Function and Purpose This unit is intended to be used for cooking fresh or frozen foods in a commercia foodservice operations ony. It is not intended for househod, industria or aboratory use. Before using this equipment it must be ceaned and dried thoroughy. Cean a surfaces before use. Faiure to cean surfaces before using the unit coud cause food contamination. This equipment is a medium duty appiance capabe of a wide variety of bake appications. The temperature is thermostaticay controed. The temperature range is 150 F - 570 F (65 C - 299 C). Unpacking the Equipment and Initia Setup When no onger needed, dispose of a packaging and materias in an environmentay responsibe manner. 1. Remove a packing materia and tape, as we as any protective pastic from the equipment. 2. Cean any gue residue eft over from the pastic or tape. NOTE: There must be a minimum of 12 (30.4 cm) between the equipment and any surrounding was. The surrounding was must be made of noncombustibe materias. The equipment must be instaed in accordance with oca fire and buiding reguations. 3. Pace the equipment in the desired position and height. 4. Mode 40702 Ony. This mode is equipped with a water spray feature. To utiize the water spray feature the unit shoud be connected to a potabe water suppy with a pressure between 3 and 30 PSI. The 4 egs must be instaed to compy with NSF. 5. Pug the equipment into a propery grounded eectrica suppy matching the namepate rating. amage to the equipment can occur if incorrect power is suppied to equipment. The timer needs to be ON for the heating eements to function. Modes 40701 and 40703 Ony: Browning Function - Used to brown a food product has been fuy cooked. 1. Pace the sheves in the desired positions inside the unit. Assure the food product is not too cose or touching the inside top or heating eement. B BROWN CONTROL (40701 and 40702 Ony). Used to set or adjust the temperature of the upper eement. The numbers on the dia correspond with the oven temperature. The bake contro must be set in the BROWN position and the timer in the ON position for the upper eement to heat. The fan does not operate when the brown function is operating. C TIMER. Timer can be set for 1-120 minutes, or it can set to constant ON position. The timer must be operating in order for Bake to function. The timer has no be or buzzer. PILOT LIGHTS. This ight indicates that the oven is heating and the timer is activated. Once the set temperature has been reached the ight wi go out. Equipment wi continue to maintain heat and temperature as the ight cyces on and off. This ight is not a power ON indicator. The timer piot ight wi iuminate when the timer is operating. E MIST CONTROL BUTTON (40702 Ony). A push button ocated on the front pane of the oven. Sprays a sma amount of water to enter the baking chamber. Operation WARNING Burn Hazard. o not touch hot food, iquid or heating surfaces whie equipment is heating or operating. Hot surfaces and food can burn skin. Aow the hot surfaces to coo before handing. o not drop or spi water onto the cooking surface as it can spray or spatter. It is recommended that the door be opened sighty during browning. 2. Switch the bake contro knob (A) to the brown function icon (B) to the indicator (C). See Figure 3. 3. Set the brown contro knob () to the desired temperature. The timer contro (E) does not need to be used for the browning function to operate. 4. Pace food product into the unit and monitor. Modes 40702 Ony: Humidity Function - Used to provide a heavier crust on bread and ros. The humidity function works best if activated at the beginning of the baking cyce after the oven has reached the cooking temperature and the food product has just been paced into the oven. 1. Press the mist contro button (E) to activate a spray of water into the cooking chamber. Cose the door and turn the bake contro (A) to 525 F (274 C). set the timer (C) for 30 minutes. uring this burn-in you may notice a sight odor, this is norma. See Figures 1 and 2. A Modes: Baking Function - Used to bake or cook food product. 1. Pace the wire sheves or pans in the desired positions inside the unit. Aow a space of at east 2 (5 cm) between wire sheves or pans. 2. Set the bake contro (A) the desired temperature. 3. Set the timer contro (C) to the desired time. The fan and oven ight wi operate continuousy. The heating eements wi cyce on and off to maintain a consistent temperature. 4. Pace food product into the unit and monitor. Ceaning To maintain the appearance and increase the service ife, cean your equipment daiy. WARNING Eectrica Shock Hazard. Keep water and other iquids from entering the inside of the equipment. Liquid inside the equipment coud cause an eectrica shock. o not spray water or ceaning products. Liquid coud contact the eectrica components and cause a short circuit or an eectrica shock. o not use equipment if power cord is damaged or has been modified 1. Turn off and unpug the equipment. 2. Aow the equipment to coo competey before ceaning. NOTE: o not immerse the cord, pug or equipment in water or any other iquid. 3. Using a damp coth, sponge dipped in soapy water to cean the outside of the equipment. 4. o not use caustic or abrasive ceaners on this unit. 3

The oven door may be removed for ceaning. To remove and insta the oven door: 1. Aow the equipment to coo competey before removing the door. 2. Open the door (B). See Figure 4. 3. Note the down or back position of hinge ocks (E). Check that both sides are in this position. 5. Tit the oven door (B) up sighty and ift the oven door out. 6. oor (B) may be ceaned. 7. Using a damp coth, sponge dipped in soapy water to cean the door (B). 8. Use towes to competey dry the door (B) or aow it to air dry competey. C C E E B A A B Figure 4. Pace the arm () so that it sets under pin (C). See Figure 6. 10. Rotate the hinge ock (E) off the hinge arm () as shown. Repeat on both sides. See Figure 4. 11. Carefuy open and cose the door to verify that it is operating correcty. If not repeat steps 4 and 5. Maintenance Repacement of the oven ight. 1. Turn off and unpug the equipment. 2. Aow the equipment to coo competey before ceaning. 3. Unscrew the ight cover. 4. Remove and discard the od ight. 5. Insta a new ight.
