The well-lit space of the entire kitchen, the draft-free supply of fresh air and perfect extraction, all that with the additional benefit of a modern control system, create a pleasant environment for kitchen staff. Ventilation and air-conditioning ceilings provide reliable filtration of exhaust air as the conventional mechanical grease filtration system can be additionally fitted with a second stage - the so-called UV-C filtration, to achieve a superb efficiency of extracted grease disposal of up to 99 %. UV-C filtration According to their equipment and the way of connecting they are divided into systems with a polycarbonate false ceiling with UV-C filtration (type A) and systems with a polycarbonate false ceiling with overhead or lateral connection (types B and C). If necessary, irregular versions can be tailor-designed (a combination of different types) to the specific facility. There is no difference between the functions of the SKV and TPV type. They both supply fresh air, extract exhaust air, provide lighting for the entire kitchen area and protect the ceiling structure against the effects of heat and humidity. The fundamental difference is the design of the polycarbonate false ceiling and the shape of the extraction duct. The choice of type depends solely on the investor, architect or planner. From the technical point of view the TPV is a preferred choice in fragmented ground plans while SKVs are more aesthetic (e.g. for show kitchens or food counters). 4 CSOB PRAGUE HEADQUARTERS BUILDING OF THE YEAR Project year: 2006 Floor area: 330 m 2 Extraction perf.: m 3 /h. Capacity: meals The new CSOB headquarters is the biggest office block in Prague and at the same time biggest building in the Czech Republic and central Europe constructed to ecological standards. TPV ventilation and air-conditioning ceilings are installed in the kitchen and canteens with a total area of 330 m 2. As large-diameter, micro-perforated supply outlets are used, the kitchen complies with airflow rates permitted for areas with occupancy even at 70 air changes per hour. The canteens use polycarbonate in two layers to ensure the perfect diffusion of light and uniform lighting in the space below the ventilation ceiling. 4

5 REFERENCES UV-C FILTRATION How UV-C filtration system works Exhaust air flows through a mechanical filtration system (grease filters 500 x 175 mm), where 80 % of grease particles are separated Exhaust air runs through UV-C lights UV-C lights create ozone in the surrounding air As the ozone reacts with organic compounds (grease), they oxidise, i.e. are disposed of in a cold-burning process. All that remains in the exhaust air after oxidization is water vapour, CO 2 and traces of fine powder (so-called polymerized wax). Why use UV-C filtration technology The entire system is kept perfectly clean and does not age Odourless exhaust air Significantly lower cleaning and maintenance costs A minimum risk of fire Meets the most stringent criteria and requirements for a clean environment The main food counter includes short orders with a capacity of up to 400 meals. This kind of cooking causes a large amount of grease particles to be released which subsequently need to be separated from exhaust air. A mechanical filtration system with an efficiency of 80 % is used as a base; the residual amount is then disposed of using the UV-C filtration system with a residual grease disposal efficiency of up to 99 %. The result of this process is exhaust air free of all grease. The main advantages include the elimination of a fire risk, significantly lower cleaning and maintenance costs, a longer life cycle and primarily exhaust air that is odour-free, not disturbing the environment. 5

Capacity: 300 meals It was necessary for the design of the HVAC system to take into account the uniqueness of the existing dining room interior and provide efficient air extraction to prevent exhaust air from spreading into the client occupancy area of this luxury hotel. 6

7 SVYCARSKY DVUR HOTEL KARLOVY VARY 03 The first project to combine the SKV arched false ceiling with TPV extraction ducts. The result is an original appearance with flawless extraction efficiency. Capacity: meals The kitchen facility is located inside a building without windows, with only three skylights in the roof to bring daylight. The use of the ventilation ceiling with polycarbonate panels preserves the function of the skylights, minimally reducing the intensity of light, while at the same time maintaining the principle of a closed ventilation ceiling system. 8

10 HERKULES LITVINOV 06 Project year: 2009 Floor area: 193 m 2 Extraction perf.: m 3 /h. Capacity: meals A kitchen facility with the historically highest production capacity of up to 7,000 meals. It is divided into the main cooking facility with the perfect layout of cooking blocks and a separate facility with convection ovens with the installed power over 300 kw. TPV ventilation and air-conditioning ceilings provide the perfect solution for such facilities. 10

11 NURSING HOME RUDNE 07 Large area ventilation and lighting ceilings have already been used by care homes in the north and west of the Czech Republic for some years. One of their main advantages is low-key maintenance with no need to dismantle individual parts. Cleaning does not require the installation of lifting platforms or use of lifting devices. Capacity: meals The lighting system installed above arched transparent false ceilings provides uniform lighting for the entire kitchen area, making a pleasant working environment for all staff. It is hotel kitchens including the most prestigious ones such as Prague s Pyramida Hotel, that make up a majority of ventilation ceiling projects. 12

