DO NOT use products containing chlorine, or other corrosive chemicals. - DO NOT use abrasive products, steel wool or scouring pads. - DO NOT use oven cleaners. DO NOT alter, add attachments, or otherwise modify this equipment! Failure to comply with CAUTION notices may result in damage to equipment or property, and void the factory warranty. vii

Comply with all appropriate state and/or local heath regulations regarding cleaning and sanitization of foodservice equipment. viii

11 Introduction 1. Introduction THANK YOU for purchasing the Model KD-GAL-45-C or KD-GAL-75-C Gas Fryer KitDel. Every unit is thoroughly inspected and tested prior to shipment in efforts to ensure that it will operate flawlessly when received. With proper care and maintenance the appliance will provide years of trouble-free service. To help protect your investment in this state-of-the-art cooking equipment, we recommend you take a few moments to familiarize yourself with the installation, cleaning and maintenance procedures contained in this manual. Adherence to these recommended procedures minimizes the potential for costly Down-Time and equipment repairs. Please retain this manual for future reference. NOTE: Due to continuing improvements and product enhancements, some material shown in this manual might differ slightly from the current model. Please retain this manual for future reference Construction Constructed of various gauges of durable 430 Series Stainless Steel Standard Features Computer Controller - Controls cooking oil temperature and cook time, and features fifty (50) editable menu item cooking presets. Monitors fryer status and displays various operational warnings {LOW OIL LEVEL, DRAIN OPEN, etc) and instructions. Features BOIL OUT program, COOL MODE, FORCE FILTER function and enhanced safeguards against accidental cooking oil fire. Dual Burner system - Unique dual burner system on Model KD-GAL-75-C delivers maximum BTU s when needed, while saving energy during light load cooking and idle periods. Automatic Basket Lift - Automatically lowers product when cook cycle is started... lifts cooked product from hot oil at the conclusion of the cook cycle. Built-in Oil Filtration System - Completely self-contained; helps to extend the life of cooking oil. Designed to perform a filter cycle within approximately five (5) minutes. Push-To-Start Feature - After any power interruption, the User must press a [START] key to power-up the appliance. This feature will comply with code requirements in some jurisdictions Optional Features Reuseable Filter Media - Stainless steel, mirco-mesh, filter screen to be used as a direct replacement for Filter Paper. Cleanable, reusable and durable; should last for many filter cycles. Helps to reduce operating costs and the operation waste stream. 1

15 Installation 2. Installation This section summarizes procedures necessary for proper installation of the. To prevent personal injury or damage to the equipment, please ensure the following steps are taken and the following check sheet is initialed and dated. Various installation tasks MUST only be performed only by a Licensed Electrician, or Qualified Gas Technician. NOTE: This appliance must be electrically grounded in accordance with the local codes, or in the absence of local codes, with the National Electrical Code, ANSI/NFPA 70, or Canadian Electrical code, CSA C22.2, as applicable. 16 Installation 2-1. Unpacking The appliance is palletized on a wooden skid, secured with high-tensile plastic strapping and wrapped by machine applied stretch wrap. The Fryer must remain in an upright (vertical) position. Exercise care when lifting or moving the unit. Exercise care when removing the wooden crate and shipping materials from around the unit. Failure to comply with CAUTION notices may result in minor to moderate injury, damage to equipment or property, and voiding of the factory warranty. IMPORTANT!: When received, if the palletized unit exhibited any signs of damaged, immediately inspect the Fryer and associated items, and notify the freight carrier of damages. 1. Carefully cut and remove the plastic shipping wrap and strapping. 2. Remove and properly dispose of wooden framework and shipping materials. 3. Carefully remove the Fryer from the shipping pallet. The appliance is very heavy [approximately 280 lbs (127 kg) uncrated]. Extreme care should be taken when lifting or moving the unit to prevent personal injury and/or damage to the equipment. Use sufficient manpower or appropriate handling equipment. Giles is not liable for personal injury incurred due to improper or poor work methods. Equipment damages deemed to be the result of improper handling during unpacking are not covered by factory warranty. 6

18 Installation 2-3. Location DO NOT ALTER, ADD ATTACHMENTS OR OTHERWISE MODIFY EQUIPMENT 1. Keep the appliance and surrounding area free and clear of combustible materials. See Section 2-02; Clearance, Gas Supply and Electrical Locations. 2. Make sure the unit is secured in position and will not move. See Section 2-13; Restraining Device Ventilation NOTE: Guidelines for ventilation system requirements may differ by locale. Always consult with local authorities to ensure compliance for this appliance. The combustion gases produced by this appliance must be vented to the outside in accordance with the prevailing National Fuel Gas Code, ANSI Z223.1 and terminate with a UL listed outside vent terminal. For Canadian installations reference CSA-B149.1 or.2, Installation Codes for Gas Burning Appliances and Equipment. This appliance is to be installed, used and maintained in accordance with the Standard for Ventilation Control & Fire Protection of Commercial Cooking Operations, NFPA 96. Consult a professional, certified, HVAC company for assistance in designing and specifying a ventilation hood system for this unit Utility Requirements Fryers must be adequately and properly grounded. Improper grounding may result in electrical shock. Always refer to local electrical code to ensure proper grounding of this or any other electrical equipment. Always consult with a qualified electrician or service technician to ensure breakers and wiring are of sufficient rating and gauge to supply power for the equipment. Units are available from the factory for voltages and phases listed below. Check the rating plate on the inside of the fryer s front door to determine the correct power supply. This regulator is rated for max. input pressure of w.c. [ 3.45 kpa]. Plug shall be supplied by customer, or unit can be field wired into power supply by a qualified electrician. IMPORTANT! When installed, appliance must be electrically grounded in accordance with local code, or in the absence of local code, with the National Electrical Code, ANSI/NFPA 70, or Canadian Electrical Code, CSA C22.2, as applicable. 9

Gas Line Connection The combustion gases produced by this appliance must be vented to the outside in accordance with the prevailing National Fuel Gas Code, ANSI Z223.1 and terminate with a UL listed outside vent terminal. For Canadian installations reference CSA-B149.1 or.2, Installation Codes for Gas Burning Appliances and Equipment. Quick-disconnect devices used must comply with the Standard for Quick-Disconnect Devices for Use with Gas Fuel, ANSI Z21.41 [in Canada CSA ]. Ensure the Gas Connector and Line complies with Standard for Movable Gas Appliance, ANSI-69, and Addenda Z21.69 [in Canada CSA ]. This unit MUST be installed with an In-line Regulator (Supplied by Customer). This unit MUST only be installed by a Qualified Gas Technician. Ensure both the Facility Shut-Off Valve and the Fryer Shut-Off Valve are in the OFF position. 1. After the facility Shut-Off Valve and Quick Disconnect have been installed, connect a 1/2 flexible gas line to the 1/2 Fryer shut-off valve located in the rear of the unit. See Section , Typical Gas Line Installation. Note: The flexible gas line should be long enough to allow the Fryer to be moved away from wall for servicing and cleaning Typical Gas Supply Line Connections IMPORTANT! Installation must comply with local code, or in the absence of local code, with the National Fuel Gas Code, ANSI Z223.1/NFPA 54 [in Canada, Natural Gas and Propane Installation Code, CSA B149.1] including: 1 The appliance must be disconnected from the incoming gas supply line at the shut-off valve, during any testing of the piping at test pressures in excess of 1/2 psi (3.5kPa). 2 The appliance must be isolated from the incoming gas supply line by closing the fryer Gas Shutoff Valve, during any testing of the piping at test pressures equal to or less than 1/2 psi (3.5kPa). 10

