GENERAL The HD, Fri-jado Hot Deli, series of deli display cases hold hot food products at regulated temperatures maintaining both freshness and quality. The display cases feature electronic temperature regulation of the well heat and air stream. Quality stainless steel, clear/mirrored tempered glass and a pan frame (in the Full-Service) work together to provide the customer with an Ultra-View of hot deli products. Full-Service cases may include 4-step humidity adjustment. Combinations of HD cases can be placed next to each other to provide a variety of pan configurations. Display cases accept all standard size pans. Self-Service cases are provided with a flat self-service display. As options, the display case can be mounted on a base and / or can be equipped with a second level display rack. Proper installation, usage, and maintenance of your deli display case is important. Please read this entire manual and carefully follow all of the instructions provided. LIMITED WARRANTY THIS PRODUCT HAS A ONE-YEAR WARRANTY FOR PARTS AND LABOR. INSTALLATION Prior to installation, test the electrical service to assure that it agrees with the specifications on the machine data plate. The appliances are equipped with a flexible electric supply cord provided with a three- or four-prong grounding plug. This plug must be connected into a properly grounded three- or four-prong receptacle. If the receptacle is not the proper grounding type, contact an electrician. Do not remove the grounding prong from this plug. UNPACKING Immediately after unpacking the deli display case, check for possible shipping damage. If the deli display case is found to be damaged after unpacking, save the packaging material and contact the carrier within 15 days of delivery. Remove all vinyl protection from the stainless steel surfaces of the display case and any tape from the glass and steel surfaces. INSTALLATION OF THE SIDE GLASS PANELS CAUTION Handle glass panels with care to avoid breakage. The side glass panels are tempered safety glass. If the edges of the glass panels scrape against stainless steel, concrete or other hard surfaces, breakage may occur. 6 2 x 7 2 x 5 4 2 3 2 4 5 1 1 1. Clean the inside, the removable parts and the accessories thoroughly with a cleanser and water before putting the unit into use. 2. After cleaning, wipe the unit with a cloth moistened with clean water to remove cleanser residues and then dry the entire unit. 3. Place all (optional) parts and/or accessories. Follow steps 1 to 4 to place a pan frame and follow steps 5 to 7 to place the side and sliding doors. 4. Insert the plug into the socket. 5. Fill the steam tray ¾ of the way using clean cold water. Use soft water by preference. LOCATION The installation location must allow adequate clearances for servicing and for proper operation. Be sure that the ambient temperature does not drop below 68 ºF (20 ºC) or exceed 85 ºF (30 ºC). The units are only intended for indoor use. 6

INSTALLATION CODES AND STANDARD In the United States, all HD series of deli display cases must be installed according to the following codes: 1. State and local codes. 2. National Electric Code, ANSI/NFPA (latest edition). Copies may be obtained from the National Fire Protection Association, Batterymarch Park, Quincy, MA 02269. In Canada, all HD series of deli display cases must be installed according to the following codes: 1. Local codes. 2. Canadian Electric Code, CSA C22.1 (latest edition) available from the Canadian Standard Association, 5060 Spectrum Way, Suite 100, Mississauga, Ontario, Canada L4W 5N6. ELECTRICAL CONNECTIONS Electrical and grounding connections must comply with the applicable portions of the national electrical code and / or other local electrical codes. Disconnect electrical power supply and place a tag at the disconnect switch indicating that you are working on the circuit. Ensure that the electrical power supply agrees with the specifications on the data plate and complies with the wiring diagram, on the field wiring connection box. Refer to the ELECTRICAL DATA chart below. 7

Excess lime scale build up on water level sensor probes will cause an error in the automatic water fill and the humidity tray may not fill with water. The water-level sensor in the display case uses ions in the water to detect the water level. Do not use distilled (fully de-mineralized or de-ionized) water. This could provide a false reading to the sensors and overflow the humidity tray. 8

BEFORE FIRST USE Disconnect the electrical power to the machine and follow lockout / tag out procedures. The display cases must be burned-in to release any odors that might result from heating the new display case surfaces. 1. Clean, sanitize, rinse and wipe dry the display case and all its parts and accessories both inside and outside. Refer to Cleaning for further instructions. 2. Fill the humidity tray. Refer to Operation for further instructions. 3. Operate the display case at maximum temperature settings for 30 minutes. Smoke, with an unpleasant odour, will normally be given off during this burn-in period. Provide adequate room ventilation and avoid inhaling. 9

OPERATION The deli display case and its parts are hot. Use care operating, cleaning or servicing the deli display case. Set the temperature 1. Press and quickly release key A4 two times. The set value will be shown on the display. 1. Set the required temperature using the up (A3) and down (A5) keys. 2. Press key A4 to save. DISPLAY-WARMER IN FULL-SERVICE HUMIDIFIED MODEL Switch on 1. Keep keys B3 and B4 pressed simultaneously for 2 seconds. 2. Switch on the lighting with key B3. 3. Switch on the required IR emitters with keys B1. B1 B7 B8 B2 B3 B4 B5 B6 Switch off 1. Keep keys B3 and B5 pressed simultaneously for 2 seconds. Check set temperature The temperature in the warmer is shown on display B2 during use. 1. Press key B4 or B5 for a short time. The set temperature will be shown on the display. The measured temperature in the warmer will again be shown after 10 seconds. Set the temperature 1. Press key B4 or B5 for a short time. The set value will be shown on the display. 2. Wait 5 seconds; you cannot immediately change the setting. 3. Set the required temperature with keys B4 and B5. 4. Wait until the display again jumps to the measured temperature in the warmer. The adjustment has now been saved. 12

