3 1. INTRODUCTION Congratulations for purchasing your Goldstein commercial cooking appliance. J. Goldstein & Co. is a wholly owned Australian company and has been operating since 1911, building high quality products. The information in this manual will assist your installer and ensure correct location and connection. Thoroughly read the user instructions and the user maintenance sections, as understanding your products, its operation, and its cleaning and service requirements will provide you with long and satisfactory service. Failure to do so could shorten the life of the product and decrease its efficiency. Please ensure only authorised service technicians are called to any difficulties that may arise. INTRODUCTION GOLDSTEIN PASTA COOKER FRG1P GOLDSTEIN Pasta Cooker is designed to give long and satisfactory service and incorporate the best possible materials and workmanship. Proper installation, adjustment and preventative maintenance are vitally important if efficiency and appearance are to be maintained. A free standing deep well automatically controlled, gas operated pasta cooker. The appliance is mounted on 4 legs with a clearance from floor of 152mm. The Pasta Cooker is equipped with a splash back incorporating a top venting flue outlet. Pan outer case and outer surround of stainless steel, cooking pan of stainless steel, sand blast finish. Read these instructions carefully as they contain important safety information regarding the installation, use and maintenance of the appliance. RECEIVING INSPECTION Check crates for handling damage. After carefully uncrating, check for concealed damage. Report any damage immediately to carrier and to dealer. Remove check all loose items from unit and check contents as found on back of warranty cards. Check type and capacity of gas supply. The type of gas for which the Pasta Cooker is factory adjusted can be seen on the rating plate, located on the back of the door on rating plate. THE EQUIPMENT MUST BE INSTALLED BY A LICENSED GASFITTER AND LICENSED CONTRACTOR 3

4 2. INSTALLATION PRE-INSTALLATION 1. Remove baskets and cartons from unit, check contents. 2. Tilt back and remove from unit to timber base. Lift off base. 3. Set units in correct position and screw on adjustable legs. 4. Adjust feet till they are all touching the bases and using spirit level, level from front to rear and left to right. This operation is important as variation of 25mm to 76mm in a room is found to be common. 5. Have a licensed gas fitter or your Gas Company connect the appliance to the mains supply. The fitting is 25mm BSP. The appliance must be installed in accordance with the rules of any authority having jurisdiction. INSTALLATION Please follow these instructions carefully Adequate ventilation must be provided, preferably by a hood with vent and exhaust fan. Never make a direct connection between the flue of the appliance and the vent flue. Check that there is sufficient clearance between doors and passageways to move equipment into the cooking area. Special attention must be paid to fire hazards from combustible surfaces. Connection to main gas line should be made by licensed plumber. Install a hand shut-off valve in gas line to the appliance manifold. REGULATOR The fryer gas control incorporates a regulator so no regulator is required to be Connected Into the gas supply line, unless supplied gas pressure is greater than 3.45 kpa. NOTE: The appliance must be installed by an authorised person and in accordance with the regulations of the local Gas Authority, AS5601/AG601 and any other authority having jurisdiction. The appliance has been tested and preset before leaving our factory, but small adjustments may be necessary to suit local conditions. NOTE: Models operating on LP Gas will be supplied with a regulator as from (1 st January 2005) as new standard (AS4563/AG300). FIRE HAZARD When used adjacent to a wall of combustible material, the appliance must be mounted a clear 150mm from the wall. IM041B2/p4 4

5 3. COMMISSIONING To be carried out by a qualified installer. COMMISSIONING APPLIANCE DETAILS, TESTING. COMMISSIONING CHECK LIST 1. CHECK FOR DAMAGE AND MISSING PARTS. 2. REMOVE ALL PLASTIC COATING FROM S/STEEL PANELS. 3. MAKE SURE ALL PARTS ARE IN THEIR CORRECT POSITION E.G. TRAYS 4. MAKE SURE ALL GAS CONNECTIONS ARE CORRECT AND TIGHT. 5. LEVEL OFF UNIT LEFT TO RIGHT AND ALSO MAKE SURE THAT FRONT IS JUST 3-4 MM LOWER TO ALLOW FOR FLUING. 6. TURN ON GAS. 7. ADJUST GAS PRESSURE WITH THREE-QUARTERS OF THE UNIT RUNNING, ADJUST GAS PRESSURE. NATURAL GAS LPG 1.00 KPA 2.65 KPA 8. TURN ON ONE AT A TIME TO MAKE SURE ALL IS WORKING E.G. BURNER, RADIANT, GRIDDLE AND STEAMER. 9. SHOW CUSTOMER A) HOW TO WORK EQUIPMENT B) HOW TO CLEAN 10. CHECK TO MAKE SURE MANUALS AND WARRANTY CARDS ARE THERE. ALSO GO THROUGH MANUAL WITH CUSTOMER E.G. LIGHTING, CLEANING. NOTE WASH HOSES SHOULD NEVER BE USED ON THE APPLIANCE. USE OF HOSES WILL VOID WARRANTY 5