The regulator installed on the Fryer controls gas pressure supplied to the Fryer gas valve as shown in Table This regulator is rated for max. input pressure of w.c. [ 3.45 kpa]. If supply line pressure exceeds this maximum, a second regulator must be installed in the supply line, upstream of the Fryer, to control pressure at or below the maximum rating. 11

22 Installation 2-8. Gas Orifice Installation & Replacement IMPORTANT! The unit is shipped with factory-installed gas Orifice(s) sized for operation with Natural gas at 0 to 3,000 feet Above Sea Level, or operation with LP gas at 0 to 4,000 feet Above Sea Level. Gas flow varies at different elevations. Verify the elevation of the installation location. If the elevation is greater than noted above,the gas orifice(s) must be changed. To confirm that proper orifices are installed or to exchange orifice(s), follow the steps below. Orifices are available from the factory and also may possibly be sourced locally; consult chart below. Changing type of supply gas requires a proper Conversion Kit, contact factory. 1. Ensure power to the unit is disconnected. 2. Confirm that gas valves are in the OFF position. 3. Remove the Fan Guard & Back Panel. 4. It should be possible to examine the ID stamp on orifice(s) head without removing parts. Gas Orifice Burners *Covered 5. If the Orifice(s) are incorrect for the actual installation altitude, disconnect Gas Line(s) and remove the Manifold fitting(s). 6. Remove & replace Orifice(s) with the correct part. See charts below. Gas Type Altitude Range Gas Manifold 7. Re-install Gas Manifold(s) with orifice(s), reconnect gas line(s), and replace Panel & Guard. Proceed to 2-10; Gas Pressure Setting and Adjustment.. Gas Line connects at this fitting IMPORTANT! [For Model KD-GAL-75 with 2 Burners] When removing and reattaching gas lines, for any service or maintenance event, be sure that they are reattached to the same burner manifold from which they were removed. 23 Installation 2-9. Gas Pressure Setting & Adjustment Use the following procedure to set the Fryer incoming gas pressure to correct setting. This will ensure that the BTU output is at the proper level. Requires use of a digital Manometer, reading inches w.c. (water column). DO NOT ever check or adjust the gas pressure without first filling the Fry Pot with water. 1. Fill Fry Pot with clean water to the FULL mark. 2. Remove the Lower Rear Panel from back of Fryer. 3. Remove the Pressure Tap Plug from the Gas Valve and install a fitting appropriate for attaching a Manometer. 4. Remove the Pressure Adjustment Cover Plug on the Gas Valve. 5. Connect a digital manometer (reading inches w.c.) to the Gas Valve Pressure Tap and tighten. 6. Open the gas supply line valve. Place the Fryer Gas Shut- Off Valve in the OPEN position. 7. Place the Power Switch in the ON position and allow Controller to power-up. Place Selector Switch in the COOK position. 8. The burner(s) should ignite and the unit will begin heating. 9. While burner(s) are ON, check the Manometer pressure reading and compare to table below. If pressure matches for the type gas in use, on adjustment is needed. If not, use a screwdriver to adjust gas pressure as needed... turn to right (clockwise) to increase, turn to left (counterclockwise) to decrease. Observe pressure for several minutes to confirm that it remains stable. GAS TYPE IN. WATER COLUMN [w.c.] NATURAL 3.5 LP Return Selector Switch and Power Switch in the OFF position. 11. Remove manometer tube; replace and tighten the Pressure Tap Plug. 12. Replace the adjustment screw cover plug. 13. Replace the Rear Fryer Panel. 14. 24 Installation Blower Vacuum Switch Setting & Adjustment The Blower Vacuum Switch ensures that the unit has proper draft air-flow before allowing the gas valve to open for ignition. The switch has been factory set, but differences in conditions at the installation location may affect the setting. Use the following steps to ensure that the Blower Vacuum Switch is adjusted properly for local conditions. DO NOT EVER check or adjust the Blower Vacuum Switch without having fry pot filled with water, or cooking oil. Non-Combustible Material Flue Stack 1. Be sure pot contains cooking oil, or water 2. Place the Power Switch in the ON position, allow Controller to power-up. 3. Place the Selector Switch in the COOK position, Heat Light will illuminate and burner(s) will light. During the next step use great caution and wear thermal hand protection. The air exhausted from the flue stack is EXTREMELY HOT!! 4. While the burner(s) are ON, use a piece of noncombustible material to diagonally block, from corner to corner, about half of the flue stack opening. 5. The burner(s) and the draft fan should shutdown. When the opening is unblocked, the fan should restart and burner(s) should relight. If this occurs, the setting is satisfactory, go to Step-10. If burner(s) fail to shutdown, the Blower Vacuum Switch must be adjusted as follows: 6. Turn Power Switch OFF & close the gas valve. 7. Remove retaining screws at the top of the Control Panel and lower panel. 8. Locate pressure switch on left side of the Control Box; remove plastic cover, if still in place. 9. Slowly rotate the pressure switch adjustment dial to the right (clockwise) to increase sensitivity... to the left (counter-clockwise) decreases. Repeat steps 2 thru 5. As necessary, continue incremental adjustments until the burner(s) consistently shutdown when approx. half of the stack opening is blocked. 10. Drain water from the Fry Pot into a suitable container (NOT Filter Pan). Proceed to Section Vacuum Switch 14

The Restraint Cable length must be shorter than both electrical cord (or conduit) and the flexible gas line. A Restraint Anchor must be fastened to a immovable wall, or other structure. Use a quick disconnecting latch on one end of the Restraint Cable so that cable can be easily removed during servicing. 41 Pre-Operation Checkout 4. Pre-Operational Check-out Every effort has been made to ensure that you have received a unit that is in perfect condition. Each unit passes rigorous quality control inspections and tests prior to shipment. To further ensure optimum performance, we recommend that a brief pre-operational check-out be completed before placing the Fryer into service. Before attempting to operate the appliance, refer to Section 3 and become familiar with the various control functions. Once you have read and fully understand Section 3, please follow the procedures below and perform the tasks precisely as described to avoid possibility of damaging the appliance Appliance Set-up Before Performing Checks Set-up the unit as described below before performing checkout tests Power Switch 1 in the OFF position. 2. Selector Switch 2 in the center, OFF position 2 3. Open the Cabinet Door and remove the Filter Pan Place the Drain Valve Handle 4 in the [CLOSED] position (down). 5. 42 Pre-Operation Checkout 4-2. Power Check The following test confirms that the unit is properly receiving power: 1. Verify that applicance is plugged in (or properly wired) and the main circuit breaker supplying power to the unit is ON. 2. Ensure the Selector Switch 1 is in the centered OFF position Place Power Switch 2 in the ON position. The green POWER light 3 should turn on and the Controller displays will illuminate. After a powerup sequence, an alarm sounds and the Controller 4 Display 4 will show the message [POWER FAILURE-PRESS START]. Press ALARM 5 key, 5 then press START. 4. If these events occur, the unit is properly powered; if they do not, refer to Section 6-01, Troubleshooting Procedures Burner System Check DO NOT touch the Heat Exchanger Ring during this test. It becomes very hot and contact may result in severe burn injury. This test requires that the Burner System be turned ON. DO NOT allow burners to remain ON for more than 10 seconds for this test. Failure to observe this precaution may result in damage to the Heat Exchanger and Burner System. This step confirms that Burners and Fryer Heat Exchanger are functioning. 1. The Heat Exchanger ring inside Pot should be cool and dry. Wipe it down with a soaked wet sponge; enough so that moisture remains on the surface. 2. Place the Selector Switch 1 in the [COOK] position and listen for the burners to ignite. After ignition, wait 10 seconds max, then return switch to the [OFF] position. 3. The moisture on the surface of the Heat Exchanger ring should dry within approximately 15 seconds after burner shutdown and heat should be felt rising from the Pot, indicating proper heating. 4. If unit enters FLAME FAIL alarm and ignition does not occur, or If heating does not appear to be happening, refer to Section 8, Troubleshooting. 5. If the Burner System seems to be functioning properly, continue with checkout test. 32

