6 1. GENERAL PRESENTATION Description : Proofers of RUBIS range have a system of electric heating and have an humidification by vat evaporator. Proofers of RUBIS range are totally encastrable. The capacity standard is of 8 to 16 plates or backing trays according to dimensions. The standard dimension is of 400 x 600 or 460 x 660 for plates or backing trays according to the version of the proofer. The adjustment and the putting in order is made thanks to a orders gathered in frontage. The maintenance is easier thanks to a simple conception. The proofer has been realized in the way that it will be directly installable by the consumer. The door can be installed with door fitting to left or to right. Its closing and its proofing are assured by two magnetic blocks and a joint resistant to the temperature and humidity. A shelf tray of plates quiet and a friendly using is directly accessible in frontage. Options concerning the piétements are available as standard on all models. 2

8 2. INSTALLATION AND PUTTING IN ORDER Installation : Recommendations of installation: Proofers are delivered ready to use. Its are really easy to be link and to switch on. Recommendations very important before installation : Check that : different ways having to be use at the time of the installation allow the transport of the packed proofer: Packaging dimension: Proofer Rubis 2 : 1440 x 1010 x 710 Proofer Rubis 4 : 1440 x 1710 x 710 The place of the installation can supports the weigh of the proofer + oven + hood. The ground must be plan and horizontal. The coating of the ground in the case of a proofer with ground must be non flammable. The place must be equipped: * of an adapted power supply. (see table of power p. 3). * of a system of electric insulation adequate (disconnecting switch to be envisaged by the customer.) * of a ventilation of the room adapted to the materials installed. 4

10 Electric connection : the cable to use is type H07RNF : 3 x 1,5 mm2. To dimension the disconnecting switch, to refer to the table of the powers Procedure of connection : If the place of installation of the proofer corresponds to the recommendations quoted above, you can carry out connections of this one. For that follow the following procedure: Install and then connect the cable on the feed box of your installation. By safety, the disconnecting switch must be obligatorily cut. Fix the cable until the back of the Proofer (fix Proofer). - To open the mask, to make pass the cable by the press packs, to cable according to diagram case connection. - To close the mask. 6

14 3. USE AND INSTRUCTION Before starting a cycle, You have to preheating the proofer and increase the rate of humidity. For that : To fill the vat evaporator inside of the proofer with water of the tap. Close the door. Turn le button ON (the regulator delights). Choose the temperature. The ride on temperature depends of the temperature of the backhouse, of the temperature of this oven with the top of the proofer (10 mn de 20 à 30 C). Description control panel: 1 ON OFF proofer. 2 Adjusting the thermostat. Cycle : Put products in the proofer. Check that humidity is enough and that the vat evaporator is sufficiently furnished out of water. Keep of products when the time corresponding at the type of treated product is over. Repeat this operations in function of the number of cycle to do. End of working : Stop the proofer in turning the button (the regulator lights off). We advise you to report yourself to the chapter concerning the maintenance in the aim to preserver an optimum hygiene and a operation of your Proofer. 10

15 4. MAINTENANCE SIMPLE MAINTENACE done by the consumer : daily cleaning of the shelf. Weekly cleaning of the interior of the proofer. to sponge the water residues in the vat evaporator Clean the glasses Weekly cleaning of the exterior of the proofer (Caution : The products comprising acids and solvents are to be proscribed for the painted and screen printed parts). Do not clean at full water the link box which is at the back of the proofer. Caution : Before any intervention of maintenance, you must put the proofer not under tension (except for the daily talks). MONTHLY MAINTENACE : Greasing of the hinges of doors. Particulars maintenance: The joints of door, of panes damaged can be easily replaced by the customer. It is the same for the complete door and its hinges For any replacement of heavy electric component and in the event of dysfunction to call upon the service of maintenance PAVAILLER. 11

16 5. DISFONCTIONEMENT BEFORE ALL INTERVENTION : SWITCH OFF THE ELECTRIC FEED OF THE PROOFER. ANOMALIES CAUSES REMEDY The heating works. The thermostat doesn t control. the button ON OFF works well but the proofer doesn t heat. The thermostat is defective. - the selected temperature by the adjusting of the thermostat is too low. - The thermostat rise in open position. - The resistance is defective. Make check the proofer by a PAVAILLER technician. Increase the selected temperature. Make check the proofer by a PAVAILLER technician. Make check the proofer by a PAVAILLER technician. the button ON OFF doesn t work (regulator switch off). the thermostat is in asking of temperature. The resistance doesn t heat. One of the fusible is defective. Switch off the electric feed of the proofer, open the box and replace the defective fusible. Replace carefully cables in the right jacket of the proofer. All spart parts of the proofer must be replace by its PAVAILLER equivalent (See chapter 7 "Pièces de rechange"). 12
