3 Horizontal heat exchangers really stack up. Thermutator's design conserves floor space in the plant because the horizontal units are stackable. The horizontal piping configuration improves the quality of the product by minimizing trapped air and pressure drops. It also significantly increases heat exchange efficiency by minimizing the build-up of condensate on the tube walls. And it makes cleaning and maintenance easier, too. Independent modules offer more processing alternatives. Adaptability, dependability and ease of operation can be designed into equipment and Thermutator proves it. Independent modules can be arranged in any combination to provide a continuous system for heating and cooling. A wide selection of mutator types and speeds assures high product quality through precise mechanical and time-temperature control. This is all possible because each cylinder is equipped as an independent module. Thermutator is the perfect choice for sanitary as well as industrial processing systems.
4 System versatility accommodates wide applications. Each Thermutator unit is designed to be versatile so customizing can be done to expressly fit the Thermutator and its accompanying components to your particular application. In the food industry, Thermutators are used to heat, cool, cook, slush freeze, plasticize, emulsify, pasteurize, sterilize, texturize, crystallize, whip and concentrate hundreds of different products. Chemical, pharmaceutical and petro-chemical industries find Thermutators excellent for heating and/or cooling, crystallization, and reaction control operations including aeration or mixing. Aseptic processing is another field where Thermutator's enclosed system. horizontal tube configuration and modular flexibility contribute to high-quality controlled processing. Thermutator offers protection from air-borne bacteria by creating a positive seal of the product zone. The No-Bac ( TM ) Thermutator creates a steam barrier between the product and atmosphere, preventing contaminants from entering the sterile zone. This same system is used to cool, flush and lubricate the seals when necessary. 4
5 Great processing begins on the inside. Thermutator consists of a product tube, a media cylinder, a rotating mutator carrying scraper blades, and a drive. The product tube contains the product, provides a heat exchange surface, and encloses the mutator. The media cylinder contains the heating or cooling media. The exterior of the media cylinder is heavily insulated and covered with a polished, stainless steel jacket. Products pumped into the Thermutator are heated or cooled through contact with the metal walls of the heat transfer tube. Product is continuously cleaned from the heat transfer wall by scraper blades. The rotating shaft, usually called a mutator or dasher, creates turbulence of. the product in the heat exchange zone. With conventional heat exchangers; hydraulic drag, heat resistance, and film build-up are created on the tube wall, hampering heat exchange. But Thermutator, by continuously scraping the product from the tube walls, greatly reduces the film coefficient on the product side of the tube, promoting very rapid heat transfer to a relatively small product volume. Scraping also minimizes pressure drop, keeping your product at a uniform temperature. Since pressure drops, time spent to reach desired temperature, time held at the temperature, and rate of cooling all affect product quality, Thermutator promotes superior product quality control with continuously moving surface scrapers. All ingredients in each and every product mix are treated to specific time and temperature conditions, so natural Thermutator cylinder components colors, flavors, and aromas are maintained. By the same process, Thermutator prevents burn-on or freeze-on at extreme temperatures and provides a more thorough product mix. 5
6 Customization options bring about precision handling. Precise processing is easy with Thermutator because you select model size and components suited to your product's physical characteristics and to your production capacity and processing requirements. Three basic sizes are available. Model 672 has 9.0 square feet of heat exchange surface in a 72-inch tube with a 6-inch I.D. Model 648 has 6.0 square feet of heat exchange surface in a 48-inch tube with a 6-inch I.D. And Model 624 has 3.0 square feet of heat exchange surface in a 24-inch tube, 6-inch I.D. Thermutator can be supplied for either heating or cooling, depending on the function to be performed and the heat transfer medium used. And, since Thermutators have steam/liquid interchangeability, they can easily be converted in the field from liquid to vapor or vapor to liquid. Heating may be done with steam or by recirculating a -hot liquid medium. Cooling is achieved by recirculating a liquid coolant, or by direct expansion refrigeration using ammonia or freon. All pressure containing components are built to ASME codes and carry the U or UM symbol. Vapor media systems feed steam into the top header of the media tube. The entire area around the product tube is filled with steam. Condensate, which forms on the product tube, falls away from the tube into the lower header. Horizontal design of the Thermutator significantly increases heat exchange efficiency by minimizing the distance this condensate falls. The shorter distance required to clear condensate from the tube reduces the fouling effect of the condensate, and promotes rapid heat transfer. The 0 cylinder's lower header is pitched to promote quick, complete drainage of condensate. Liquid media systems feed into either the upper or lower header and follow a spiraling baffle or helix around the exterior of the product tube. This helix guides the liquid at high velocity and turbulence to promote reduction in film resistance. The product enters the processing zone at the end opposite the media entry. This counter-flow design insures heat exchange efficiency. AMW.Ma : !quid system

The back pressure regulator valve controls the evaporating pressure and, therefore, the temperature of the liquid refrigerant in the heat exchange tube. Cherry-Burrell's exclusive "Instant Start-Instant Stop" feature can be included on any direct expansion Thermutator with an accumulator and a push button control panel. The "IS-IS" system applies hot gas from the high pressure side of the compressor to the cylinder to raise the pressure to a point that prevents freeze-up. Direct expansion system Direct expansion cooling systems use a vapor-type tube equipped with all necessary controls to handle freon, ammonia, etc. Liquid refrigerant is admitted to the accumulator by a float valve and is maintained at a fixed level. Liquid refrigerant passes through a solenoid valve, expansion valve, and injector jet on the way to the media tube. Thermutator's injector jet is sized to supply slightly more than the amount of liquid required to do the cooling. The action in the injector jet lifts enough liquid from the accumulator to completely flood the media tube. The circulation of excess liquid at 7