43 Pre-Operation Checkout 4-4. Filter Pump Check The following test will confirm Filter Pump operation. 1. Open the Cabinet Door. Verify that Filter Pan is disconnected and removed from the unit. 2. Place the Power Switch 1 in the ON position. 3. Place the palm of your hand over the Filter Pan quick-disconnect opening. 4. Place the Selector Switch 2 in the FILTER PUMP position, allow pump to briefly run and return switch to the OFF position. If suction is felt against the palm, the pump is operating correctly. 2 1 If no suction is felt, refer to the Troubleshooting procedures in Section 7-2, Troubleshooting. Perform Boil Out Procedure Perform a Boil-out Procedure to remove dirt or debris that may have accumulated during shipping, and any residue remaining from manufacturing processes. See Section 6-01, Boil-Out Procedure. After completion proceed to Section Clean Filter Pan & Accessories Thoroughly clean the Filter Pan to remove dirt or debris that may have accumulated during shipping and any residue remaining from manufacturing processes. See Section 6-02, Cleaning Filter Pan & Replacing Filter Media After Boil Out. Before operation, wash all accessory items (Fry Basket, Basket Lift Carrier, Pot Cover, Stirring Utensil, brushes, etc.) in hot soapy water, rinse, and dry thoroughly. Remove all of the adhesive poly-film from all surfaces where it remains. Some of this film is intentionally left on the unit to provide some degree of protection against damage during shipping. If not removed now, over time it becomes increasingly difficult to remove. Clean exterior surfaces with a good quality stainless steel cleaner/polish. 45 Fryer Operation 5. Fryer Operation The following section describes operating procedures for the Model KD-GAL-45 & KD-GAL-75 Gas Fryers. Turn off the Fryer power switch and the main supply power at the main circuit breaker panel, or remove plug for receptacle before cleaning or performing maintenance. DO NOT wash down the Fryer interior or exterior with water from a spray hose, or any other pressure-type washing equipment. DO NOT operate this, or any other gas appliance, in an enclosed area without proper ventilation and a means of effectively venting combustion gases out of the area. Failure to comply with DANGER notices will result in serious injury, even death, damage to equipment or property and void the factory warranty. DO NOT use or store flammable liquids, or materials that produce flammable vapors, in the vicinity of this or any other appliance! DO NOT for any reason, stand or step onto the top of the appliance, or allow other persons to do the same. Cooking oil in the fry pot can be in excess of 330 F (166 C), contact with hot oil will cause extremely serious injury. Covers used to cover the fry vat/pot are made of thin-gauge sheet metal and WILL NOT support the weight of a person. Failure to comply with WARNING notices could result in serious injury, even death; damage to equipment and/or property and will void the factory warranty. Be sure the Fryer is positioned in a stable, safe location with the casters in the locked position. Consult an electrician to be certain that all electrical specifications have been met and the unit is properly grounded. A wiring diagram is provided with the unit to aid an electrician. Due to the high temperature of cooking oil in the Fryer during cooking, it is extremely important that the user exercise due caution in operating this equipment to avoid personal injury. It is recommended that thermal protective gear, such as mitts or gloves, be worn to prevent burn injuries. 35

Computer Cooking Controller The following sections explain the functions, features, programming, and operational procedures for the Computer Cooking Controller Keys and Functions Numeric Keypad: Numeric keys are used for entering values for Controller settings and editing presets. The Keys [ ] are arrow keys to operate the Basket Lift, scrolling, navigating through lists, moving the cursor, etc. [2] & [8] are Up/Down; [4] & [6] are Left/Right. The keys will illuminate to indicate when they are active as directional control keys. START: This is a multi-function key which is pressed to start cook cycles, select items from lists, save settings and exit editing activities. CLEAR: This is a multi-function key which is pressed to cancel cook cycles, exit editing mode without saving revisions, etc. 36

47 Fryer Operation Keys & Functions - Continued MENU: Function key which is pressed in combination with other keys to access programmed menu presets. Fifty (50) menu presets are available. EDIT: Function key which is pressed in combination with other keys to enter edit mode for changing or creating Menu preset settings. TEMP: Press this key to begin manually setting a cooking oil temperature setpoint. Pressing this key twice (2x) will display the ACTUAL OIL TEMPERATURE for approximately 20 seconds. CLOCK: Press this key to begin manually setting a cooking time (mm:ss). Press this key while in PREHEAT to enter BOIL OUT mode. The temperature and time will change to the BOIL TEMP and BOIL OUT TIME specified in USER SETTINGS (see Section 5.1.7, Access & Edit User Settings). Default setting = 200 F & 30 minutes. Press this key to enter COOL mode. The temperature setpoint will change to the COOL TEMP specified in USER SETTINGS (see Section 5.1.7, Access & Edit User Settings). Default setting = 275 F. COOL mode allows the Fryer to idle at a lower temperature during inactive periods to save energy. ALARM: Pressing this key silences the Controller alarm and also acknowledges certain status messages. BASKET: Pressing this key activates [2] & [8] keys as UP/DOWN keys for manual operation of the Basket Lift. This key is not active during PREHEAT state to prevent possibly lowering of product into cooking oil that is not at the proper cooking temperature. OLED Display: Displays menu preset information, certain Fryer status information, and operational instruction messages. 7-Segment Display: Displays various status information, cook cycle time countdown, temperature, etc. 37

