Please read carefully before installing and operating the oven. 1) The oven is destined to a specific and professional use and must be operated by qualified personnel. ) Any modification of the electric system necessary to install the oven is to be carried out by qualified personnel only. 3) Modifying or tampering with the features of the oven is dangerous. ) The oven is not to be cleaned by means of jets of water. 5) Before cleaning or carrying out the maintenance of the oven, disconnect the oven from the mains supply and let it cool. 6) Do not caary out periodical tests or any reparation yourself. INSTRUCTIONS FOR INSTALLATORS The following instructions are addressed to qualified installators who need to carry out all installation, adjustment and maintenance operations correctly according to the regulations in force. Any intervention is to be carried out when the oven is disconnected from the power supply. Before operating the oven, carefully remove the dedicated protective film from the stainless steel parts without leaving any glue residues on the surface. Remove residues by means of a solvent. POSITIONING The side and back surfaces of the oven are to be positioned in such a way as to allow the electric connection and the maintenance. The oven may not be built in or positioned in a bank. ELECTRIC CONNECTION The connection to the power supply network is to be carried out according to the regualtions in force. Before carrying out the connection, make sure that: - voltage and frequency match the values reported on the technical specifications plate on the oven; - the pressure relief valve and the system can support the load of the oven (see the technical specifications plate); - the power supply system is effectively grounded, according to the regulations in force; - the all-pole switch used for the connection may be reached when the oven is installed. If the oven is connected to the network directly, an all-pole switch with a 3 mm minimum opening between contacts is to be placed between the oven and the network. The switch must support the load of the oven and is to comply with the regulations in force. The YELLOW/GREEN ground cable must not be interrupted by the switch. The oven must be connected to the ground line of the network. When the oven is working, the power supply voltage is to remain within a +/- 10% range of the voltage rating. COLD WATER CONNECTION The oven is to be connected to the water supply system by means of a cut-off cock; the water pressure is to range within 50/100 KPa (0,5<PH or < 1,5 Bar); the installation of a pressure reducer is recommended. SAFETY DEVICES The oven is equipped with an interrupting thermal device to protect it against dangerous overheating. In case of overheating, the interrupting device interrupts the oven operation, which is later resumed automatically. - 15 -

OPERATING INSTRUCTIONS When the oven is operated for the first time, a 1 hour loadless operation at the maximum temperature is recommended to eliminate any possible unpleasant smells caused by the thermal insulation and the grease residues of the manufacturing process. During operation, keep off the hot areas of the external surfaces of the oven. The oven is to be destined only to the use it was specifically conceived for, i.e. cooking food. Any other use is prohibited. The oven may be used for: cooking creams, cakes, sauces, pizzas, meat, fish and vegetables; gratinating; reconditioning refrigerated and frozen food. When placing the food into the cooking chamber, leave a 0 mm. gap between baking pans to avoid obstructing hot air circulation. Do not use baking pans with excessively high edges, since they may act as barriers against the circulation of hot air. Pre-heat the oven before cooking to achieve maximum cooking evenness. Avoid adding salt to the food inside the cooking chamber. - 16 -

CONTROL PANEL FEC03 CONTROL PANEL DESCRIPTION THERMOSTAT KNOB (1) It controls the temperature inside the cooking chamber. TIMER KNOB () It controls the oven starting and cooking time. STOP COOKING TIMER PROGRAMMING () SEMI-AUTOMATIC OPERATION The maximum programming time is 10'. Rotate the programming knob and set it on the desired cooking time length; from now on the programme is operating. The end of cooking is signalled by the oven switching off automatically and by the alarm which may be switched off by pressing the relevant knob. MANUAL OPERATION The oven may be operated without selecting the cooking time. Simply rotate the programming knob () counter-clockwise until the manual position is reached. The oven operation is started by rotating the programming knob () until the symbol or the programming time 0 10 are reached. The oven thermostat yellow led (3) is switched off each time the selected temperature is achieved by the cooking chamber. It is switched on again when the thermostat operates to increase the temperature. During operation the cooking chamber lamp is always on. HUMIDIFIER FUNCTION To generate steam inside the cooking chamber, when the oven is operating push the button () controlling the humidifier, signalled by the green led. OVEN DOOR OPENING The oven door opening is controlled by an electric lock operated by the dedicated button (5) in the control panel. If the power supply is disconnected, the door may be openend by using the lever linked to the rod underneath the base (6). CONVECTION COOKING Start the oven by rotating the thermostat knob (1) until the desired temperature is achieved and rotate the timer knob () to select the cooking time. DE-FROSTING Start the oven by rotating the selector knob (1) until reaching the symbol the timer knob () to select cooking time or continuous operation. and rotate - 19 -

OPERATION CONVECTION COOKING: Select the convection function (hot air) by rotating the selector knob (7) until the symbol is reached, set the desired temperature by means of the thermostat knob (1), set the cooking time by means of the timer knob () (max temperature 65 ). STEAM COOKING: Select the steam function by rotating the selector knob (7) until the symbol is reached and set the cooking time by means of the timer knob (). The thermostat knob (1) remains on the value zero since the temperature is controlled by an extra thermostat keeping a 100 C (+/- 10 ) constant temperature inside the cooking chamber. COMBI COOKING: Select the combi function by rotating the selector knob (7) until the symbol is achieved, set the cooking temperature by means of the thermostat knob (1), set the cooking time by means of the timer knob (). During combi cooking (convection+steam) the cooking temperature should not be excessively high (170 180 C) to achieve aximum performance. With this function, the steam is generated directly inside the chamber by conveying water onto the resistors. The water supply is automatically controlled by means of a dedicated device and is signalled by the green led (8) of the humidifier. N.B. : Pre-heating the chamber at the same cooking temperature is necessary for all cooking functions. MAINTENANCE AND CLEANING WARNING: before carrying out any operation disconnect the oven from the power supply. For a longer life of the oven, frequent careful cleaning is necessary, making sure that: The stainless steel parts are cleaned by means of suitable non-abrasive products available on the market. Do not use substances containing chlorine (bleach etc.). Chromium-plated parts are cleaned by means of a cloth, water and soap or water and a non-corrosive liquid detergent. Do not use steel wool or detergents containing abrasive substances. CLEANING GLASS PANELS To clean glass panels use warm water only and avoid using rough cloth or abrasive substances. Do not clean glass panels when they are still hot. CLEANING INSIDE THE OVEN The oven must be cleaned after each cooking operation. Let it cool, then clean inside the oven by means of a cloth, hot water and normal detergents; rinse carefully and dry by means of a soft cloth. To facilitate operations, remove the grid-holder.
