ON THIS DATE (AND PREVIOUS DATES) THEY ARE SOILED. Closing Comments: THE FILTERS ON THE WATER LINES FOR THE COMBI OVENS WERE LAST CHANGED IN JULY OF REVIEW THE LIFE SPAN OF THE FILTERS AND REPLACE IF NECESSARY. THERE IS A COPPER LINE DRIPPING WATER NEAR THE COMBI OVENS. IT IS NOT KNOWN WHAT DEVICE THE LINE SERVES. IDENTIFY THE PURPOSE OF THE LINE AND LET THIS OFFICE KNOW WHAT LIQUID IS EMITTED FROM THE LINE. THE HOODS WERE LAST INSPECTED IN JULY OF THE HOODS OVER THE WOKS AND CHARBROILERS MUST BE INSPECTED TO DETERMINE IF CLEANING IS NECESSARY EVERY THREE MONTHS. HAVE THE HOODS INSPECTED TO DETERMINE IF CLEANING IS NECESSARY. PLEASE NOTE THAT UPON QUESTIONING THE OPERATOR STATED THAT OCCASIONALLY THE HOODS WILL RELEASE GREASE ONTO THE COOKING EQUIPMENT AT THE END OF THE DAY. Page 4 of 5