48 Fryer Operation General Operation - Computer Cooking Controller The following is general operational information for the Computer Cooking Controller. Detailed procedures are presented in subsequent sections. During operation, certain instructions will be shown on the OLED Display to aid the users. Certain keys and indicator lights also will be illuminated to further guide the user through the various processes explained here. POWER UP: Place POWER SWITCH in ON position. After the Controller boots up, an alarm tone sounds and the message POWER FAILURE [PRESS START TO PREHEAT] is shown on the OLED Display. This is normal, intended to prevent the Fryer from beginning to heat after a power interruption until attended by the user. Pressing the START key silences the alarm and allows the Fryer to enter PREHEAT mode. If the SELECTOR SWITCH is in the COOK position and the temperature setpoint is higher than actual current oil temperature, then the burner(s) will ignite and cooking oil will begin to heat. PREHEAT: During PREHEAT, the real-time actual oil temperature is displayed on the 7-Segment Display. When oil reaches the programmed setpoint, an alarm tone sounds, the OLED Display will read ALARM STIR OIL. Vigorously stir the cooking oil then press [ALARM]. Typically, oil temperature will drop when stirred; Controller delays 10 seconds after [ALARM] key is pressed, if oil temperature drops below setpoint, Fryer remains in PREHEAT mode until it returns to setpoint. This process will ensure that temperature is more uniform throughout the total volume of oil, leading to better cooking performance. Upon reaching setpoint, the alarm sounds again and the OLED Display reads ALARM - SETPOINT REACHED. After acknowledging the signal by pressing the [ALARM] key, the Fryer enters READY state. READY STATE: The Fryer is ready for cooking. The current programmed temperature setpoint is shown on the 7-Segment Display and last used cooking parameters (menu information) are shown on the OLED Display. While in PREHEAT or READY state, the user can select (or change) a Menu Item Preset, see Section , Selecting a Menu Preset. This will automatically set the oil temperature and cooking time to the preset values -ORuser can manually set a cooking time and/or oil temperature, see Section 5-1.3, Setting a Manual Temperature & Cook Time. NOTE: If the PASSCODE ENABLE parameter is set to ON, the user cannot manually set Time or Temperature until a password is entered. This lockout feature helps ensure consistent cooking procedures across multiple user locations. START: Information for a selected Menu Preset, or a manually set time and temperature, is shown on the OLED Display. To start the cooking cycle, press the START key. + 38

49 Fryer Operation Setting a Manual Temperature and Cook Time The following explains the process for manually entering a cooking time and temperature. NOTE: Menu Presets are factory-loaded with default settings... manually inputting a cook Time or Temperature is a deviation from the preset default, therefore the Menu name displayed changes to [MANUAL]. IMPORTANT! If the PASSCODE feature is enabled, a Time and Temperature setting cannot be manually input the required password. Operator can only choose a programmed Menu Item preset from the available selections, see Section 5-1.4, Working with Menus. Set Cook Time: (mm:ss) Set Cook Temperature: ( F) Press the CLOCK key Press the TEMP key Use keypad to enter cook time (mm:ss). Ex: 1530 = 15:30 Use keypad to enter cooking temperature ( F). Ex: 325 = 325 F Press the START key to Save Press the START key to Save NOTE: Pressing the TEMP key twice (2x) will display the actual oil temperature for 20 seconds After [START] is pressed, if actual oil temperature is lower than the entered setpoint, the Controller enters PREHEAT mode (HEAT indicator beside 7-Segment Display turns ON). Before the oil will actually begin heating, the Selector Switch must be placed in the [COOK] position; the amber HEAT indicator on the Control panel should turn ON. If oil temperature is already equal to or greater than the entered setpoint, an alarm sounds and the message STIR OIL is displayed. Press the [ALARM] key and stir. If oil remains at setpoint, alarm sounds again and message SETPOINT REACHED is display. Press [ALARM] key and the Controller enters READY state. Fryer is ready for cooking. While heating, the real-time actual oil temperature will show on the 7-Segment Display. After setpoint is reached, the display shows the temperature setpoint. 39

50 Fryer Operation Working with Menus Fifty (50) Menu Item cook settings are preset and stored in the Computer Controller, each including a: Menu # - Sequential ID number Menu Name - Name of the food item assigned to the preset. Cooking Time - Cook time setting for the specific food item. Cooking Temperature - Cooking oil temperature setting for the specific food item. Temperature setpoint is automatically changed to this setting when the Preset is selected for use. STIR OVERRIDE - Some products may or may not require stirring regardless of the global STIR ALARM setting... this Menu Item setting overrides the global setting specified in USER SETTINGS. Default = [NORMAL]. FISH FILTER - To minimize flavor transfer, establishments cooking seafood products may wish to force operators to filter oil after cooking only one (1) batch of a particular seafood item. The setting overrides the FORCE FILTER setting specified in USER SETTINGS. Default = [OFF]. A SNOOZE feature is provided should two (2) batches of the product be needed. All 50 Presets are factory-loaded with default settings. Users can edit settings as needed to customize for specific applications and menu offerings. The first ten (10) Presets are set up with specific menu names and settings, which represent some popular menu offerings (see table below). The remaining presets contain the general settings as shown on the last line of the table. Details for working with Menu Item Presets are covered in the following sections. MENU NO. 53 Fryer Operation Editing a Menu Preset - Continued Edit STIR OVERRIDE Setting: Certain food products may, or may not, require stirring during the cook cycle, regardless of how the global STIR ALARM setting in USER SETTINGS (Section 5.1.7) is specified. STIR OVERRIDE is provided so that the STIR ALARM can be individually set for particular menu items. Setting options are [SKIP], [FORCE], or [NORMAL]. When set to [SKIP] or [FORCE] the stir alarm will be either skipped or forced on, regardless of the global setting. When set to [NORMAL], the stir alarm will occur as specified by the global setting... default = [NORMAL] To edit STIR OVERRIDE setting, scroll to and select [STIR] as shown on Page [>] pointing to [STIR] Press the START key to toggle between the available options. Edit FISH FILTER Setting: To minimize potential for flavor transfer to other products, establishments cooking seafood items may wish to force operators to filter oil after cooking only one (1) batch of the item. When FISH FILTER is set to [ON], the unit will enter FILTER Mode after completing one (1) cook cycle of the specific item. If FORCE FILTER SNOOZE is set to [ON] in USER SETTINGS (Section 5.1.7), operator is allowed to cook one (1) more batch of seafood before filtering oil. If FORCE FILTER=[OFF] in USER SETTINGS a filter warning message is displayed on the Controller; if FORCE FILTER=[ON], the fryer is locked out until the filter cycle is completed. 55 Fryer Operation Cooking The TEMPERATURE SETPOINT, MENU NAME, COOKING TIME, STIR OVERRIDE & FISH FILTER settings are shown on the Display for each Menu preset. When in READY state the Temperature setpoint will be shown on 7-Segment Display. A READY message will indicate that the cooking oil is at temperature and the Fryer is ready for cooking. To start the cook cycle timer, press the [START] key once. Basket Lift will automatically lower the Cook Basket into the hot cooking oil and cooking time will begin counting down on the 7-Segment Display.. STIR ALARM: An audible alarm is sounded at a specific time during the cook cycle, signaling the operator to stir the cooking product; helps to promote consistent cooking and prevent sticking. The feature must be turned [ON] in USER SETTINGS, Section 5.1.7, and the point in the cycle where the alarm is to sound must be set [STIR ALARM %]. Ex: STIR ALARM % = 60, Cook Cycle = 10 minutes... alarm will sound after 6 minutes of the cycle have elapsed. Factory-set default = [ON] ENABLED; STIR ALARM % = 62. If STIR OVERRIDE parameter for the Menu Item being cooked is set to [FORCE] or [SKIP], the STIR ALARM will act accordingly regardless of the USER SETTING. When the cooking cycle time is complete, an audible alarm will sound and the message DONE COOKING is displayed. The Basket is automatically raised from the hot oil. Pressing the [ALARM] key silences the alarm; the Fryer re-enters READY state, ready to cook the next load. x 2 To cancel a running cook cycle press the CLEAR key once, then press it again to cancel -OR- press [4] to exit and continue cooking Other Controller Features Manually Operating the Basket Lift - OR - Press the BASKET Key once Use [2] UP & [8] DOWN keys to raise or lower the Basket Lift NOTE: Manual Basket Lift operation is disabled while the Controller is in PREHEAT state as a safeguard against users lowering and attempting to cook product in oil that is not yet at the proper cooking temperature. Once activated, the Basket Lift cannot be actuated again for approximately 20 seconds. 45

