6 FRYERS Door Hardware Broken? Handles Catches Hinges FRYERS Thermostat dial readable? Thermostat bulbs and probes secure? FRYERS Is the flue clear of debris? Is the equipment restraining cable secure? Do fryer baskets, basket supports, and skimmers have broken wires? 6

Tighten loose locknuts on infinite controls and toggle switches. Replace broken or missing rubber toggle switch boot.

7 FRY HOLDING STATIONS Replace missing or burnt-out bulbs. Check for missing wire guards. Check elements for excessive warping. Not a D-I-Y. A qualified service tech must replace. FRY HOLDING STATIONS Replace missing or worn-out knobs. Tighten loose locknuts on infinite controls and toggle switches. Replace broken or missing rubber toggle switch boot. BROILERS Replace broken grates. Replace warped or broken radiants. Replace worn or missing knobs. Is pilot and/or burner completely lit? Clean air mixer openings. Clean burner holes. Tighten jam nut when finished. Do not adjust casters more than ½. DRAWER WARMERS Check thermostat bulb is secure. Replace worn or missing knobs. Fix/replace loose or missing handles. 8

DRAWER WARMERS Replace drawer gaskets. Screw-in gasket frame. Lift inner bottom and look for screws.

Gently pull away from track starting at corner. Submerge new gasket in warm water.

9 DRAWER WARMERS Check thermostat bulb is secure. Replace worn or missing knobs. Fix/replace loose or missing handles. Do drawers open easily? Check drawer slides and rollers. Check drawer seals. Replace drawer gasket if needed. DRAWER WARMERS Replace drawer gaskets. Screw-in gasket frame. Lift inner bottom and look for screws. Remove screws to remove gasket. Screw on new gasket. Snap-in (push-in) gasket frame. Lift gasket and look for track. Gently pull away from track starting at corner. Submerge new gasket in warm water. This will make it easier to push dart on new gasket back into track. Dart RANGES/OVENS Replace broken or missing spider or top grates. Replace missing or worn out thermostat dials or burner knobs. Tighten or replace loose or broken door handles. 9

Starting at top corner, slowly press new gasket into track Dart REFRIGERATION INSTALLING GASKETS Thoroughly clean the cabinet perimeter and where the gasket attaches to the door Allow gasket to reach room temperature before unfolding Carry gasket by corners and avoid squeezing Soak gasket in 140 to 185 F water for 15 to 30 minutes to remove any distortions or kinks. Can also apply heat from hair dryer or heat lamp. Repair any tears with vinyl cement 14

Replace leaking hose or broken spray valve handle. Repair leaking spray valve. WRONG Replace standard valve with water saving spray valve or spray face. 16
