1 WATER TREATMENT FOR FOOD SERVICE EQUIPMENT WATER QUALITY PLAYS A VITAL ROLE IN THE FOOD SERVICE INDUSTRY Not only does water quality determine the taste and quality of all beverages served, it also determines the operating efficiency and longevity of water-fed food service equipment. As important as premium water is to a food service establishment s customers, so is the reduction in water related maintenance problems to the food service operator. Dish Washers, Booster Heaters, Steamers/Combi-ovens, Proofers, Ice Machines, Coffee, Tea, & Espresso Machines, etc., are all susceptible to water related problems caused by sediment, hard water (mineral scale deposits), chlorides, and chlorine/chloramines. Mineral scale deposits are usually to blame for most service calls, especially in high-temp equipment like steamers and combi ovens. 2 WATER TREATMENT FUNDAMENTALS Hard water is the number one maintenance issue facing water-fed food service equipment. Scale in Booster Heater Mineral Scale in Steamer SEDIMENT Sediment consists of small particles of sand, silt, clay, or any undissolved particle that can be filtered out mechanically. All water supplies contain a measurable amount of sediment that can lead to decreased efficiency through clogged equipment orifices and build-up in tanks. Sediment is usually measure in microns. A human hair is 60 microns in size and the unaided eye can see particles down to 40 microns. WaterSpec Filters will remove particles larger than 5 microns (food service industry standard). CHLORINE/CHLORAMINE The removal of chlorine/chloramine from water is most often associated with improving the quality of beverages served to customers but chlorine/ chloramine is also responsible for corrosion related issues in water-fed equipment. In steamers for example, as water is evaporated, corrosive chlorine gas may form leading to corrosion in the generator both above water line and also may carry over into the cooking chamber as well. DISSOLVED SOLIDS / HARD WATER (SCALE) Most water supplies contain dissolved mineral salts such as calcium and magnesium. When water temperature increases in equipment such as booster heaters or steamers, dissolved minerals precipitate out of solution and reform as mineral scale deposits. These deposits cling to each other, building up layer upon layer of hard scale resulting in plugged nozzles, clogged pipes, and insulated heat-transfer surfaces inhibiting energy transfer to the water resulting in slower heat cycles, increased energy consumption, and premature failure of heating elements. CORROSION Corrosion in food service equipment is caused by low ph (acidity), chlorine/chloramine, and chlorides. The ongoing formation and removal of scale deposits may also contribute to corrosion. Corrosion from any one or a combination of these factors may lead to premature replacement of equipment or parts.

3 EFFECTIVE & ECONOMICAL WATER TREATMENT SOLUTIONS WaterSpec s filtration/treatment offering is based on technologies that are not only proven effective in food service applications, but also are economical and easy to maintain. CHLORINE REMOVAL The removal of chlorine from water supplies is accomplished with the use of activated carbon filters. Available in various forms, activated carbon effectively removes 95+ % of chlorine from water supplies. Most water filter products incorporate carbon block filters with excellent chlorine removal capacities and flow rates. MINERAL SCALE CONTROL Unlike chlorine removal, controlling mineral scale deposits is a far more challenging proposition. Various methods have been used in food service attempting to control mineral scale without much success. WaterSpec s approach to controlling scale deposits centers around the effective and economical chemical treatment (HydroBlend ) using advanced scale control compounds specifically formulated to work in hot water equipment such as steamers and dish machines. CHLORAMINE REMOVAL Like chlorine, chloramine reduces the quality of beverages and also poses corrosion challenges to certain types of food service equipment like flash steamers. The removal of chloramine from water supplies is similar to chlorine removal. Activated carbon is still the main technology used with much longer contact times required to remove chloramine which means slower flow rates or larger filters. CORROSION CONTROL Corrosion in water-fed foodservice equipment may be caused by various water components. Corrosion is also specific to certain types of equipment. For example, chloramine in the water supply will not pose a corrosion threat to a coffee machine, but will be cause for concern for a flash steam combi oven. Chloride, either naturally occurring in coastal and desert areas or from salting of the roadways for melting snow will also pose serious corrosion issues to certain types of equipment. 