2 Control Panel CYCLES Allows user to set, recall and display cooking cycles. Light on = cycles set; Light flashing = cycle in progress CONVECTION Convection cooking mode RECIPES Set, recall and display cooking programmes, saved recipes and service programmes (i.e. washing the oven) TEMPERATURE DISPLAY Displays oven temperature TIME DISPLAY Displays cooking time CORE PROBE Activates core probe cooking setting AUTOMATIC HUMIDITY CONTROL Performs function of a manual humidifier when pressed with cooking in progress. OVEN LIGHT This switches on internal oven light, allowing user to check cooking progress. The light goes off automatically when door is opened. When door is closed press button again to switch off. STEAM Steam cooking mode COMBI Combi cooking mode FAN SPEED Select fan speed: light off = normal speed; light on = reduced speed and power TEMPERATURE SETTING / SELECTION Turn to change temperature. To confirm selection press the scroller. VENT OPENING This function is only activated in convection mode. Pressing button opens cavity vent, allowing moisture to escape from cavity. It should then be closed manually (LED on = vent open; LED off = vent closed; LED flashing = vent in operation). TEMPERATURE SETTING / SELECTION Turn to change temperature. To confirm selection press scroller. RAPID COOLING This function only works with door open. Pressing button activates the fan, which rapidly lowers oven temperature to 50 C. MAIN SWITCH - START-STOP / ON-OFF Press button for 3 seconds to switch appliance on, activating control panel and self diagnosis. To start and stop cooking progress: Light on: START - cooking started; Light blinking: TEMPORARY STOP - obtained by opening door. Cooking and remaining time is stopped. Closing the door restarts cooking. Light off: FINAL STOP - obtained by pressing the button. Cooking stops as if cooking time has been completed. 2
3 Quick Start Guide Get Cooking Quickly... SWITCHING THE OVEN ON Press START / STOP button for 3 seconds to turn oven on. PRE-HEATING THE OVEN As a general rule, always pre-heat cavity when empty, setting the temperature approximately 15-25% higher than subsequent cooking temperature. Turn the TEMPERATURE SETTING scroller to set desired temperature. Press scroller to confirm. Press START / STOP. STARTING TO COOK When oven has reached desired pre-heat temperature, press and hold CYCLES button for 3 seconds to reset any previous cooking setting. Select the Cooking Mode - press desired cooking mode (convection, steam or combined) button. The selected cooking mode LED will remain on. Set the Temperature - default temperature shown on TEMPERATURE DISPLAY is 130 C. Turn TEMPERATURE SETTING scroller to set desired temperature. Press scroller to confirm. Set the Time - default time shown on TIME DISPLAY is Infinity [InF]. To amend this, turn TIME SETTING scroller to desired time and press scroller. (Turn scroller to the right to set cooking time; to the left to set time as Infinity). Place food in the oven. Press START / STOP button to start cooking. The button lights up, TEMPERATURE DISPLAY indicates current oven temperature while TIME DISPLAY shows time remaining until end of current cooking cycle (if set). 3
4 Basic Operations Switching the Oven On Press START / STOP button for 3 seconds to turn oven on. Preheating the Oven The oven pre-heating cycle is extremely important and useful for successful cooking. As a general rule, always pre-heat cavity when empty, setting temperature approximately 15-25% higher than subsequent cooking temperature. In the case of steam cooking, pre-heat empty cavity using convection mode as this will allow temperatures of over 130 C to be selected. Manual Cooking Press and hold CYCLES button for 3 seconds to reset any previous cooking setting. Select the Cooking Mode - press desired cooking mode (convection, steam or combined) button. The selected cooking mode LED will remain on. Set the Temperature - default temperature shown on TEMPERATURE DISPLAY is 130 C. Turn TEMPERATURE SETTING scroller to set desired temperature. Press scroller to confirm. Set the Time - default time shown on TIME DISPLAY is Infinity [InF]. To amend this, turn TIME SETTING scroller to desired time and press scroller. (Turn scroller to the right to set cooking time; to the left to set time as Infinity). SAVING A RECIPE If you wish to save a recipe to the oven memory, press TIME SETTING scroller for 3 seconds. The first free programme will appear on TEMPERATURE DISPLAY - select desired programme number by turning TEMPERATURE SETTING scroller and pressing it to confirm. Place food in the oven then press START / STOP button to start cooking. The button lights up, TEMPERATURE DISPLAY indicates current oven temperature while TIME DISPLAY shows time remaining until end of current cooking cycle (if set). 4