56 Fryer Operation COOL Mode COOL Mode lowers the oil temperature setpoint, allowing the Fryer to idle (standby) during downtime periods as an energy-saving measure. To enter COOL MODE, press the COOL key. The temperature setpoint will be changed to the COOL TEMP specified in USER SETTINGS, see Section 5-1.7, Edit User Settings. Factory-set default = 275 F. The setting can be edited by the User in the range of 200 F to 350 F. x 2 To exit COOL Mode press the [CLEAR] key once, then press it again to exit -OR- press [4] to exit and continue COOL Mode. Upon exit, the temperature setpoint will return to the previous active value and Fryer will enter [PREHEAT] mode until temperature is reached AUTO-COOL Feature When the AUTO-COOL feature is turned [ON], the Fryer automatically enters COOL Mode after no cook cycles are started in the amount of time specified by the AUTOCOOL TIME setting in USER SETTINGS, see Section 5-1.7, Edit User Settings. Factory default = [OFF]... AUTOCOOL TIME = 30. The setting can be enabled/edited by User in the range of 1 to 510 minutes. Exit AUTO-COOL same as COOL Mode above BOIL OUT Mode Pressing the [BOIL] key while Controller is in [PREHEAT] state enters BOIL OUT Mode. Temperature and time change to the BOIL TEMP and BOIL OUT TIME, respectively, as specified in USER SETTINGS (see Section 5.1.7). Factory-setting is BOIL TEMP = 200 F... BOIL OUT TIME = 30 minutes. These settings can be edited by the user within the ranges of BOIL TEMP = 185 to 208 F and BOIL OUT TIME = 1 to 45 minutes. IMPORTANT! Fryer must be properly drained, rinsed and prepared for cooking after a Boil Out cycle. See Section 6, Cleaning. 46

This feature is typically factory-set as DISABLED. When the PASSCODE ENABLE setting is ON (enabled) in FACTORY SETTINGS, the Controller prompts the user for a password before they can add or edit Menu Item Presets, enter a manual temperature setpoint, enter or change a manual cook time setting, or access the User Settings Menu. If you desire to have Password protection enabled, or have questions concerning this feature, contact KitDel to request the passcode and instructions as to how to enable this feature Controller Startup Sequence 1. Initially, ensure that the Selector Switch 1 is in the center [OFF] position. 2. Place the Power Switch 2 in the [ON] position. The green Power Light 3 will illuminate, Computer Cooking Controller will power-up, perform a memory check and then sound an alarm tone. The message POWER FAILURE [PRESS START TO PREHEAT] is shown on the OLED Display 4. This is normal, intended to prevent the Fryer from beginning 5 to heat after a power interruption until attended by an operator. Pressing the [START] key silences the alarm and allows the Fryer to enter PREHEAT state. The Temperature setpoint shown on the OLED Display will be the last used. The Controller will indicate that the Fryer is heating, but until the Selector Switch is placed in the [COOK] position, the burner system will not ignite. 3. Place the Selector Switch 1 in the [COOK] position. The draft fan starts and the burner system will ignite. If the burner does not ignite after a set amount of time, the red Flame Fail Light 5 will turn ON and the gas control valve closes. In this event, return Selector Switch to [OFF], wait about 5 minutes to allow any accumulated gas to dissipate, then try again IMPORTANT! If the appliance continues failing to ignite, refer to Section 7, Troubleshooting. A service technician may be required to correct certain issues. 4. DO NOT place Selector Switch in [COOK] position unless pot is filled with cooking oil, see Section 5.2, Cooking Procedures. 48

59 Fryer Operation Controller Errors and Alarms Certain conditions, which can cause unsafe operation or damage to the unit, such as open valves, low oil level, high temp, etc. will activate error codes and sound an alarm tone. Error Codes will show on the 7-Segment Display; error information is shown on the OLED Display. Typically, the burner system will be disabled until the error condition is corrected. Pressing the [ALARM] key silences the alarm tone, but does not clear the error. Error Codes are shown on the following Table; details are presented in the following section. Error is displayed after a MAX temperature (ER19) has occurred and the exchanger has cooled below MAX temperature. Problem with the Variable Oil Temp Probe. Service technician required. Problem with the Element Temp Probe, typically touches the heat exchanger ring. Service technician required. Problem with the Add Level Probe at vat ADD line. Fryer without this Probe should have ELMT-ADD DIFF ENABLE setting OFF in FACTORY SETTINGS. Probe cannot be bypassed. Service technician required. The maximum heat exchanger temperature has been exceeded. This is a safety device; NEVER bypass this Probe. Actual oil temperature deviates from setpoint by the Guard Band amount. Allow oil to cool, or heat, to within range. Factory default is 900 F... This error should not occur. An error occurred while saving settings to the EEPROM. Service Technician required. The ADC (Analog-to-Digital Converter) chip that reads output from thermocouples is not working. MCB1 board must be replaced. Service Technician required. 49

60 Fryer Operation Resolving Controller Errors and Alarms DRAIN OPEN (Error Code OPEN) - If the pot Drain Valve is open (even slightly) while Fryer power is ON, an alarm tone sounds, 7-Segment Display shows OPEn, and the OLED Display reads ERROR ALARM - DRAIN IS OPEN. If the Basket Lift is down, it will be raised. Heating Elements are disabled as long as the condition exists. Press the ALARM RESET key to silence alarm tone. Completely close the Drain Valve to clear the error. When error is cleared, alarm tone sounds again and the OLED Display reads CHECK OIL LEVEL, ENSURE VAT IS FULL, IF FULL THEN PRESS [START]. This is a post-error alarm to alert user to confirm that cooking oil in the pot is still at the FULL level. Add oil if needed, then press the START key to return to PREHEAT mode. LOW OIL LEVEL (Error Code 03) - Alarm tone sounds, 7-Segment Display shows Er03, and the OLED Display reads ERROR ALARM - CHECK OIL LEVEL - ENSURE VAT IS FULL. Heating Elements are disabled until the condition is corrected. The temperature differential between probe located at the oil level ADD mark and a probe attached to the heating element exceeds the acceptable value, indicating a low oil level. Low oil level greatly increases the possibility of fire! Press the ALARM RESET key to silence alarm tone, and place Selector Switch in OFF position. Allow the Fryer to adequately cool and then add oil to raise level to the FULL mark. LOW OIL LEVEL Post-error Warning (Error Code 06) - After Error 03 clears, a warning alarm occurs. The 7- Segment Display shows Er06, and the OLED Display reads CHECK OIL LEVEL - ENSURE VAT IS FULL - PRESS [START]. This alarm alerts user to confirm that cooking oil in the pot is at the FULL level. If no oil is required press START, otherwise press ALARM RESET key to silence tone, add oil, then press START key to enter PREHEAT mode. MAX. ELEMENT TEMP (Error Code 19) - Heat Exchanger has exceeded the maximum temperature allowed by the Controller. The alarm tone sounds, 7-Segment Display shows Er19, and the OLED Display shows ERROR ALARM - MAX ELEMENT TEMPERATURE. Burners are automatically turned OFF. Heat Exchanger It must cool to an acceptable temperature to clear the error. Typical cause of this error is low oil level, which has exposed the exchanger ring. It is possible for a false alarm to occur when preheating cold oil at the initial startup of a new day. Vigorously stirring oil during preheat will usually clear a false alarm of this type. MAX ELEMENT TEMP Post-error Warning (Error Code 07) - After Error 19 is cleared, a warning alarm occurs. The 7-Segment Display shows Er07, and the OLED Display reads MAX ELEMENT TEMP - PRESS [START]. This alarm alerts user that a maximum temperature error occurred and is now cleared. Press START key to enter PREHEAT mode. Heating Element will not turn ON until START is pressed. NOTE: If an error condition cannot be resolved, please contact a factory-authorized service agent, or call KitDel for Technical Support Cooking Procedures Prior to starting the Fryer for cooking operations do the following: Be sure that installation is complete and Fryer has been prepared and cleaned as described in Section 4. Position the Gas Valve Handle located at the back, right-hand corner of the unit in the ON position (parallel to back). Be sure that proper ventilation is provided in the area of operation. Be certain that gas supply line valve is OPEN, power cord is plugged into an appropriate outlet and that main supply power for the outlet is ON. 50

