3 The Phenomenon Bake-Off Since the seventies (when Bake-Off was introduced) shops have changed the way shops look for good. On a space of no less than one square metre one could create a whole fresh theatre for the customer. Large ovens and provers are no longer necessary to offer a complete range of bread and patisserie products. 5 The Leventi Bakermat Mastermind is the first Bake-Off oven in the world to be equipped with RFID Easy Programming Software. Automatic Error Notification System When for example the water pressure falls away all other functions will be kept operational, in such a way that all other tasks can be used in which you do not need water. PIN-Code Protection To prevent that setting are accidentally changed by others, you can protect the Mastermind by using a personal identification number (PIN-Code). 10 The Ideal Oven Climate Each Leventi Bakermat regulates the climate in the oven chamber through sensors. The temperature can be set accurately up to the degree, also the requested amount of water in milliliters, and the time hours, minutes and seconds. As good as all preparation techniques are, they are easily being carried out by manual or menu controlled programmes. The Leventi Climate Control System ensures the right amounts of time, steam and temperature in such a way that you can prepare your products energy efficient. Therefore the Leventi Bakermat is equipped with the following systems: Direct Injection System (DIS ) Water is being evaporated on the fan in order to be converted into steam by the heating elements. With the Bakermat series you can regenerate, bake, grill and steam without using a boiler! By using a direct injection system you will have less maintenance and energy consumption as an advantage. Air Valve System (AVS ) Air is being attracted from the outside and will enter the oven behind the fan. By the menu controlled Leventi Air Valve System the abundant steam is forced out of the oven chamber. The condenser will then extract water from the humid air through the drain. Climate Control System (CCS ) Smart Cooking means the right amounts of steam, temperature and time when you ask for it. You select before and during the preparation the desired oven climate. The Bakermat will execute your demands and save your settings. Evidentially the Mastermind models are pre-programmed with many baking-, cookingand preparation techniques. Air Turn System (ATS ) For an equal warmth division in all corners of the oven, all Bakermat ovens are equipped with the Leventi Air Turn System, that guides alternating air streams and exact pauses. Variable Revolution Regulator (VRR ) The fan of the steamer will ensure the spreading of the hot air. The speed at which the fan turns can be set in three positions. Therefore you can prepare delicate products with lesser air movement. Feedback Energy System (FES ) One of the most important main points of the Bakermat range is energy saving. The Climate Control technique in every Leventi oven will ensure a minimal quantity of energy is being used to reach a maximal result. A solid door that is opened thousands of times and should seal the oven chamber hermetically, has to meet special demands. The door of the Bakermat is an example of such ingenuity. Handle With a left and right turning Dual Action door handle, you can quickly and easily open the door. Closing it is also very simple. You can slam the door by using your hand or elbow and the door will automatically shut. Did you know? You can have a -year factory warranty because we believe in our products Windows The windows of the with double glass insulated door are made of hardened safety glass, that is covered on both sides with an infrared reflected coating. With the hygienic welding seams in the oven body and the rounded corners there is an optimal airflow control and cleaning. A base at the bottom of the oven chamber will ensure collection and draining of fluids. The sizes of the large oven chamber, equipped with clear halogen lights, is based on the economical Euronorm (EN) size. The oven chamber of the Bakermat is double insulated (0mm) which ensures not only a lesser heat radiation but also a lower energy consumption. The inner racks are easily removable for optimal cleaning. The inner rack for trays and grills are solid on the bottom of the oven chamber. The large tray distance of 9mm will contribute to a perfect airflow. The connections and drain are prepared in such a way that a duplo set up can easily be assembled. 17 The right height of the stand is depending our your personal preference and the ergonomic aspects of working with the oven. You will also give a better view in the oven chamber. Extending worktable By using this stainless steel pull-out worktable, you will create a practical additional and flexible workspace. Trolleys To create additional storage or preparation space you can use a trolley with a capacity of 10 or 20 trays. Roll-in-systems For the Bakermat - and -tray there are roll-in-systems available to work in the most efficient way of (de)charging your oven. Extractor hood For the free ovens Leventi has developed a low maintenance extractor hood for the efficient extraction of steam and mist. Also when opening the door during the baking process the steam will be effectively extracted. For ovens that are connected to a central extraction system there are also hoods without motor available. Extractor hood with LED Ticker Bar For ovens that are being placed in the sight of customers or guests (example given in shops, self-service counters and front cooking situations) the extractor hood can be equipped with a moving LED Ticker Bar (for simple to program texts). Also current baking programmes and baking times can be shown. Hand shower Connected to a separate tap a powerful and adjustable hand shower can be delivered as an additional aid for the cleaning of your oven. This can be hanging or with a roll-up mechanism. 21 Cleaning Innovation Leventi now launches the Suma Auto Oven Concept in cooperation with JohnsonDiversey: the fully automatic cleaning system for the Bakermat series in a closed system Efficient, safe, easy and environmentally friendly The cleaning fluid and the rinsing aid are both in a bag-in-a-box by the name SafePack and are injected in the oven by using a dosing pump. The dosing pump will mix the detergent with water and will spray this on the fan which will ensure a further distribution in the oven chamber. The concept has the following advantages. Thorough cleaning - effective rinsing The cleaning program takes places by an automatic injection of a powerful cleaning detergent that cleans the oven chamber from sugar, protein and residue thoroughly. By the also automatic rinsing aid the cleaner will be neutralised and the residue will be washed away. This will also ensure a shiny and spotless oven chamber. The amount of automatic dosed fluid is related to the cleaning programme of the Bakermat. Safe The Suma Auto Oven System is a closed system. Therefore there is no contact possible with products. Even untrained staff can exchange the SafePacks for cleaning detergent and rinsing aid without dripping or spilling. Environmentally friendly By using the Suma Auto Oven System the waste of plastic bottles and sprayers is brought back by 7%. The materials used in the SafePack are reusable.