4 ICE MACHINE SOLUTIONS Roughly 70% of service calls on ice machines are water related. The most frequent water related problem associated with ice machines is lime scale accumulation. 5 High quality filtered water delivers: FOUNTAIN BEVERAGE (SODA) EQUIPMENT & DRINKING WATER The main ingredient in a fountain beverage is water, so assuring consistent water quality is critical. Removing chlorine and chloramine provides a better tasting carbonated beverages and reduces extra syrup normally added to the drink to mask the chlorine taste and odor. Chlorine and Chloramine Removal Standard beverage systems combine roughly 4 parts of carbonated water to 1 part syrup concentrate (bag in boxes) to form a carbonated beverage. These traditional post mix systems usually only requires the removal of chlorine from the water supply. Newer beverage systems that use a much high percentage of carbonated water and a more concentrate syrup component often require the removal of chloramine as well as chlorine when present in the water supply. 6 COFFEE, TEA & ESPRESSO EQUIPMENT Ninety-eight percent (98%) of a cup of coffee is composed of water, so the quality of your coffee is dependent on the quality of the water. Chlorine ruins the taste of coffee. The presence of chlorine shortens pot life by accelerating coffee bitterness. 7 COOKING EQUIPMENT STEAMERS, COMBINATION OVENS, PROOFERS, DECK & RACK OVENS Most water-fed cooking equipment uses steam for cooking, proofing, or glazing food products. All have one thing in common, they evaporate water by heating it to produce steam and this process leads to mineral scale formation. Many factors must be considered when choosing water filtration/treatment for steam equipment. Water quality, equipment design and intended usage must be known to correctly apply proper water filtration/treatment. Evaporation Where do the minerals go? When water is heated and evaporated, the dissolved minerals must go somewhere. In boiler-based equipment, the dissolved minerals stay behind in the boiler. As steam is produced, the mineral content in the boiler increases along with mineral scale formation. In flash steam / boiler-less applications, the dissolved minerals will either immediately precipitate out of solution as tiny particles or remain in solution in the water vapor, steam or condensate thus coming in contact with the stainless steel cooking cavity and its components often leading to corrosion. 8 The main draw back to this design is that the dissolved minerals are in direct contact with the stainless steel components which is a cause for concern due to mineral scale deposits and corrosion potential. Although mineral scale is a concern in flash steam equipment, these deposits are accessible for removal during cleaning cycles, either automatic cleaning during hours of use or at the end of the day when the equipment is cycled off. Of more concern is the corrosion potential from chlorine, chloramine, and chlorides found in many water supplies. Although filtration exists that will remove, chlorine and chloramine, there is only one viable technology for use in food service applications that will address both chlorine and chlorides Reverse Osmosis. Reverse Osmosis (RO) is the process by which most if not all dissolved minerals are removed from the water by filtering it through special membranes designed to reject most water impurities. 9 REVERSE OSMOSIS SYSTEMS RO-175 NE The CookSpec RO-175NE is specifically designed for low water demand applications such as flash steam (boilerless) combination ovens. The RO-175NE incorporates a small product water storage tank capable of delivering roughly 32 ounces of on demand water. The RO-175NE is capable of producing 7.25 gallons of water per hour allowing the storage tank to refill in 2-3 minutes. If higher on demand water volumes are required, an external storage tank may be installed to accommodate water usage requirements. RO-250 NE The CookSpec RO-250NE provides gallons per hour of high-quaility water for both boiler based and boiler-less water treatment equipment including steamers, combination ovens, deck ovens, rack ovens and proofers. The system features integrated TDS meter, TDS bleed valve, panel mounted pressure gauge and internal bypass valve system.