Cooking Procedures - Continued The following explains typical cooking procedures; assumes starting with a clean empty Fryer, which has been properly prepared for use; Basket Lift in the raised position. These procedures may vary slightly depending on the user s actual operating practices, and when frying multiple loads. 1. Remove Fry Basket from Lift and set aside. 2. Place the Power Switch 1 in the [OFF] position Be sure the Selector Switch 2 is in the centered OFF position Be sure the Drain Valve 3 is in the fully CLOSED position (handle downward about 45 ). 5. Fill the Fryer Pot with fresh liquid frying shortening to the ADD 4 mark. When cooking temperature is reach, expansion should bring the oil level close to the FULL mark. Overfilling Pot may result in overflow, excessive splatter, and potentially cause personal injury and/or damage to equipment Place the Power Switch 1 in the ON position. The Power Light 2 will illuminate Use keypad 6 to manually set temperature and cook time, see Section 5-1.3, Manually Setting Temperature & Cook Time -OR- select a desired Menu preset, see Section , Selecting a Menu Preset. The Controller enters PREHEAT mode... menu information is shown on the OLED Display, and real-time oil temperature is shown on 7- Segment Display Place the Selector Switch 2 in the [COOK] position to enable the burner system. The Heat Light 7 will illuminate, the draft fan starts, and the burner ignites to begin heating cooking oil to the setpoint temperature

Cooking Procedures - Continued NOTE: If no flame is detected at the burner within a few seconds, the ignition module will shutdown, the gas control valve closes and the red Flame Fail light 8 turns ON. 2 Return the Selector Switch 2 to the OFF position. Wait approx. five (5) minutes to allow any gas to dissipate and try to ignite again. If there are repeated ignition failures, see Section 7, Troubleshooting. Service call may be required Using the provided Stirring Utensil, frequently stir cooking oil while preheating. Doing so will prevent cool zones in the volume of oil, resulting in more even heating. 7 OLED Display 10. When oil initially reaches the setpoint temperature, the burner will shutdown and the Heat Light 7 will turn OFF. 9 7-Segment Display 11. An alarm sounds and the message ALARM -STIR OIL is displayed on the OLED Display. Press the [ALARM] key 9 and vigorously stir oil. There is 10 second delay... typically, when stirred, oil temp drops below setpoint and the Fryer returns to PREHEAT to continue heating until setpoint is reached again. An alarm sounds when setpoint is reached again and message ALARM - SETPOINT REACHED is displayed. Press [ALARM] key and Controller enters READY state. Oil is now ready for cooking. Menu setpoint temperature is now shown on 7-Segment Display. 12. Check cooking oil level, it should now be close to the FULL level. If not, add liquid shortening, stir and allow to heat. 52

63 Fryer Operation 5-2. Cooking Procedures - Continued 13. Place the Cooking Basket 10 onto the Basket Carrier Settings for the Menu Preset selected in Step-7 are shown on the OLED Display along with the message [START] TO COOK. Fryer is now ready for cooking the menu item displayed. A different Menu Preset may be selected by following the steps in Section Recommended full Fryer load (bone-in, 8-way cut chicken, 2-3/4 lb. bird): OLED Display KD-GAL-45: 14 Lbs. (32-40 pieces) KD-GAL-75: 24 Lbs. (64-72 pieces) 15. Uncooked product may be placed into the Fry Basket either before or after lowering it into the hot cooking oil. If Basket is lowered before loading product, use extreme caution when placing into the HOT oil; skin contact, or splash, can cause severe burns. Always wear thermal protection To lower Basket before loading, press BASKET key 11, then [8] on numeric keypad to lower. NOTE: Basket Lift will not operate unless Controller is in [READY] state. 16. After loading product, press the [START] key to begin the cooking timer. Controller must be in the [READY] state before the cooking timer will start. If Basket is in UP position it will be lowered and timer will begin counting down. Place the Basket Cover 12 on top of the Fry Pot Controller displays 13 will show time remaining in the cook cycle, and the current Menu Preset cook settings. 53

Cooking Procedures - Continued NOTE: Step-17 applies only when in USER SETTINGS, STIR ALARM=[ON] & in the particular Menu Item setting STIR OVERRIDE=[NORMAL] - OR - STIR ALARM=[OFF] & STIR OVERRIDE=[FORCE]. If not, NO alarm will sound, however it is recommended that the product be agitated during the latter half of the cook cycle to help promote even cooking, and prevent product from sticking together After a preset percentage (%) of programmed cooking time has elapsed, an alarm tone sounds and the message ALARM - STIR appears in the OLED Display. Press the [ALARM] key to silence alarm. Wearing oven mitts, or other thermal protection, remove the Basket Cover 12 and agitate cooking product with the provided Stirring Utensil 13 to separate pieces. Replace the Basket Cover. 18. At the end of the cooking cycle, the Fry Basket 14 with cooked product will automatically be raised from the hot cooking oil. An alarm sounds and message DONE COOKING is displayed. Press the [ALARM] key to silence alarm and return Fryer to READY state. 19. Allow product to adequately drain. Wear oven mitts, or other thermal protection; remove the Basket Cover and hang it onto the Basket Carrier Lift the Basket off of the Carrier and dump cooked product into an appropriate container, or dump station. 21. To: a.) Cook another load - return to Step 12 of this procedure. b.) Place Fryer into Cool Mode - see Section , Cool Mode. c.) Shutdown Fryer - see Section 5-5, Normal Shutdown. IMPORTANT! DO NOT forcefully strike a full basket of product on the edge of Fry Pot, or on the Basket Carrier, in an attempt to promote oil drainage. This may damage the Basket or Fryer, and may void the warranty. 54