5 Basic Operations If a cooking time has been entered, the oven will beep when cooking time is complete. Press one of the scrollers or open door to stop sound. To stop cooking manually, press and hold START / STOP until START / STOP light switches off, indicating oven is off. If, during cooking, it is necessary to check / change time or temperature settings, press CYCLES button and displays will blink. The user can then change any values using relevant scrollers, remembering to press scroller to confirm the change. Manual Cooking with Cycles in Sequence Select the Cooking Mode - press desired cooking mode (convection, steam or combined) button. The selected cooking mode LED will remain on. Set the temperature of cycle 1 - turn TEMPERATURE SETTING scroller to desired temperature. Press scroller to confirm. Set the time for cycle 1 - turn TIME SETTING scroller to set desired temperature. Press scroller to confirm. (Turn scroller to the right to set cooking time; to the left to set time as Infinity [InF] thus utilising the first cycle as pre-heating). To add another cycle press CYCLES button. Proceed with setting cooking mode, time and temperature as above. If other cycles are desired, follow the same sequence. This programme can be saved to oven memory using method outlined on previous page. Press START / STOP button to start cooking. The LED lights up, TEMPERATURE DISPLAY indicates current oven temperature while TIME DISPLAY shows time remaining until end of the current cooking cycle (if set). The oven will beep when cooking time is complete. Press one of the scrollers or open door to stop sound. NOTE Cooking in manual mode with several phases in sequence allows pre-heating of the empty cooking chamber before cooking: just set first cycle time to infinite [InF]. On reaching pre-heat temperature, an acoustic signal and [LoA] on the display inform that is time to use the oven. When door is closed, second LED on CYCLES button flashes, indicating start of second cooking cycle. 5
6 Basic Operations Cooking with Core Probe The core probe allows cooking to be regulated by monitoring temperature at product core. This device overrides the time setting, and cooking stops as soon as temperature at the core reaches selected value. Positioning the Probe Once oven temperature has been set press CORE PROBE button and turn TIME SETTING scroller to set required core temperature. Insert probe into food and proceed according to cooking mode selected. PRACTICAL EXAMPLE Mode: Convection; Oven temperature: 140 C; Time: Infinite; Core temperature: 78 C What happens When temperature at core of the food reaches 78 C, with the oven temperature at 140 C, the heat to the oven shuts off. It automatically switches on again when core temperature drops by 1 C. In practice, it is no longer the oven temperature setting that regulates operation of heat source, but temperature selected for core probe. NOTES When cooking with core probe the operator must first connect probe to oven. If first cycle is used for preheating, it is necessary to keep probe outside cavity; otherwise the programme cannot start. Wait for a few seconds after connecting core probe (the time it takes the electronic card to identify the probe), then start cooking with START / STOP button. Advantages of core probe cooking: Eliminates risk of loss and waste by improving control over cooking process Enables accurate cooking regardless of quality or size of any food item being cooked Saves time as cooking control is automatic Guarantees strict hygiene as no need for food to be handled, poked or pierced Ideal for large food items Perfect for cooking delicate foods as cooking accurate to within one degree HACCP requirements are always respected 6
7 Programmes S models can store up to 99 programmes (recipes). These can be created from new or transferred from other Falcon S model combination ovens via USB. Programmes can be added or deleted at any time. This section provides information on these functions. Creating a New Programme Press RECIPES button. The display will show [ACC], turn TEMPERATURE SETTING scroller until [Pro] is displayed and confirm by pressing scroller. Turn scroller again until first free programme is displayed (cooking mode LED and programme number on TEMPERATURE SETTING display both flashing) and confirm by pressing scroller. NOTE When the LEDs of the cooking mode buttons and programme number flash on TEMPERATURE DISPLAY, this means the number is free to save the recipe to. The programme number is in use when one LED of the cooking mode buttons and programme number on TEMPERATURE DISPLAY have a solid light. Select the Cooking Mode - press desired cooking mode (convection, steam or combined) button. The selected cooking mode LED will remain on. Set the Temperature - default temperature shown on TEMPERATURE DISPLAY is 130 C. Turn TEMPERATURE SETTING scroller to set desired temperature. Press scroller to confirm. Set the Time - default time shown on TIME DISPLAY is Infinity [InF]. To amend this, turn TIME SETTING scroller to desired time and press scroller. (Turn scroller to the right to set cooking time; to the left to set time as infinity). To add another cycle press CYCLES button. Proceed with setting cooking mode, time and temperature as above. If other phases are desired, follow same sequence. To save, press and hold CYCLES button for 3 seconds, until TEMPERATURE DISPLAY shows [REC], confirm memorisation by pressing TEMPERATURE SETTING scroller. The programme number where cooking mode has been saved is shown on TEMPERATURE DISPLAY. 7