13 PYRAMIDA INN 09 A kitchen in a timbered mountain inn. The construction height of 2.5 m made it impossible to install extractor hoods and ducts. 14 HOSPITAL MOST 10 Project year: 2007 Floor area: 140 m 2 Extraction perf.: m 3 /h. Capacity: meals In 2007 the kitchen facility including cooking appliances was completely renovated. The total height of the space was lowered from 6.5 to 3 metres thanks to the use of a ventilation ceiling. The void between the ventilation ceiling and ceiling structure is only ventilated with the required hygienic minimum. 14

16 PUB U FORTA 12 Project year: 2012 Floor area: 30 m 2 Extraction perf.: m 3 /h. Capacity: 200 meals The pub U Forta is located in the heart of the National Park of Bohemian Switzerland. Due to the small space and low kitchen height it was necessary to design an irregular fresh air supply system using a space duct. Extraction ducts are installed in the remaining kitchen space. 16

17 ARCELORMITTAL OSTRAVA 13 Cooking blocks and stand-alone appliances are placed across the entire kitchen area. Kitchen appliances are scheduled to be replaced and their installation layout changed in the future. 18 DEFINITION OF LOCAL SYSTEMS Extractor hoods are primarily planned for small to medium size kitchens with one or two cooking blocks. Depending on where appliances are installed extractor hoods are either a wall- or a central-type. It is necessary to plan the dimensions of an extractor hood properly, with sufficient side laps. The main advantage of this solution is its low cost, while a danger of exhaust air leaking into the kitchen and the build-up of contamination on horizontal surfaces are the disadvantage. 20 COMMUNITY CENTRE SLOUP V CECHACH 01 DiNER-T DiNER-T series extractor hoods with an efficiency of up to 68 % provide efficient extraction and filtration of exhaust air and simultaneously supply fresh air that is pre-heated through heat recovery to kitchens. They are supplied in parts and assembled in situ. They are made of stainless sheet metal, with cassette combined grease filters made out of expanded aluminium mesh and fire-proof lamellas with a capturing efficiency of up to 94 %, condensate drains and grease collectors. The top of the hood is fitted with special irregular, easily removable hps-d heat recovery exchangers. Downstream the heat recovery exchangers there are hot-water registers to re-heat supply air to constant temperature. As standard, the hoods have a by-pass damper. A DiNER-T extractor hood with heat recovery above a cooking range. When an extractor hood of this type is used, there is no need for a dedicated HVAC mechanical room. All functions (extraction, filtration, heat recovery, air re-heating and supply) are provided directly by the extractor hood, with only fans being installed in the supply and extraction duct. 20

21 REFERENCES RETIREMENT HOME JABLONECKE PASEKY 02 A VARIANT-S extractor hood with air supply in conjunction with a DUPLEX AHU unit and automatic operation control. An ideal solution for kitchens with one or too cooking blocks and a stand-alone convection oven. VARIANT VARIANT extractor hoods provide efficient extraction with exhaust air filtering and simultaneously controlled supply of fresh heated air in kitchens. Extractor hoods are supplied as complete sets or easily assembled on site from individual parts, e.g. when handling conditions are limited. All inside parts of extractor hoods are made out of stainless sheet metal, with grease filters made of multi-layer expanded metal with a capturing efficiency of up to 85 %. As standard, extractor hoods are fitted with fluorescent lights 1 x 18 to 2 x 58 W with protection class IP54, and condensate and grease drains. The controlled supply of fresh air is provided by circular, rotationally adjustable supply lamellas 200 mm in diameter; the air stream reaches between 5 to 8 metres. 21

22 ARMY CATERING FACILITY VYSKOV 03 Large-size extractor hoods Large-size modular kitchen extractor hoods with a transparent false ceiling provide efficient extraction with exhaust air filtration, possibly also with controlled supply of fresh, heated air in kitchens of all sizes and types. Large-size extractor hoods are supplied as modular kits in sizes as required, i.e. sizes that make it impossible to use conventional extractor hoods (such as MODIS or VARIANT types) due to maximum dimensions permitted. They are made of stainless sheet metal, with grease filters made of multilayer expanded metal with a capturing efficiency of up to 88 %. The false ceiling consists of thermal insulation polycarbonate panels 6 and 10 mm thick. Supply as well as extraction ports are circular or rectangular, with only overhead connection. The size and location of ports is determined based on flow rates and the dimensions of the extractor hood. A large-size, SKV ventilation and air-conditioning ceiling style extractor hood was installed above the central cooking block, with plasterboard covering along the entire circumference of the extractor hood. The main advantage of this solution is the resulting appearance and low cost when compared to installing several extractor hoods and a complex HVAC duct network. 22

They are exclusively made of 1 mm thick AISI 304 stainless sheet metal to ensure the corresponding resistance to high temperature, humidity and organic compounds. The MODIS type is fitted with a light in a stainless enclosure with protection class IP54 and heat resistance up to 60 C. The design of the light ensures the required intensity and uniformity of lighting on the work surface. MODIS 400 x 400 expanded metal filters with an efficiency of up to 90 % are used to filter, that is, separate grease from exhaust air. 23