8 A variety of shaft seals, cabinet designs and tube materials are offered with Thermutator. Seal Selection is made after consultation between you and the Cherry-Burrell engineers, based on product characteristics. The seal which best suits your needs and purposes is then incorporated into your Thermutator. The standard rotary mechanical seal assures complete separation of product from the mechanical zone. A coil spring creates the proper seal pressure. And Cherry-Burrell's unique end cap design incorporates a bayonet lock allowing the cap to be removed easily without tools. These features cut maintenance and clean-up time while preventing cross-contamination of product with lubricants. So it's a particularly good choice for a variety of applications. Aseptic operations employ Cherry-Burrell's No-BacTM aseptic seal. Style H, a horizontal design, can be installed singly, in multiple units or stacked up to three high. Style OH, also a stackable horizontal design, is oversized to accommodate variable speed drives (another customization option.) Style OH cabinets
9 NICKEL TUBE HARD CHROME PLATING Standard nickel/chrome product tube You may also choose tube material tailored to your operation. Pure nickel heat exchange tubes, with a hardened chrome plating on the product side polished to a mirror-like super finish, are standard. But product tubes can be ordered in a number of materials, depending on product characteristics. Nickel (with chrome - plating), the standard Thermutator product tube, is used because of the excellent thermal conductivity of the pure nickel, and the durable wear qualities of the hard chrome interior. In conjunction with this tube, a mutator shaft with stainless steel blades is used. These materials resist corrosion and are compatible with most products. The nickel tube without chrome plating is used with plastic scraper blades. Excellent thermal conductivity is maintained, and the tube operates well with acidic, non-abrasive products. The plastic blades are used with processing temperatures between 60 and 275 F. for most effective operation. The stainless steel, chrome-plated I.D., product tube is suitable for both acid and abrasive applications since it is resistant to attacks by acids at elevated temperatures. Stainless steel has a somewhat lower rate of heat transfer than nickel, therefore also a reduced capacity. Stainless steel scraper blades are used with this particular tube. Unplated stainless steel provides the good chemical resistance to both acid and alkaline products. Plastic blades are employed. The Bimetallic Tube is used in applications which require the highest resistance to corrosion and/or abrasion. This tube is mild steel lined with a sanitary metal alloy which is highly corrosion-and abrasionresistant. Stainless steel scraper blades are used. Thermal conductivity is lower than nickel but higher than stainless steel. 9
10 Mutators also are selected for your particular process and product. Since the mutator blades constantly change the product on the tube wall, the blades are mounted on pins attached to the mutator shaft and are allowed to pivot to contact the heat exchange surface. Using the correct diameter mutator and appropriate type and quantity of blades allows customized processing and gives you the highest quality product. Most heating and cooling applications can use the 4 1/2" mutator with two rows of blades. Margarine, fats and oils, and certain high viscosity products which require slower mutator rotation speed use a 4 1/2" mutator with four rows of blades. And when heating highly abrasive products such as tomato concentrate, the 4V2" mutator is equipped with two rows of stainless steel blades which simply wipe the surface of the tube. The product turbulence prevents sticking or burning, and wiping rather than scraping increases tube and blade life. For processing heat sensitive products at very high temperatures, as with aseptically processed puddings, the 5 1/2" diameter narrow clearance mutator with two rows of blades is recommended. The small volume of product traveling at high velocity in the Thermutator with narrow clearance, improves the quality of the finished product by reducing the time spent at processing temperatures; and, by decreasing the temperature gradient between cooked, undercooked and overcooked. Minimum high temperature heating with heat sensitive products (bananas, puddings) allows faster cooling and easier CIP cleaning. For processing peanut butter, industrial coatings, waxes, chili, baked beans, and chopped vegetables (especially those which tend to be stringy in processing), or other moderately viscous products and/or materials with small to medium-sized particles, a 31/2" mutator is available with two or four rows of blades. And when processing products with large particulates such as pet foods, stews, or chop suey, a 21/4" mutator is installed. The product particles are not damaged in the large space between the mutator tube and the heat exchange surface. Whipped products such as butter, margarine, cosmetics and marshmallow topping are best handled with a special whipping io dasher which is available in lengths up to 48". When cooling fats, oils, and similar products where buildup of product on the mutator can be a problem, mutators can be flooded with warm water to alleviate buildup. All units (except the 2 1/2") are hollow to permit this flooding.

While the horizontal cylinder is an ab deal plant installation (ease of Mr maintenance, stackability), it is also actually a more effective design for efficient heat exchange. The enclosed modules make Thermutator an excellent choice for sanitary operations as well as industrial. And each module's self-sufficiency encourages arrangement of Thermutators in whatever combinations necessary to properly handle your product in every processing stage. And Thermutator has many other flexibilities. A bevy of customizations are made through your selection of components. Ultimately your Thermutator, constructed to employ the most efficient possible heat exchange techniques, is the required model furnished with the correct medium for your operation. And your Thermutator is also equipped with the appropriate tube material, as well as the mutator, scraping blades and shaft seal that best suits your particular application. In this way, Thermutator does everything possible to assure you continuous precision processing of your product. 1 1
