5 Smeg and the Environment smeg Smeg has for several years continually developed products and productive processes that guarantee maximum performance whilst minimising the environmental impact. A sustainable development approach considers the impact the product has during its lifetime and integrates environmental requirements at the planning stage. Having the ISO certification since 1999, Smeg has for over a decade followed a policy to constantly improve environment sustainability values: a reduction of 32% of polluting emissions in the atmosphere since 2002; an increase in the recycling of waste (+9% since 2002;) a constant decrease over the years of production packaging (-15% since 2002); a big reduction in water consumption compared to production (-40% since 2002); a reduction of polluting industrial scrap (-19% since 2002). To improve the ecological quality of Smeg products and for ever-improving safety and hygiene at the place of work, Smeg follows the European RoHs directive that restricts materials and substances that are harmful from a health and environment point of view. Our aim is to help you become confident and understand the Smeg way of cooking. 7 Technology Smeg has always been at the forefront of cooking technology and is the only manufacturer with the unique and energy-efficient Thermoseal oven technology a system which creates a perfectly-controlled cooking environment for consistently better results. 8 Thermoseal Smeg Thermoseal is the result of many decades of development in oven technology and is actually a combination of a number of innovations... The Smeg oven cavity is completely shrouded in 20mm thick ceramic insulation, wrapped in reflective foil sheeting. This keeps the heat inside the oven and away from surrounding cabinetry. Smeg Thermoseal ovens do not draw ambient air into the cavity during cooking. Smeg Thermoseal ovens feature new Venturi technology which allows excess moisture, of foods with high water content, to escape into the cooling system and reduces any condensation build-up. The Venturi valve also contains a catalytic converter which deodorises any steam before it is released. Smeg Thermoseal ovens have a unique cooling system with a 22-blade tangential fan which allows cool air to circulate around the oven cavity (not in the cavity) and up through the panes of glass in the door. There are many benefits of Thermoseal cooking the perfectly-controlled cooking environment means roasts retain nutrients, natural juices and flavour, pastries crisp to perfection and cakes rise evenly and are light and airy. Tangential Cooling Fan Safe-to-touch external surfaces even during the highest cooking temperatures. Within the 60cm built-in ovens, the tangential cooling fan draws fresh cool air through engineered channels and air wells to dramatically temper the radiant heat of the oven. The fascia of the pyrolytic oven, for instance, at 500 C and even after an extended three hour cooking session, only registers 10 C above ambient temperature, a very credible and unique 70 C below Australian Standards limit. S-Logic S-Logic takes the guesswork out of cooking. Smeg s new interface is intuitive, simple and logical. There are even 50 preprogrammed functions that have been tested by our team of cooking consultants locally, and globally, to ensure that you get the best possible result. Smeg s Smart Sense is interactive and self guiding. Cooking preferences are taken into account, food type and weight are adjustable with a simple touch. The preprogrammed functions feature recipes specific to our food and food culture in Australia. The weights, times and even the food types have been preprogrammed to suit local taste, produce, culture and our fresh produce. There is the option to program your top 10 personal recipes with great simplicity. These ovens feature special functions in addition to all the traditional functions expected of a Smeg oven, such as low temperature cooking ideal for lovers of slow cooking. These options are also available in ovens with traditional control knobs, and now with our first touch-screen model, the SFPA140 which uses an LED with full colour TFT (thin film transistor) display. Simplicity, results and Technology with Style. Smart Chef The Smeg Smart Chef system is a program containing certain preset options, making it even simpler and quicker to cook your favourite dishes. The Smart Chef display offers a choice of symbols for cooking beef, pork, poultry, lamb, fish, vegetables, pizza, cake and biscuits. When you select one of these symbols, the oven automatically selects the cooking settings for the best results. For example, it will automatically select the favoured cooking temperature, cooking time, the correct function for cooking (selection of elements and/or fan), and even suggest the correct shelf number for placing food in the oven. The oven will automatically pre-heat, and signal when the oven is at temperature, and the automatic timer will signal when your food is cooked. The options are automatically pre-programmed to suit a family serving (an easy-to-follow reference for these is in the instruction manual). If you have a larger or smaller serve, the time (and temperature) can be very easily adjusted to suit. Once you've tried out an option for the size of serving you cook regularly, you can store the function just how you like it. You will then be able to select it from the list in future and cook with one-touch. 7

9 Ever Clean Enamel Formulation, application, baking and curing are the unique processes used to create Smeg s exclusive Ever Clean Enamel, giving a flawless even finish on oven interiors and baking trays alike, making oven surfaces incredibly easy to maintain. Capacity Smeg has applied innovative engineering and smart design to develop new 60cm ovens with an incredible 68-litre net cooking capacity (79 litres gross). Now, you can stack the oven, fit two cake tins side-by-side and enjoy the added benefits of five shelves, or a pizza stone on the oven floor. Perfect for entertaining! Pyrolytic Cleaning In just ninety minutes, Smeg s pyrolytic cleaning function can assist to rid your oven of grease and waste. Pyrolytic cleaning sends the oven interior to between 475 C and 500 C and literally carbonises food residue to a fine ash. At such an extreme temperature, the quadrupleglazed cool door automatically locks for safety, while Smeg s Cool Door radiant heat is no more than 10 C above ambient because of the Thermoseal system with an independent cooling fan and quadruple door glazing. Vapour Clean To help take the hard work out of cleaning your nonpyrolytic oven, Smeg has developed Vapour Clean. Just add a little water to the cavity on the oven floor, some water and detergent to the oven cavity walls, select Vapour Clean and allow the vapour to soften any residue, easily wiped clean from Smeg s Ever Clean enamel. 8