65 Fryer Operation 5-3. Filtering Cooking Oil This section explains use of the built-in Oil Filtration System, which filters and reconditions used cooking oil by circulating it through filter media in the Filter Pan and back to the Fry Pot. Following this process can increase oil life by as much as 50%. The FORCE FILTER feature - OR - the FISH FILTER Menu Item setting will place the Fryer into FILTER MODE after a certain number of cook cycles are completed, forcing operator to perform a filtering cycle. When enabled, the Fryer is locked-out of further operation until the filter cycle is performed. See Section 5-1.7, User Settings -or- Section, , Editing a Menu Item Preset for more detail. Factory default: FORCE FILTER = [ON]... FILTER COUNT=4 and FISH FILTER=[OFF]. A FORCE FILTER SNOOZE feature allows one (1) additional cook cycle after the force filter count is exceeded. Factory default = [OFF]. It may be enabled in USER SETTINGS. DO NOT attempt to filter cold, congealed oil. The Filter Pump can clog and be damaged. Oil must be a minimum of 200 F (93 C) before attempting to pump. 1. After cooking the preset number of loads [FILTER COUNT], an audible alarm will sound. 2a. If FORCE FILTER = OFF, display 1 reads ALARM - FILTER OIL, press [ALARM] key 2 to continue. To alert operator that oil needs filtering, this alarm reminder will occur after each subsequent load cooked until oil is filtered. 2 2b. If FORCE FILTER = ON, display 1 reads ALARM - MUST FILTER OIL, press [ALARM] key 2. The Fryer is locked-out of further operation until a filtering cycle is performed. 3. Place the Selector Switch 3 in the [OFF] center position before continuing with filtering process HOT parts, wear oven mitts, or other thermal protection! Open the Cabinet Door, disconnect the Filter Pan Quick- Disconnect Hose 4 and remove the Filter Pan 5 from the unit. 5. Remove Pan Cover 6 to confirm that the Filter Media is installed correctly (1 sheet of Filter Paper). 6. Distribute approx. 5 oz. of Filter Powder (1-pack, Giles #72004) over filter media surface. It is important that a suitable filter aid be used for removal of soluble impurities and reconditioning of the oil. 7. Replace Filter Pan Cover 6 and reposition the Filter Pan under the unit. Reconnect the Filter Pan Quick Disconnect Hose

66 Fryer Operation 5-3. Filtering Cooking Oil - Continued This process requires that cooking oil be drained from the Fry Pot into the Filter Pan, thus exposing the heat exchanger. Failure to place the Selector Switch in the OFF position prior to draining could result in fire. IMPORTANT! The Fryer is equipped with a safety interlock which disables the burner system anytime the Drain Valve is OPEN. As further safeguard to avoid the risk of fire always place SELECTOR SWITCH in the OFF position before draining oil from the Pot. DO NOT use the Drain Valve as the ON/OFF Cook Switch. 8. Be sure the Selector Switch 3 is in the OFF position. Place the Oil Diverter Valve 7 in the [VAT] position (move left to stop). Slowly turn the Drain Valve Handle 8 to the [OPEN] position (move fully upward to stop). Allow used oil to drain into Filter Pan NOTE: If the Fry Pot does not readily drain, use the provided Kettle Drain Brush to break up any crumbs or debris that might be blocking the Pot drain. Be careful not to push brush too far down, as to puncture the filter media in the Filter Pan. Doing so could allow excessive debris to enter the Filter Pump, potentially clogging and damaging it. 9. When the Fry Pot has completely drained into the Filter Pan, place the Selector Switch 9 in the [FILTER PUMP] position. Leave Drain Valve partially open so that oil will circulate. 9 56

67 Fryer Operation 5-3. Filtering Cooking Oil - Continued 10. Used oil will be pumped through the filter media in the Filter Pan, back to the Fry Pot and drain back into the Pan. To achieve sufficient filtration and conditioning, allow oil to continually circulate in this manner for at least 5 minutes. During this time, use the provided brushes to clean crumbs and cooking residue from the Pot and Heat Exchanger, allowing it to be flushed into the Filter Pan and filtered from the oil. Use large Pot Brush to clean large open surfaces... use small, round, stiff-bristle Brush to clean out gap around Heat Exchanger 11. Failure to properly clean Heat Exchanger, as described below, can result in excessive carbon build-up between the Pot wall and Heat Exchanger. This can lead to premature failure of the pot and combustion chamber, and will void the pot warranty. 11 EXTREMELY IMPORTANT!! Each time Fryer oil is filtered, it is important that the front and back of the Heat Exchanger be cleaned thoroughly. Use the heatresistant Pot Brush to clean the front surface and top edge. Use the small round, stiff-bristle, heat-resistant Brush (#73235) to clean the gap between the Pot wall and the outside surface of the Heat Exchanger. Move the Brush up and down, and side to side, around the entire Pot, inserting Brush all the way down until the tip touches the pot bottom... ensure that the entire depth to the ring is cleaned. The area adjacent to the Heat Exchanger entrance requires special cleaning attention. If crumbs and cooking debris are allowed to accumulate in this area, hard carbon deposits will form over time. If not removed, this will cause the oil to become blackened and can result in poor quality food product, and potentially cause unrepairable damage the heat exchanger. 57

68 Fryer Operation 5-3. Filtering Cooking Oil - Continued 11. After approx. 5 mins, turn the Drain Valve Handle 8 to the [CLOSE] position, down full to stop. Allow the Pump to run until the Fry Pot is refilled When oil has been completely pumped back to the Fry Pot, place the Selector Switch 9 in the [OFF] position (centered) to stop pump. 13. Be sure oil is at the proper level, add if needed. 14. Wearing Oven Mitts, disconnect Quick-Disconnect Filter Pan Hose 10, remove the Filter Pan and lift off Cover. 15. Using the provided Crumb Scoop 11, remove filter sediment from the surface of the filter media and discard. Unless there are obvious holes or tearing, it is not necessary to replace the filter media after every filtering cycle. 16. Replace Cover and reinstall Filter Pan. 17. To continue cooking, See Section 5-2, Cooking Procedure. 10 To discontinue cooking, See Section 5-5, Normal Shutdown vimportant! If the FORCE FILTER feature is turned ON, the Fryer will not exit FILTER MODE and return to normal operation unless oil temperature has decreased to, or below, the FILTER RESET temperature setting specified in USER SETTINGS... default = 275 F. Typically, oil will cool sufficiently during the filtering process to reset the Controller. 58

69 Fryer Operation 5-4. Removing Waste Oil from Fryer This section describes the procedure for removing used shortening from the Fryer, in preparation for the Boil-out procedure, or for disposal. Waste Oil Disposal Unit referenced in this section is not provided. DO NOT attempt to pump cold, congealed oil. The Filter Pump can clog and be damaged. Oil must be a minimum of 200 F (93 C) before attempting to pump. 1. Be sure oil is heated to at least 200 F (93 C). 2. Be sure the Power Switch 1 is in the ON position Be sure the Selector Switch 2 is in the OFF position Ensure that the Filter Pan 3 is in place and the Filter Pan hose 4 is connected at the quick-disconnect. 5. Slowly turn the Drain Valve Handle 5 to the [OPEN] position (fully up to stop), and allow the Fry Pot to completely drain. NOTE: If the Fry Pot does not readily drain, or drains very slowly, use the supplied Kettle Drain Brush to break up crumbs and clean them from in the drain. Be careful not to push brush far enough to puncture the filter media in the filter pan; this could allow the pump to ingest debris and be damaged