8 Programmes Opening a Programme Press RECIPES button. TEMPERATURE DISPLAY shows [ACC]. Confirm by pressing TEMPERATURE SETTING scroller. Turn scroller to select desired recipe number to be recalled shown on TEMPERATURE SETTING display and then presss scroller. IMPORTANT: If recipe involves the use of core probe, connect probe to the front panel, otherwise the display will indicate the following fault [Err SP] (Core probe error). If it is necessary during cooking to view or amend the values set for current cooking cycle, press CYCLES. If settings of the next phases are to be displayed, press CYCLES repeatedly until display shows the particular cycle of interest. Uploading/Downloading Programmes It is easy to transfer programmes between Falcon S model combination ovens. All that is required are some exisiting programmes and a USB. Uploading Programmes from USB With the appliance live and display off, press RECIPES, TEMPERATURE DISPLAY shows [USb], press TEMPERATURE SETTING scroller to confirm selection. TEMPERATURE DISPLAY shows [hac],turn scroller until [IMP] is shown. Remove safety cap and insert USB into oven USB port. usb port Press TEMPERATURE SETTING scroller to confirm selection. When import has been completed, the oven displays [USB END]. Saving Programmes to USB With the appliance live and display off, press RECIPES, TEMPERATURE DISPLAY shows [USb], press TEMPERATURE SETTING scroller to confirm selection. TEMPERATURE DISPLAY shows [hac],turn scroller until [ESP] is shown. Remove safety cap and insert USB into oven USB port. Press TEMPERATURE SETTING scroller to confirm selection. When export has been completed, oven displays [USB END]. 8
9 Programmes Deleting Stored Programmes Press RECIPES button, TEMPERATURE DISPLAY will show [ACC], turn TEMPERATURE SETTING scroller until [Pro] is displayed and confirm by pressing scroller. Turn TEMPERATURE SETTING scroller to select programme number to be recalled, shown on TEMPERATURE DISPLAY. Hold CYCLES down for 3 seconds, when TIME DISPLAY shows [DEL]. Confirm cancellation by pressing TIME SETTING scroller. When cancellation has taken place, the LEDs of cooking mode buttons flash, indicating that the program is empty. NOTE A programme deleted in error cannot be restored. 9
10 Cleaning Washing the Oven A meticulous cleaning regime is a pre-requisite for impeccable cooking results and better yields. Manual Cleaning Press RECIPES button, TEMPERATURE DISPLAY will show [ACC] - turn TEMPERATURE SETTING scroller until [SPC] is displayed and confirm by pressing scroller. Turn same scroller clockwise until [CL] appears. Press START / STOP to activate MANUAL washing programme. TEMPERATURE DISPLAY shows [raf] if oven temperature is high or [Att] if oven temperature is low. On reaching correct temperature it shows [det In], START / STOP button flashes to indicate a TEMPORARY STOP and a beep signals it is time to open door and spray detergent in oven. Close door and press START / STOP again to turn the wash cycle back on, after which the operator needs to take no other action until the end of the programme. If considerable deposits form on the drain filter in the middle of the bottom of the cavity, clean so as to ensure water and detergent flow out freely. The end of the programme is defined by a beep - open door to turn it off. Switch off the appliance with START / STOP button. NOTE It is a good rule at the end of the wash cycle to rinse the inside of the oven again with the hand-held shower and wipe front seal of oven with a sponge or cloth to prevent premature deterioration. Caution Never use direct or high-pressure jets of water to clean the outside of the oven. Never use corrosive and/or abrasive substances on steel surfaces. Avoid scouring or scrubbing with steel wool or wire brushes, as this could result in irreparable damage. Similarly, aggressive detergents, of non-alkaline formulation containing high percentages of sodium and ammonia, can soon damage the seals, jeopardising oven efficiency and operation. The outside of the oven should be washed with a sponge and warm water using an ordinary detergent suited to the purpose. Use a specially formulated detergent. 10
11 Programmes CALOUT The oven can count the operating hours of the steam generator and therefore can inform the operator when its lime scale cleaning process should be activated through the special CALOUT cycle. When the appliance is switched off, the display shows [CAL OUT]. This message can be removed by pressing any button. The unit will continue to be operational until [CAL END] is displayed, at which time it is neccessary to activate the CALOUT cycle. Failure to do so will see [CAL END] and [ONL CON], which means the steam generator has been disabled, only becoming operational once the CALOUT cycle is performed. NOTE Using the combination oven constantly on 100% steam will use up the CALOUT scale preventer much more quickly. Routine Maintenance It is necessary to periodically clean the deflector and pan racks. To do this: Stop and close off all utilities (gas, electricity and water). Remove the pan racks. Unscrew the deflector screws in order to facilitate cleaning of the rear of the oven. Clean the deflector then rinse thoroughly with the hand shower. Do not use abrasive products or scourers since these will damage the steel surface. Dry with a clean cloth. If there is particularly stubborn grime and dirt, the deflector must be removed. If possible, wash in a dishwasher. Once clean, replace the deflector, making sure the two fixing screws on the right hand side are properly tightened. Prolonged Non Use If the oven is to stand idle for any length of time (e.g. holidays or seasonal closing) the appliance must be cleaned thoroughly, leaving no traces of food or dirt. Leave the door slightly ajar so that the air can circulate inside the oven. Shut off all utilities (electricity, water and gas), if connected. 11