10 Cool Door Smeg s Cool Door is one of the safest and coolest oven doors available. It is a common misconception that the number of panes of glass in the oven door determines how hot or cool the door is to the touch. The truth is that radiant heat will eventually permeate even thermo-reflective glass and heat will transfer from pane to pane. You could have 10 panes of glass in the door, but eventually the heat will radiate through. Smeg s door is the coolest available because of Smeg s unique cooling system which features a 22-blade tangential fan. Ambient air, driven by the powerful tangential fan, is forced up through the panes of glass in the door three panes in Smeg s non-pyrolytic models and four panes in Smeg s pyrolytic models. This forms a veil of cool air which buffers the radiant heat coming from inside the oven, ensuring the Cool Door is safe to the touch. Not only is the cool door safer for families with young children, it also ensures a cooler, more comfortable environment in the kitchen. In fact, even on a pyrolitic cleaning cycle, where the oven reaches temperatures of up to 500 C, the door temperature will never rise more than 10 C above the ambient room temperature. 11 Telescopic Shelving Guides Smeg s telescopic shelving guides ensure Smeg shelves are stable and safe. Each shelf can be telescoped forward, providing a flat plane and easy access. Standard or optional depending on model selection. Illumination Halogen lights are positioned on the side walls of the new 79-litre oven cavity for a better view of each shelf. Precise Temperature Control Smeg has developed an electronic thermostat, positioned within the oven cavity. 12 Oven Functions ELEMENTS AND FAN It s logical the choice of element determines the direction of the heat. The heat is supplied by the elements and circulated by the fan/s. NOTE: the door must remain closed for all cooking including grilling. Fan Forced fan + circular rear element This versatile function is ideal for baking and roasting large quantities of food. It allows you to use every shelf position, including the oven floor, because the heat source is from the back of the oven. DIRECTIONAL HEAT ARROWS Super Fan Forced fan + circular rear element + floor element Excellent for quiche and custard tarts etc when you need base heat for browning and crisping of the pastry base while the filling is cooked in the gently circulating heat. Preheat your pizza stone and cook pizza on the floor of the oven. Supercook fan + perimeter roof element + floor element + circular rear element Fan Assisted fan + perimeter roof element + floor element Faster preheating. Perfect for roasting; after the meat is removed from the oven to rest, turn the temperature up to 220 C for the best roast potatoes. Excellent general cooking function for roasts, cakes and desserts. Provides very even cooking throughout the middle zones of the oven. The highest and lowest levels will provide additional top or bottom browning and crisping. Convection perimeter roof element + floor element A gentle heat for long slow cooking of fruit cakes, casseroles and slow roasts. Single level cook using the middle zone of the oven to achieve perfect results. Fan Grill fan + perimeter roof element + inner roof element High power full width grilling producing succulent grilled meat, chicken or fish, while at the same time baking vegetables & dessert below. Also great for chips. With this function both top elements are being used. The oven door must be closed while grilling. Half Fan Grill Only the top centre element is used providing good coverage front to fan + inner roof element back to the centre of the grill tray. Use to cook smaller quantities of food. Oven door must be closed while grilling. Static Grill perimeter roof element + inner roof element Radiant heat is directed straight onto the top of your food. Use this function for toast, cheese melts, focaccia etc. Turn to this function toward the end of cooking if the food requires additional top browning. Oven door must be closed while grilling. ECO fan + perimeter roof element + floor element Using the grill and lower heating element in combination is particularly suitable for cooking on a single shelf only, as it provides low energy consumption. Fan Forced fan + circular rear element This versatile function is ideal for baking and roasting large quantities of food. It allows you to use every shelf position, including the oven floor, because the heat source is from the back of the oven. The oven draws a maximum of 9 amps on this setting. 11

Fan Forced and Grill rear fan element + grill Bakers Function fan only + floor element Ideal for cooking large quantities of food which require top browning and crisping. Because the bottom element is not being used it allows use of the oven floor to extend the oven s capacity. Sensational for dishes with a pastry base. Produce wonderfully crisped pies, tarts and quiches, every time. Base Heat concealed floor element only Choose Base Heat for crisp pastry or any dish needing a higher base temperature. Base Heat will also keep a full oven hot without overcooking. Snowy white crisp Pavlova is easily achieved with this function. Proofing both roof elements Heat from the top of the oven cavity makes it easier to proof all types of dough and guarantees perfect results, quickly. Choose length of defrost time by selecting a weight or a time. Whether you want to cook, re-heat, defrost or sterilise, the steam function is your gentle, healthy and regenerative alternative. A great alternative to a double oven when coupled with a convectional oven. Gently reheat food retaining moisture, colour and flavour. Sterilise babies bottles & preserving jars etc. The combi steam function combines the use of the hot air element with the addition of steam. This function is perfect for baking and roasting functions where extra moisture is required 13