Topping up the steam tray The front filler unit can become hot. You hear a signal as soon as the steam tray requires topping up. Humidification will be automatically switched off. 1. Press key B7 or B8 to stop the sound signal. 2. Fill the steam tray by 1.7 gallon (approx. 6.5 l) with hot water to prevent large temperature differences and severe steam occurring. Humidification will be restarted automatically based on the previously set adjustment after topping up. You do not have to set it again. Set the humidifier Water consumption will amount to approx. 0.3 gallon per hour in relation to the maximum position. Indication bar B6 displays the humidification degree. 3/3, humidification 100% switched on; 2/3, humidification 67% switched on; 1/3, humidification 33% switched on; 0, humidification switched off; the bottom segment of the indication bar will flash every 10 seconds. 1. Set the required humidification level with keys B7 and B8. Set the IR emitters 1. Press keys B1 for a short time to switch on or off the related IR emitter. The indication light on top of the key will light up if the emitter is switched on. PREHEAT 1. Allow the case to preheat 30 to 60 minutes. All doors must be closed in order for unit to preheat properly. 2. Verify that the display case is at the proper temperature. 13

LOADING FOOD PRODUCT INTO THE DISPLAY CASE (FULL-SERVICE) 1. Open sliding glass door. 2. Load pans. 3. Close sliding glass door. Sliding glass doors should remain closed when case is not being loaded. LOADING FOOD PRODUCT INTO THE DISPLAY CASE (SELF-SERVICE) 1. Open sliding glass door. 2. Load packaged food into bottom plate of display case. NOTE : Do not double stack products on top of each other. Contact with the bottom plate is necessary to maintain proper product temperature. 3. Close sliding glass door. Sliding glass doors should remain closed when case is not being loaded. CHECKING THE TEMPERATURE 1. Check the core temperature of the products in the display case every hour with a thermometer probe. Keep records of the results. Always use a disinfected thermometer probe 14

CLEANING The deli display case and its parts are hot. Use care operating, cleaning or servicing the deli display case. Disconnect electrical power before cleaning. CAUTION Do not clean with oven cleaners. Do not clean with a high-pressure hose. END OF THE DAY Cleaning the Interior of the Case 1. Raise the front (customer side) glass. Door is easier to open when held on corner and pulled up. Glass stays up on its own. 2. Remove pans. Remove divider bars if necessary. Wash with warm soapy water, rinse, sanitize and dry with soft clean cloth; or wash in commercial dishwasher. (Full-Service only) 3. Clean interior stainless steel surfaces with warm soapy water, rinse and wipe dry with a soft cloth. Cleaning the glass 1. Remove clear glass protector strips from top and bottom Self-Service front glasses. 2. Clean door glass handles with warm soapy water, rinse and dry. Clean protector strips in warm water, rinse and dry. 3. Clean all glass surfaces with warm soapy water, rinse and dry, or use a commercial glass cleaner. CAUTION Do not use a scouring pad or abrasives on glass. Damage to the reflective coating will result. 4. Replace clear glass protector strips. 15

Cleaning the Exterior of the Case 1. Clean the control panel with a sponge or clean soft cloth. CAUTION Excessive water and harsh cleaners will damage the control panel. 2. Clean the exterior of the display case with warm soapy water and a soft cloth or sponge. Rinse thoroughly and wipe dry with a soft clean cloth. Cleaning underneath the base (If provided) The base can be equipped with a front and or back cover. To clean the area underneath the base these covers must be removed. 1. Lift the cover by the rim on top of the cover. 2. Pull the cover towards you. Re-Assembly of the Adjustable Frame and Tray 1. Replace pans. Replace exhaust profile and divider bars. Refer to Installation of Adjustable Frame and Trays on page 7. 2. Lower the front glass (customer side). Guidelines for Maintaining Stainless Steel Surfaces There are four basic things that can break down the surface layer of stainless steel and allow corrosion to develop: 1) Abrasion, 2) Deposits, 3) Water and 4) Chlorides. Avoid abrasion from rubbing with steel pads, wire brushes or scrapers that can leave iron deposits on stainless steel; instead, use plastic scouring pads or soft cloths. For stubborn stains, use products such as Cameo, Talc or Zud First Impression. Always rub parallel to the polish lines or with the grain. Hard water can leave deposits that promote rust on stainless steel. Treated water from softeners or certain filters can eliminate these mineral deposits. Deposits from food must be properly removed by cleaning. Use mild detergent and non-chloride cleaners. Rinse thoroughly. Wipe dry. If using chloride containing cleaners or sanitizers, rinse repeatedly to avoid stainless steel corrosion. Where appropriate, apply a polish recommended for stainless steel (such as Benefit or Super Sheen) for extra protection and luster. 16

MONTHLY Humidity Tray (Full-Service Humidified Case) De-Liming the Water Level Sensor Probes 1. Follow shutdown procedures and allow unit to cool. 2. Spray a de-liming agent onto the water level sensor probes once a month (or more often if needed) to avoid scale build up. 3. Remove scale with a non-abrasive scouring pad. De-Liming the Humidity Tray 1. Follow shutdown procedures and allow unit to cool. 2. Open and remove humidity tray door. 3. Remove humidity tray. 4. De-lime humidity tray with de-liming agent. 5. Replace humidity tray and ensure that the water level probes are in their proper vertical position. 6. Replace humidity tray door. 17
