OBSERVATION: Need to clean floor behind CO2 canister in dry storage area CLEANING VENTILATION SYSTEMS, NUISANCE, AND DISCHARGE PROHIBITION REPEAT OBSERVATION hood filters need cleaned(hood cleaned this month) RESPONSIBILITIES OF THE PERMIT HOLDER OBSERVATION: Establishment not doing temperature readings of hot and cold food on buffet prior to opening for business (Temperature logs required by the health department due to past temperature issues on buffet food) RESPONSIBILITIES OF THE PERMIT HOLDER OBSERVATION: Facility equipment not keeping up with needs and should be replaced soon (cold hold buffet not able to support the cold holding temperature, ice machine not producing enough ice for cold holding buffet (frozen water bottles as a back up) RESPONSIBILITIES OF THE PERMIT HOLDER OBSERVATION: Health department has direct the disposal/removal unnecessary equipment many times and establishment still has too much clutter in storage areas.