6 4. OPERATING INSTRUCTION OPERATING PROCEDURE Clean protective oil from bright parts and interior of pan, with a solution of washing soda or other grease dissolving material. Drain through valve in bottom then rinse thoroughly. (Note: it must be completely rinsed out, for even a small particle of cleaner in the pan will affect the cooking. Also clean baskets and strainer. Test all gas connections for leaks. DAILY OPERATION OPENING At opening time, always visually check the appliance for: a) Combination or main gas valve OFF b) To light the appliance, see lighting instructions. c) Thermostat setting for normal standby is 95 C-100 C d) For cooking and continuous running set thermostat at. 120 C CLOSING When closing at night, drain water in tank. Turn the control knob on the combination gas valve to OFF SHUT DOWN When shutting down for longer that just overnight, drain the cooker, clean the vessel thoroughly. Turn the manual off/on valve on the incoming service line OFF 6

LIGHTING INSTRUCTION AN ALUMINIUM PLATE INSCRIBED AS SHOWN HEREUNDER: GAS COCK KNOB OFF PILOT PILOT TO OFF UNLESS KNOB IS DEPRESSED ON IMPORTANT GAS COCK KNOB CANNOT BE TURNED FROM Turn Gas Cock Knob so indicator points to OFF position Allow 5 minutes for any gas in combustion chamber to escape. (L.P. Gas being heavier than air, may require forced ventilation.) LIGHTING INSTRUCTIONS: 1. turn the gas cock knob counter clockwise so indicator points to PILOT position. 2. Depress gas cock knob and hold in. 3. Light the PILOT by repeatedly pushing the spark ignition Until the PILOT ignites. 4. After the PILOT ignites, continue to hold in the gas cock knob for 60 seconds. 5. Release knob and the PILOT should stay alight (if not, repeat steps above). 6. Turn control knob to ON position. 7. Pre-set thermostat OFF ON PILOT TO SHUT DOWN APPLIANCE RETURN THE CONTROL KNOB TO THE OFF POSITION OVER TEMPERATURE SAFETY CONTROL: An E.G.O. model safety thermostat with bulb in a recess above the thermostat bulb. LIGHTING Follow lighting instructions on plate fastened behind door of unit. (Note: Air trapped in manifold system requires bleed off before pilot burner will ignite causing initial ignition to be abnormally slow.) ADJUSTMENT See spare parts drawing. 7

CONVERSION INSTRUCTIONS TO N.G. 1. Remove injectors from burners. 2. Replace with suitable injectors (see table) 3. Remove pilot feed line (6mm aluminium). 4. Remove and replace pilot orifice with suitable sized (see table). 5. Replace pilot feed line. 6. Check all connections for leaks 7. Check gas pressure and adjust (see table). 8

9 7. MAINTENANCE & CLEANING SERVICING Any mechanical product, no matter how well made will eventually require some service attention. This equipment will need les service if given normal care and frequent cleaning. Have the Gas Company, or your service man, check your equipment regularly. GOLDSTEIN appliances are engineered for serviceability. Any part can be quickly And easily removed if necessary for cleaning, service or replacement parts are accessible from the front of the appliance To clean pan after draining, fill with water. Add a good grade of cleaner in accordance with manufacturers instructions. Turn appliance on and bring water to boil. Boil long enough to loosen all varnish and carbon. Scrub inside of pan if necessary using a long handled pot brush. Drain slowly so you can clean sides as they are exposed. Open drain valve fully and rinse pan in clean water. Be sure to remove all traces of cleaner Wipe inside of pan dry with a soft cloth. Once a week refill with clean water after rinsing and boil. Drain and wipe with a soft cloth. Any piece of equipment works better and lasts longer when maintained properly and kept clean. Cooking equipment is no exception. Your pan deserves the same care you give your cooking pots. It should be kept clean and bright. Drain tank every day or more frequently if required. DAILY a) Remove and wash all removable parts. b) Clean all exterior surface of the body. Do not use cleansers, steel wool, or any other abrasive material on stainless steel. WEEKLY a) Completely drain the appliance. b) Clean the vessel with a good grade of cleaner or hot water and strong detergent. c) Close the drain valve and refill with either the cleaning solution or water and detergent. d) Bring to a rolling boil, turn the heat down and let the mixture stand until deposits and/or carbon spots can be rubbed off with the Teflon brush. e) Scrub the tank walls and heat transfer tubes, then drain the vessel and rinse in clean water. f) Refill with clear water and boil again. g) Drain, rinse and dry thoroughly. 9