70 Fryer Operation 5-4. Removing Waste Oil from Fryer - Continued After the Fry Pot has completely drained, turn the Drain Valve Handle 6 to the [CLOSE] position (downward fully to stop). 7. Connect the provided Oil Discharge Hose 7 to the quick-disconnect coupling Place the discharge wand into a suitable heat-resistant waste oil disposal container 9 (NOT PROVIDED). 9. Place the Oil Diverter Valve 10 in the [HOSE] position (right to stop). 10. Wear some type of thermal protective gear if holding the Discharge Hose is required; it will become very hot while pumping oil. Press the Selector Switch 11 to the [FILTER PUMP] position. The waste oil is pumped into the disposal container. IMPORTANT! Closely monitor to avoid the possibility of hose falling out of container while pump is running. 60

Place Power Switch in the OFF position. 13. Turn the Oil Diverter Valve handle to the [VAT] position (left to stop). 14. Wearing thermal protective gear, remove the Discharge Hose from the quick-disconnect coupling and drain any oil remaining in the hose into the Oil Disposal Container. 15. Thoroughly clean the Filter Pan and the Filter Pan Cover, dry completely. Refresh the filter media in the Filter Pan, see Section 6-2, Cleaning the Filter Pan & Replacing Filter Media. 16. IMPORTANT! It is recommended that a Boil-Out procedure be performed each time after used cooking oil is removed from the Fryer, before replacing with fresh oil. Doing this will help prevent carbon deposits from forming in the Fry Pot, which can impact Fryer performance and food quality. 17. To perform a Boil Out Procedure, see Section 6-1, Boil-Out Procedure. To shut down the unit, see Section 5-05, Normal Shut-Down. 61

73 Cleaning 6. Cleaning The following section describes cleaning procedures for the KD-GAL-45 & KD-GAL-75 Gas Fryers. A general cleaning of the appliance should be performed daily. DO NOT wash down the Fryer interior, or exterior, with water from a spray hose. Failure to comply with these DANGER notices will result in serious injury, even death, damage to equipment or property damage, and void the warranty Boil-Out Procedure (Cleaning Fry Pot) This section describes the Boil-Out process for cleaning the Fry Pot. This must be performed before first cooking on a new Fryer, and should be performed before cooking oil is to be replaced with fresh. In addition, to maintain proper fryer operation and performance, the Boil-Out process should routinely be performed at least every 7 to 14 days. DO NOT, under any circumstances, leave the fryer unattended during the Boil-Out process, as the potential for the pot to overflow does exist. It may become necessary to adjust the temperature setting to avoid an overflow. Overflow can result in serious equipment damage. Never run Boil-Out solution, water, or any other cleaner through the pump and filter system. Doing so will result in equipment damage, and may void the factory warranty. 1. Remove used shortening from the Fryer. See Section 5-04; Removing Waste Oil from Fryer. 2. Be sure that the Drain Valve 1 is in the CLOSED position (down fully to stop) and the Power Switch is in the OFF position. 3. Fill the fry pot with clean water to the FULL level Use a reputable Boil-Out/Fryer Cleaner product, and follow the product directions for use. Add to water as directed. 1 Follow usage instructions exactly. Commercially available Fryer cleaners may be caustic, and require special precautions. If used improperly, these chemicals may cause damage to the fryer and/or pose a potential risk of personal injury to the user. 2 63

74 Cleaning 6-1. Boil Out Procedure - Continued 5. Place the Power Switch 3 in the ON position. 6. Place Selector Switch 4 in the COOK position. 7. Controller powers-up, press [ALARM] key when Alarm sounds, Fryer enters [PREHEAT] and OLED Display shows message [PRESS BOIL-GOTO BOIL-OUT]. Press [BOIL] key 5 and unit enters Boil-Out mode. Setpoint changes to 200 F (93 C) and time begins to countdown from 30 minutes. Allow cycle to fully complete. 8. At the completion of the Boil-Out time place Selector Switch in the center OFF position and Power Switch in the OFF position. 5 OLED Display Disconnect Quick Disconnect Hose, remove the Filter Pan from Fryer. DO NOT drain the Boil-Out solution into the Filter Pan! Contents are corrosive and will cause damage to the Filter Pan and Filter Pump. Failure to comply will result in equipment or property damage; such damage is not covered by the factory warranty Position a suitable Heat Resistant Container 6 (not provided) beneath the Fryer drain. Container used for this step must be heat resistant up to 300 F (148 C). Plastic is generally not acceptable as it may melt or break. A leak-proof metal container is preferable. Failure to comply with this caution may result in personal injury. 11. Slowly turn the Drain Valve Handle 7 to the OPEN position (fully upward to stop). Drain boil-out solution into catch container; carefully monitor draining and empty the container as needed. As solution drains, use Pot Brush to scrub heating elements and pot surfaces to help remove residue. 12. Rinse and flush the Fry Pot thoroughly with hot tap water. Empty catch container as often as needed so as to prevent any overflow. 6 64

75 Cleaning 6-1. Boil Out Procedure - Continued 13. Dry the Fry Pot with clean dry towels. Ensure surfaces are completely dry before adding fresh cooking oil. 14. Slowly turn the Drain Valve Handle 7 to the CLOSE position (fully downward to stop). 15. Clean Filter Pan and replace Filter Media; follow directions in Section 6.02, Cleaning Filter Pan Components. 16. Replace Cover 8 on Filter Pan. 17. Position Filter Pan underneath unit and connect the Quick- Disconnect Hose To begin cooking on the unit, refer to Section 5.02, Cooking Procedures. 8 IMPORTANT! Be certain that the Fry Pot is completely rinsed and dried before adding fresh cooking oil. Give particular attention to the Pot drain, as residual water will tend to accumulate in the drain pipe (space above the drain valve ball and pot bottom). Water in the pot will cause boiling and foaming of cooking oil when heated, which could result in a pot overflow. 65

76 Cleaning 6-2. Cleaning the Filter Pan & Replacing Filter Media This section describes the process for cleaning the Filter Pan and replacing filter media. This should be performed after each Boil-Out Procedure (Section 6.01) and as part of the daily cleaning routine. Wear thermal hand protection as safeguard from HOT parts. 1. Follow the Normal Shut-Down procedure, see Section Remove the Filter Pan 1 along with the Filter Pan Cover 2 from underneath the Fryer. 3. Remove the Filter Pan Cover, wash with warm soapy water and dry thoroughly. Mild degreaser may be also be used. 4. If equipped, remove the Crumb Screen 3*, clean and dry thoroughly. 5. Using the metal Crumb Scoop provided with the Fryer, remove accumulated filter residue from around the edge of the Hold-Down Frame 4 and from surface of the filter media Turn the four Levers 6 to disengage the Hold- Down Frame from the bottom of Filter Pan. 7. Remove the Hold-Down Frame, clean and dry thoroughly. 2 3* Grasp one end of the used Filter Media 5, carefully roll up sheet, and discard. Take care not to allow filter residue to fall through the perforated Support Screen 8 affixed to the Pan bottom (not removeable). 9. After disassembly, thoroughly clean Filter Pan 7. Be sure to flush any debris from underneath Support Screen, and drain all water from the Filter Pan piping. Thoroughly dry all parts. Discard used & replace with new Reassemble the Filter Pan inserting (1) new sheet of Filter Paper media. See NOTE on next page. * Accessory, not included, purchased separately 66 7