10 7. MAINTENANCE & CLEANING All stainless steel body parts should be wiped regularly with hot, soapy water during the Day and with a liquid cleaner designed for this material at the end of each day. If it is necessary to scrape stainless steel to remove encrusted materials, soak the area with hot cloths to loosen the material, then use a wood or nylon scraper DO NOT USE a metal knife, spatula, or any other metal tool to scrape stainless steel. Scratches are almost impossible to remove. DO NOT USE STEEL WOOL, ABRASIVE CLOTHS, CLEANSERS OR POWDERS. RECOMMENDED SPARE PARTS To ensure minimum downtime of the cooker in case the replacement of a part is Required, it is recommended that one each of the following parts be kept in local Stock. High temperature limit control Gas safety control valve Thermocouple Operating thermostat Illustrations and complete listing of replacement parts are attached. 11 8. TROUBLE SHOOTING Only a Goldstein Authorised Maintenance & Repair Centre or a company specialising In Restaurant cooking appliances must carry these troubleshooting procedures out. The problem and possible solution given below cover those most commonly encountered. FACTORY APPROVAL MUST BE OBTAINED PRIOR TO ANY WARRANTY WORK BEING DONE OR GOLDSTEIN CANNOT BE HELD RESPONSIBLE. PILOT BURNER MALFUNCTIONS Pilot will not ignite, no evidence * Check that gas valve is open and of gas at pilot burner. gas Is present at that valve. * Check pilot burner adjustment (beneath cover screw). * Adjust pilot flame to extend about ½ above the top of the pilot burner. Replace cover screw. * Remove pilot gas supply line and check for dirt. * Blow out if necessary then reinstall. * Check pilot burner orifice for dirt. Pilot burner ignites but will not remain * Check that thermocouple lead is Lighted when gas cock manual knob firmly screwed into pilostat power Is released unit bushing is released. and clean with fine sandpaper. Also check that bushing is clean. Thermocouple defective. * Replace. Pilot flame may be too high or too low. * Adjust flame by turning pilot flow adjustment. Pilot flame of proper size but unstable. * Flame wavers and does not envelope the thermocouple completely at all times. Check for draft which might be caused by air conditioning equipment or make-up air apparatus. Turn these off and recheck the pilot. 11

12 8. TROUBLE SHOOTING MAIN BURNER MALFUNCTIONS Main burner will not come on: no gas * Check that gas valve is open. present at main burner. * Check that the pilot is ignited and is operating properly. The combination gas control valve may be defective, replace if necessary (check Owners replacement part stock). Check the high temperature safety switch, replace if defective. CAUTION DO NOT ATTEMPT TO TURN THE ADJUSTMENT PAST THE STOPS OR THE CONTROLLER WILL BE DAMAGED PASTA COOKER WARNING TANK MUST BE EMPTIED OUT EVERY NIGHT AND WASHED OUT CLEAN WITH CLEAN WATER TO AVOID BUILD UP OF IMPURITIES THAT WILL ATTACK THE STAINLESS STEEL AND VOID THE WARRANTY 12

16 12. WARRANTY Installation must be carried out according to local regulations by qualified trade persons. Isolating switch(es), shut-off valves etc must be within easy reach of the machine for future service and maintenance requirements. If in doubt call GOLDSTEIN/ESWOOD or their representative for further information. No responsibility will be accepted for defects or damages by improper installation, for changes to the product not authorised by GOLDSTEIN/ESWOOD or for operation outside the technical specifications. GOLDSTEIN/ESWOOD warrants their products to be free from defects in material and workmanship under normal use and service. This does not include normal wear and tear of parts. GOLDSTEIN/ESWOOD will repair or replace any parts, which in GOLDSTEIN/ESWOOD s sole judgement are defective in material or workmanship, in accordance with the warranty offered. This undertaking covers the provision of labour and parts for 12 months from the date of delivery to the purchaser. This undertaking applies only to state capitals. Remote areas are not covered by this commitment and special enquiries should be made. (Note: Travel time not covered by warranty). To the maximum extent permitted by law, any liability on Goldstein/Eswood s part or on the part of its servants or agents for loss or damage of any kind whatsoever in connection with the products, including liability for or in respect of any claim arising out of contract, negligence or statute, shall not, in any event, exceed $100 Labour under warranty is supplied free of charge during normal working hours, Monday to Friday. Should warranty work be requested outside of our normal working hours a labour charge will be applied equivalent to a normal hour rate, without out of hours penalty rates.
